BUSINESSES IN SELECTED AREAS IN TUY BATANGAS

Introduction

Businesses improve the quality of life for people and create a higher

standard of living. Business is defined as an organization or enterprising entity

engage in commercial, industrial or professional activities. Business is also refers

to the organized efforts and activities of individuals to produce and sell products

or services. Also people can earn money or profit by producing and selling

products.

A food cart is a mobile kitchen set up on the street to prepare and

sell street foods to passers-by. Food cart are often found in cities worldwide,

selling food of every kind. Some food carts are towed by another vehicle, while

some are pushed by human. In the Philippines food cart businesses have

become one of the most prepared types of start-up businesses for many Filipinos

because of low capitalization and strong learning potential. Among all franchise

in Tuy, Batangas the food cart is probably the most popular. Aside from being

affordable and pocket friendly it can satisfy the cravings of the consumers

especially the students.

According to Food Sanitation Act no. 233 of 1947 Section 14. “No

person or Entity shall operate a food establishment for public patronage without

securing a permit from the local Health office.” It means, the vendor should have

a permit from the health office to operate their food business. In the field of food

businesses food sanitation is one of the most important tools to operate food

businesses.

Cleanliness and sanitation is one of the most important factors in

attracting new customers. The customers are picky these days. They also have

limited amount of money they’re willing to spend. So they will pick the place they

think is clean and neat. In this case the vendors wouldn`t be able to persuade the

customers to buy their product. And it can affect to the profit of the vendors.

The vendors should know the importance of food sanitation and in order

to do that, the vendors should have a basis to maintain the cleanliness of their

food cart and also the food that they serve.

Statement of the Problem

The purpose of this study is to determine the effects of proper sanitation to the

profit of the vendors.

1. What is food sanitation in business?

2. What are the importance of sanitation in food cart businesses?

3.What are the sanitation practices applied by food cart vendors?

4. How does food sanitation affects the sales of the food cart vendors?

5. What are the action to promote food sanitation among food cart vendors in

Tuy?

Scope and Delimitation

The scope of this study will be confined to the effects of proper sanitation of

food cart businesses. This study will be conducted in selected areas in Tuy,

Batangas. The information gathered will be delimited to define the proper

sanitation of food cart businesses and the different action that can be done to

propose sanitation among the food cart vendors.

Significance of the Study

The purpose of this study is to inform that the proper sanitation in terms of food

businesses is always necessary especially to the vendors. Sanitation is one of

the factor that can attract more customers to earn more money

This study will be significant to the following readers:

To the School: The study will give Senior High School in Tuy a clear information

about sanitation.

To the Students: The results of this study will provide information that can help

them to know the importance of sanitation in food businesses. Also, this study

will help those students who are taking Accountancy Business and

Management.

To the Teachers: With the result of this study, teachers will have greater

knowledge on how sanitation affect a business. They will also have a new and

more effective strategies on how to teach the students who are taking

Accountancy Business and Management.

To the community: This study will help them to know more about the

importance of proper sanitation in food businesses.

To the future researchers: This will serve as their basis in conducting a

research paper.

CHAPTER II

Review of Related Literature

This chapter presents the related literature and studies after the thorough

and in depth search done by the researchers to fully understand the research

and lastly the definition of terms for the better comprehension of the study.

Sales of street vended foods are increasing in several countries and offer

stakeholders in the industry a wide range of economic benefits. This article

discussed potential public health problems that may be associated with this

trend. Out-breaks of food borne diseases connected to street food consumption

are considered together with studies into the safety of street foods and attempts

to regulate street vendors in Durban, South Africa. (Von, 2004)

FEDCOT create awareness of the right to food safety and security, a sense of

safe and nutritious food, to provide education, information and empowerment, to

provide facilities to get cheaper and pure food for poor and commuters. Night

food stalls are very popular in cities, town and tourist center. Vendors are

situated on the pavements, on roadside, outside market, office or shopping

complexes on beaches, in parks and other places where the demand for quick,

cheap food exists. (Duraisingam, 2004)

The street food industry has an important role in the cities and towns of many

developing countries in meeting the food demands of the urban dwellers. It feeds

millions of people daily with a wide variety of foods that are relatively cheap and

easily accessible. Street food sector symbolizes the street life in Africa and it

operates in an unstable and precarious state because the sector lacks legal

recognition. There have been noticeable increases of food vendors in Nairobi,

who sell both raw and cooked food items. There are not regulated, they operate

haphazardly without any monitoring of what they prepare and how they do it. A

study to determine hygienic and sanitary practices of vendors of street foods in

Nairobi was carried out using a descriptive survey design. A sample size of 80

street food vendors selling commonly consumed food was selected. Data was

collected using in-depth interview schedules and observation checklists.

Information from the study shows that vendors lacked training on food

preparation. About 62% obtained food preparation skills through observation

while 33% were taught by their parents in non-formal settings. (OK Muinde,

2005)

The preparation surfaces use for the preparation of raw foods were not washed

regularly. Cooked food were stored at ambient temperature in cupboards, plastic

bowls, jugs and buckets were just left in the open uncovered. Eighty-five percent

of the vendors had garbage and waste bins beside the food stalls. Personal

hygiene was not also observed, as the vendors never covered their heads,

handled money and food at the same time and they did not wear

overcoats/aprons and handled food with bare hand. Street food vendors were not

aware of hygienic and sanitary practice. The food is sold to unsuspecting clients

who likely to get food-borne diseases. This study recommends the establishment

of street food centres by the city council, the training of street food vendors on

hygiene, sanitation and the establishments of code of practice for the street food

industry and the empowerment of Public Health Officers. (OK Muinde, 2005)

A survey was carried out to determine food safety knowledge of street food

vendors in Abeokuta. Data on demographics, food safety knowledge and

practices was collected from 87 food vendors using a 67-questions standardized

survey tool. Few vendors (12%) acquired the knowledge of food preparation by

formal training. Only 31% of the respondents had the annual medical health

certificate to indicate that they have carried out the recommended physical and

medical examination. Volume and price are considered more than freshness and

cleanliness when purchasing raw materials. Some of the food safety knowledge

of the vendors could not be translated to practice due to the absence of basic

facilities such as water and toilets at their vending sites. Training on hygiene and

sanitation; provision of basic infrastructures and the establishment of code of

practice for the street food industry is recommended. (Ifenkwe, 2012)

It has been shown by the previous studies that most incidences of foodborne

illnesses worldwide and in Malaysia were largely caused by the poor observance

of ethical aspects from the part of those involved in the preparation, processing,

handling and production of in food premises, i.e. the food handlers. In the food

industry, food handlers play very important roles, as they are the ones who

prepare, process and handle food which are eventually consumed by the end-

users, i.e. the consumers. Hence, the quality of food prepared, produced,

storaged, transported, distributed and served to the end consumers depends

very much on the ethics practiced by the food handlers throughout the halal food

supply chain. In view of their important role, as well as to safeguard the interest

of the public, most government have drawn certain laws, regulations, guidelines

and standards that emphasize on the ethical aspects of food handlers. This

paper analyses some ethical issues of food handlers in the halal food industry,

with special reference to the hygienic and sanitary aspect of food handlers. It

further appraises sanitation and hygienic practices and behaviours of food

handlers from the halal perspective. (Springer, 2016)

and hygiene, Hazard Analysis Critical Control Points, cleaning and sanitizing

equipment, waste handling disposal, biosecurity, allergens, quality assurance,

pest control, cleaning compound and sanitizer properties and selection criteria,

hygienic construction, sanitation guidelines for food and foodservice

establishments, and sanitation management principles. (Springer, 2018)

Success in food handling depends, in part, on a self-regulation practice factor

that accounts for better results in food safety. A self-report study conducted on

318 food handlers reveal that temporary workers were able to comply with the

overall hygiene practices outlined in the 1983 Malaysian Food Act and the 2009

Food Hygiene Regulations. This study also shows that proper training of these

workers could result in high-level hygiene practices at public food service

institutions that would satisfy the community’s appetite for safe and healthy food.

Chapter III

The researcher’s shows the process and methods being utilized in the study to

accomplish it, and it chapter show it. The researcher will cover the data gathering

instrument, the research environment, the research design, and data gathering

procedures to be utilized with the research.

Research Methodology

This chapter discusses the research design utilize in the study, including the

subject of the study, research instrument and data gathering procedure.

Research Design

The researcher used the case study method of qualitative research design.

According to Stake (2005), Case studies are a common way to do qualitative

inquiry. Case study research is neither new nor essentially qualitative. Case

study is not a methodological choice but a choice of what is to be studied. If case

study research is more humane or in some ways transcendent, it is because the

researchers not because of the methods. By whatever methods, we chose to

study the case. We could study it analytically or holistically. The researchers

used this method because the study focuses on how Proper Sanitation affects

the profit of the food cart vendors.

The researcher gathered Five (5) food cart vendors that located in selected areas

in Tuy Batangas. The gathered food cart vendors served as the respondents of

the study. Moreover the respondents were selected through purposive sampling

technique. The food cart vendors-respondents will be interview about their

sanitation practices they applied in selling products through foodcart.

Research Instrument

After reading sufficient literature reviews, the researchers constructed an

interview guide which was utilized in guided interview to gather the data from the

respondents. The interview guide was validated to three experts in the education.

Data Gathering Procedure

The researchers sought permission to conduct the study from the Mayor of Tuy.

After the approval of letter to conduct the study, the researchers immediately

conduct the interview to respondents. The interview was directed with three

persons: the interviewer, the recorder, and the note taker.

Subsequently, the researchers collected the results of interview, write into

themes, analized, and interpreted. The result of the study served as the basis of

the researchers in their conclusions and recommendation.

and cooking practices they will able to have new customers and gain the trust of

their customers.

they eat is safe and clean.

Most of the respondents think that if they food cart is clean they will attract

more customers and their sales will increase. The other one said that if they food

cart is clean many people will buy and with that their business will save from

bankruptcy.

Out of five (5) respondents, four (4) said that the sanitation practices that

they applied is the cleanliness of the food cart while the other one said that the

food or beverage must be ready for consumptions. They said that when you are

going to establish a business the cleanliness of your food cart is important for

you to have a lot of customers. Also, the food or beverages must be ready

because when there are a lot of customers waiting for you to serve them there is

a possibility that they will leave and find another stall or food cart.

practices and safe food for food industry personnel as well as students. It

The Effects of Food Sanitation to the sales of the Food Cart Vendors

CHAPTER V

The chapter focuses and imparts the summary of the research, its findings and

conclusions as well as its proposed recommendations.

Summary

The main purpose of this study is to help the food cart vendors in TUY

BATANGAS. IN this study, you will know how proper sanitation is important in

terms of food businesses, the of food cart vendors applied in order to promote

the sale of their product and also the action that should be taken to increase their

sales.

The researchers gathered five (5) respondents who are located in selected

area in TUY BATANGAS. The respondents were selected through purposive

sampling technique and the researchers used case study method qualitative

research and they sought permission to conduct the study from the mayor of

TUY. After the approval of letter to conduct the study the researchers

immediately conduct the interview to respondents. The researchers used semi

structured interview.

Findings

The proper sanitation in food business.

These proper food sanitation helps the vendors by keeping the food safe to

eat,by following proper handling and cooking practices. And the purpose of

having proper sanitation is to help them to maintain the cleanliness of their food

cart and also to increase their sales

Importance of sanitation in food cart businesses

The importance of sanitation in food cart businesses is to help the vendors to

know the different practices that they applied to maintain the cleanliness of their

food cart .These proper sanitation also help them to attract more customers and

to increase their sales

The sanitation applied by food cart vendors

The vendors applied different techniques on how their food cart maintain clean

by having a proper sanitation .Also they have a different ideas in order for their

buyers to have more interest in their product.

Effects of food sanitation in the sales of the foocart vendors

These proper sanitation affect the sales of food cart vendors by applying or

maintaining the cleanliness of their food cart so that many customers will attract

to buy their product and by that the sales of the food cart vendors will increased.

The action that should be taken to promote food sanitation among food cart

vendors in Tuy

Tuy should construct a program that will encourage different vendors to know the

different practices to applied in their food cart so that they can know the

importance of proper sanitation in terms of business.

Conclusions

Based on the findings derived from this study, the following conclusions were

drawn:

1. The respondents have the same thoughts on how to define the food

sanitation. According to them food sanitation keeps food safe to eat by following

proper handling and cooking practices.

2. All of the respondents said that food sanitation is important to them

because if their food cart is clean and sanitized many buyers are attracted to buy.

3. The respondents said that the food sanitation that they applied to their

food cart business is the cleanliness of their food cart because they think if their

food cart is clean they will attract more customers.

4. The respondents have the same understanding that the food sanitation

affects the sales of their business.

5. All of them said that they will suggest to their fellow food cart vendors to

practice proper food sanitation.

Recommendations

Sanitation is important especially in terms of food businesses, in order to do

that you should have enough knowledge in proper food sanitation. If your food

cart is clean and if you know the proper food handling and cooking practices you

will be able to have a lot of customers that will help your business to grow. Also,

when you are going to establish a food cart business you should always

remember all of the proper sanitation practices for you to have a clean and

sanitized food cart.

Cleanliness and sanitation is one of the most important factors in attracting

new customers. The customers are picky these days. They also have limited

amount of money they’re willing to spend. So they will pick the place they think is

clean and neat. In this case the vendors wouldn`t be able to persuade the

customers to buy their product. And it can affect to the sales of the vendors. In

addition, The vendors should know the importance of food sanitation and in order

to do that, the vendors should have a basis to maintain the cleanliness of their

food cart and also the food that they serve.

METHODS

The researchers gathered five (5) respondents who are located in selected

area in TUY BATANGAS. The respondents were selected through purposive

sampling technique and the researchers used case study method qualitative

research and they sought permission to conduct the study from the mayor of

TUY. After the approval of letter to conduct the study the researchers

immediately conduct the interview to respondents. The researchers used semi

structured interview.

This study revealed that all of the respondents who participated in our semi-

structured interview said that proper sanitation affects the sales of their product.

Proper food sanitation helps the food cart vendors to increase their sales and

save them from bankruptcy. The food cart vendors recommend to their fellow

vendors to practice proper food handling and cooking.

DISCUSSION

Our findings on “The effects of proper sanitation to the sales of food cart

businesses in selected areas in Tuy, Batangas” that the food sanitation of the

food cart should improve the way the vendors promote their products.
