C H I C K E N L I V E R P E P P E R F RY

Ingredients:
Chicken Liver – 200 grams
Oil – 2 tblspn
Bay Leaf – 1
Fennel Seeds / Saunf / Sombu – 1 tblspn
Cinnamon Stick – 1 small piece
Onions – 1 large sliced thinly
Garlic – 6 cloves sliced
Green Chilli – 2 chopped finely
Coriander leaves – 2 tblspn chopped
Lemon Juice as needed 
Salt to taste

Spice Powders :
Turmeric powder / Manjal podi – 1 tsp
Coriander powder / Malli podi – 1 tblspn
Pepper powder – 2 tsp
Cumin Powder / Jeera podi – 1 tsp
Garam masala powder – 1 tsp

Method:
 Take all the spice powders in a bowl. Add some water and make into a paste.
 Heat oil in a pan. Add in the bayleaf, fennel seeds, cinnamon and saute for a min.
 Add in onions, garlic, green chillies and saute for a min.
 Add in some salt and mix well.
 Now make a small space in the pan and add the spice mixture in and mix well till it gets
cooked and oil separates from it.
 Now mix the spices with the onions.
 Now add in the liver and saute for 3 mins till it gets seared.
 Pour half cup of water and cover the pan.
 Cook for 5 to 10 mins till the liver is cooked.
 Now open the pan and increase the heat to a high and cook till all the water evaporates.
 Once it turns dry, add coriander leaves and some lemon juice.
 Toss well.
 Serve with rice.
