PREPARATION #16: SIMPLE SYRUP


Post Lab Questions:
1. Illustrate the percolation set up used in the preparation of Simple Syrup. Label the parts.

2. What is the flow rate of the percolate? Give the purpose of controlling the flow rate.
 The flow rate of the percolate is 20 gtts/min. It is important to control the flow
rate in order to yield a clear solution of the sucrose in purified water. As a tight
cotton will inhibit the flow of liquid and a loose cotton will permit the sucrose to
flow freely.

3. What are the characteristics of a Simple Syrup which makes it self-preserving?


 A simple syrup has a 60-80% concentration which makes it self-preserving. This
is due to the fact that a concentration of less than 60% is prone to microbial
growth while a concentration of greater than 85% can crystallize the sucrose
present.
