Uvod
Ribarstvo je tradicionalno najvažnija djelatnost hrvat-
skoga priobalja i otoka, koju odlikuje dugogodišnja
povijest i čitav niz iznimnih dostignuća. Posljednjih
nekoliko godina proizvodnja se sve više orijentira prema
izvoznom tržištu. Tradicionalna kvaliteta proizvoda
Jadranskog mora, kao i proizvoda bistrih i očuvanih
slatkovodnih tokova postaju sve prepoznatljiviji na
europskom i svjetskom tržištu, čineći tradicionalne
proizvode ribarstva proizvodima budućnosti.
Hrvatska gospodarska komora unutar Udruženja
ribarstva i prerade ribe okuplja najznačajnije hrvatske
proizvođače - tvrtke koje svojom reputacijom,
dosadašnjim poslovanjem i mogućnostima razvoja
jamče daljnje uspjehe ovoga sektora. Naš je cilj omogućiti
proizvođačima najbolje moguće uvjete poslovanja,
olakšati izlazak na nova tržišta i povezati ih s onima koji
već poznaju tradiciju i kvalitetu ovih proizvoda, ali i s
onima koji ih tek trebaju upoznati.

Introduction
Fisheries has traditionally been the most important
activity along Croatian coast and on the islands,
characterised by a long history and a number of
extraordinary achievements. In recent years, fishery
production has been mainly export-oriented. The
traditional quality of products from the Adriatic Sea and
the pristine, clear rivers and lakes is becoming more
and more recognisable in European and world markets,
making our products of tradition the products of the
future.
The Croatian Chamber of Economy assembles the
most important Croatian producers, organised within
the Association of fisheries and fish processing. Our
members, Croatian fishery producers, are companies
with an enduring reputation, high quality production
and significant development potential - all guaranteeing
the further development of the sector. Our mission
and goal is to assist producers in achieving the best
possible business environment, to facilitate their access
to the market and finally to link them with you - people
and customers who are already familiar with the quality
and the tradition of these products or who need to be
introduced to them.

Ribarstvo kroz povijest
Prvi spomeni ribarstva na ovim prostorima datiraju još
iz razdoblja ilirske i rimske vladavine. Ulov i uzgoj ribe i
školjkaša nadaleko su proslavili i Dubrovačku Republiku
koja je prva, još 1434. godine, donijela propise o načinu
ribolova te načinu proizvodnje i trgovini soljenom ribom
i školjkama. Malostonske kamenice bile su sastavni dio
jelovnika europskih kraljevskih dvorova. Uzgoj šarana i
pastrve počeo je prije više od 100 godina.
Hrvatski su proizvođači i ribari dali značajan doprinos
razvoju tehnika i tehnologija ribolova i uzgoja. Ulov plave
ribe na oceanima doživio je procvat zahvaljujući izumu
koji i danas nosi ime svoga konstruktora - Puretić-blok.
Potkraj sedamdesetih godina Hrvatska je bila jedan od
pionira u razvoju uzgoja lubina i komarče, a 1996. godine
hrvatski su proizvođači napravili još jedan veliki iskorak
- prvi su u svijetu počeli uzgajati plavoperajnu atlantsku
tunu u Kalima na otoku Ugljanu (okolica Zadra).

Fisheries in history
The first mention of fisheries in this part of the world
dates back to Iliric and Roman times. Fish and shellfish
played and important role in the world fame of the
Dubrovnik Republic, which was - as early as 1434. -
the first to regulate fishing and production and trade of
salted fish and fresh shellfish. Oysters from Mali Ston
Bay constituted an integral and obligatory part of the
menus in several royal courts throughout Europe. Carp
and trout farming appeared in this area over 100 years
ago.
Croatian producers and fishermen have contributed
significantly to the global development of fishing and
farming tools and techniques. Pelagic purse seine
fisheries on the open sea managed to grow to its
current level of importance due to the development of
a device named after its Croatian inventor - the Puretic
block. At the end of the 1970's Croatia was one of the
pioneers in the development of marine aquaculture
and the farming of bass and bream, and in 1996 our
producers made yet another huge leap - they were the
first in the world to start farming tuna, in Kali, a small
town on the island of Ugljan (near Zadar).

Ribolov
Jadransko more ubraja se u mora siromašna količinom,
ali bogata vrstama riba. Količinski najznačajniji resurs
svakako je mala plava riba - srdela, inćun i papalina.
Po vrijednosti ulova značajan je koćarski ulov u kojemu
su kao najvažnije gospodarske vrste zastupljeni škamp,
oslić, trlja te neki glavonošci.
Tradicionalno se na domaćem tržištu najviše konzumira
mala plava riba, no posljednjih godina raste potražnja i
za visokovrijednom bijelom ribom iz koćarskog ulova.
Ribolov na moru obavlja oko 3700 plovila. Struktura i
veličina ribolovne flote slične su onima drugih zemalja
Sredozemlja - ribolov obavlja velik broj relativno malih
plovila u uskom obalnom pojasu, a prosječna je starost
plovila više od 25 godina. Upravo ovakvo stanje jasno
ukazuje na tradicionalnost ribolovnih alata i tehnika na
istočnoj obali Jadrana. Najveći broj upisanih ribolovnih
alata odnosi se na pridnene povlačne mreže koće te
na plivarice za lov male plave ribe. Hrvatsko morsko
ribarstvo razvija se uz ispunjavanje visokih ekoloških
standarda.
Fishing
Adriatic Sea is an olygotrophic area - poor in quantity
but rich in diversity of fish species. In terms of quantity,
the most important resource is the small pelagic fish
- sardines, anchovies and sprats. In terms of catch
value, first place is held by trawl fishing, where the most
important commercial species are Norway lobster,
hake, mullet and some cephalopods.
The Croatian domestic market traditionally consumes
mainly the small pelagic species, but recent trends
indicate an increase in the demand for high-quality
demersal fish. There are around 3,700 commercial
fishing licences. The Croatian fishing fleet is similar to
other Mediterranean fishing fleets in structure and size -
fishing is mainly undertaken by a relatively large number
of small fishing vessels in a relatively narrow coastal
area, while the average vessel age exceeds 25 years.
This is another indication of the traditional importance
of fisheries along the eastern Adriatic coast. Demersal
trawls and pelagic purse seines make up most of the
total number of gear used. Overall, the development
of commercial fisheries in Croatia closely follows and
takes into account high and rigorous environmental
standards.

Trend ulova u gospodarskom ribolovu na moru je
pozitivan, s osobito značajnim povećanjem ulova male
plave ribe. Srdela iz domaćeg ulova osnova je ne samo
prerađivačke industrije nego se koristi i za ishranu
u uzgoju tune. Inćun, s druge strane, predstavlja
značajnu polaznu sirovinu u prerađivačkoj industriji koja
bilježi značajan porast. Ulov gospodarski najvrednije
vrste - plavoperajne atlantske tune (Thunnus thynnus)
- reguliran je odredbama Međunarodne komisije za
zaštitu atlantske tune (ICCAT), a ulovna kvota Republike
Hrvatske za 2008. godinu iznosi 833,08 tona. U
strukturi ulova po jediničnoj vrijednosti posebno je
značajan škamp (Nephrops norvegicus), a u posljednje
vrijeme love se i sve veće količine kozice. Osim u
izravnoj potrošnji, kozica i škamp danas postaju i sve
značajnije sirovine u preradi, osobito u obliku očišćenih
i mariniranih repova.
Škamp - Nephrops norvegicus
Škamp pripada porodici Homaridae. Najcjenjeniji je
jadranski rak. U Jadranskome moru stanovnik je tek
jednog njegovog dijela. Glavna su mu naselja na dijelu
sjevernog Jadrana (Kvarner) te u području Blitvenice i
Jabučke kotline na srednjem Jadranu. Naraste do 23
cm, a može težiti do 0,3 kg. Meso škampa veoma je
cijenjeno, nježno i mekano, ugodne rumenkaste boje,
gotovo prozirno. U Jadranu se nalazi na dubini od 20
do 500 m. Buzara je vrhunski jadranski specijalitet, vrlo
jednostavan za pripremu te jedno od omiljenih ribarskih
jela, ali i vrhunska delicija.

Captive fisheries are showing a positive trend, with
an increase in total landings of small pelagic species.
Sardine caught in the Adriatic is the basis not only for
the processing industry, but is also used as a feedstock
in tuna farming activities. On the other hand, anchovies
are used as the input raw material for the salting industry,
which is also showing significant development. The
most valuable species - bluefin tuna - is governed by the
recommendations of the International Commission for
the Conservation of Atlantic Tuna (ICCAT), and the catch
quota for Croatia in 2007 was set at 862.31 tonnes. The
most important demersal species in terms of value is the
Norway lobster (Nephrops norvegicus), but recent data
indicate that there is an increase in quantities of shrimp
caught. In addition to direct consumption, Norway lobster
and shrimp from the Adriatic Sea are becoming increasingly
important in the processing industry, particularly for the
production of marinated shrimp tails.
Norway lobster - Nephrops norvegicus
Norway lobster is a member of the Homaridae family. It is
the most appreciated Adriatic crustacean, and it inhabits
only a small area in the Adriatic Sea. Its main habitat
areas are in the north Adriatic (Kvarner), in Blitvenica and
in the Jabuka pit in the central Adriatic. It grows to 23
cm and 0.3 kg. Its flesh is very soft and tender, light pink
and almost transparent. It inhabits depths from 20 to 500
meters. «Buzara», the traditional manner of preparation
of this species in Croatia, is a true specialty and at the
same time very simple and one of the most loved meals
prepared by fishermen.

Gospodarski ribolov u slatkim vodama Republike
Hrvatske, koji se odvija u rijekama Savi i Dunavu,
tradicionalna je kategorija ribolova čiji godišnji ulov
doseže svega 60 tona. Za taj su oblik ribolova izdane 32
povlastice, devet na Savi i 23 na Dunavu. U segmentu
ulova u slatkim vodama znatno su brojniji rekreativci
i sportski ribiči kojih je 2005. godine bilo čak 36.781.
Posljednjih 25 godina godišnji je ulov slatkovodne ribe
konstantno manji od tisuću tona. Do 1995. godine u
stalnom je padu, a u posljednje dvije godine raste, da
bi 2005. godine iznosio 656 tona. Najčešće su vrste u
ulovu deverika, som, smuđ, šaran i štuka.
Štuka - Esox lucius
Štuka je veliki slatkovodni grabežljivac čije vretenasto
tijelo završava karakterističnom glavom. Čeljust joj je
opremljena sa oko 700 zuba. Oči, smještene na vrhu
glave, omogućuju joj široko vidno polje. Leđna peraja,
položena na vrhu stražnjeg dijela tijela, služi joj za
snažan zalet kad odluči napasti plijen. Boje njezinog
tijela pogodne su za savršenu kamuflažu. Iako je
možemo naći u gotovo svim tipovima voda, od ušća do
malih rijeka, štuka ipak najviše voli mirne vode, spore
tekućice bogate vodenom vegetacijom i pune raznih
prepreka gdje se može skrivati. Štuka je samotnjak i
oštro brani svoj teritorij protiv svih uljeza, čak i kad su
oni njezine vrste.
Commercial catches on the Croatian rivers - Sava and
Danube - is a traditional category, reaching barely 60
tonnes of total annual catch. There are 32 licences
issued, 9 on Sava and 23 on Danube. A more important
role in freshwater fisheries is played by sport and
recreational fishermen - their number reached 36,781
in 2005. Over the last 25 years, the annual catch of
freshwater species has stayed well below 1,000
tonnes. Until 1995 it was constantly decreasing, and
the first positive trend was observed some two years
ago, with a total annual catch in freshwater fisheries in
2005 reaching 656 tonnes. The most important species
include catfish, carp, pike, freshwater bream and pike
perch.
Pike - Esox lucius
Pike is a large freshwater predator, whose spindle-like
body ends with a rather characteristically-shaped head.
Its jaws hold up to 700 teeth. Eyes, located at the top
of the head, enable it to have a wide range of vision.
A dorsal fin, at the top rear end, enables it to have a
powerful swing when attacking its prey. Body colours
are perfect for camouflage. Although it can be found
in almost all types of freshwater areas, it prefers slow-
flowing areas, rich with vegetation and full of different
«obstacles» where it can hide. Pike is a solitary hunter
and ferociously defends its territory against intruders,
even if they are of its own kind.

Uzgoj
U Republici Hrvatskoj registrirano je 70 tvrtki za uzgoj
i mrijest morske ribe i drugih morskih organizama. U
uzgoju bijele ribe prevladavaju lubin i komarča, od
školjkaša najznačajnije su dagnje i kamenice, a najveća
proizvodna i gospodarska vrijednost pripada uzgoju
tune. Proizvodnja lubina i komarče u stalnom je porastu
od sredine devedesetih i danas iznosi oko 3500 tona
godišnje. U uzgoju je zastupljeniji lubin koji čini oko
65 posto ukupne proizvodnje. Mlađ lubina i komarče
proizvodi se u domaćim mrijestilištima. Razvojni
potencijali, kako uzgajališta u moru, tako i mrijesnih
kapaciteta, ostavljaju velik prostor za daljnji razvoj ove
djelatnosti.
Lubin - Dicentrarchus labrax
Naš lubin nastanjuje obale cijele Europe. Lubin je veliki
morski predator, najveći strah i trepet plitkih terena na
kojima obitava. Iako nema pravila kod njegovog izbora
terena, čini se da više preferira pjeskovito, ljušturasto
i travnato dno te mutnije more. Također je poznato
da je brojniji u sjevernom dijelu Jadrana, a na južnom
je dijelu brojan samo na određenim lokacijama. Zimi
lubin nestaje iz obalnih područja bez traga, vjerojatno
u dubinu, jer se spominje da su uhvaćeni primjerci i na
100 metara dubine. Lubin može živjeti i u slatkovodnom
ambijentu, tako se ponekad primjerci mogu vidjeti
uzvodno, daleko od samog ušća. Može težiti i do 14 kg
te biti dug 1 metar. Kada bi živio dok ne dosegne svoju
maksimalnu težinu, živio bi i dulje od 15 godina.

Farming
There are 70 companies registered for marine aqua-
culture, including hatcheries and farms. The most im-
portant farmed finfish species are sea bass and sea
bream, while in terms of shellfish, oysters and mussels
hold first place. As regards value, the most important
activity is tuna farming. Bass and bream production
has been constantly increasing since the mid-90’s, and
now reaches 3,500 tonnes annually. Bass makes up
65% of total production. Domestic hatcheries produce
eggs and fingerlings for both bass and bream. Existing
development potential for marine aquaculture including
farms and hatcheries assure a good starting basis for
further development of this activity.
Sea Bass - Dicentrarchus labrax
The European sea bass inhabits the shores of Europe.
It is a ferocious marine predator, the fear of the shallow
coasts. Although there are no rules to tits choice of
habitat, it seems that it prefers sandy and gravelly
bottoms, and murkier waters. It is more abundant in
the northern part of the Adriatic, while in the south
its abundance increases only on certain grounds and
areas. During the winter months, the European sea
bass disappears from the coastal areas without a trace,
and probably moves into deeper waters, since literature
indicates that large specimen have been caught at
depths below 100 m. It can live in fresh water, so some
specimens were observed upstream from river mouths.
It can reach 14 kg and grow to as much as 1 m in
length, reaching an age of 15 years.

Najveći dio proizvodnje školjkaša odvija se u malim
obiteljskim uzgajalištima, no registrirano je i nekoliko
većih uzgajališta s proizvodnjom od 100 do 200
tona godišnje. Premda u Republici Hrvatskoj postoje
izvanredni razvojni potencijali upravo za ovaj vid
gospodarske djelatnosti, proizvodnja posljednjih
godina stagnira i iznosi oko 2500 tona dagnji i oko
milijun komada kamenica. Republika Hrvatska jedna je
od rijetkih zemalja u kojoj se uzgaja europska plosnata
kamenica Ostrea edulis.
Kamenica - Ostrea edulis
Kamenica (Ostrea edulis) naraste do 13 cm i teži do
100 g. Hrani se planktonom. Europska kamenica
je hermafrodit - spolni organi sadrže i jajne stanice i
spermu. Mrijesti se cijele godine osim zimi. Jaja se
oplođuju u tijelu te se zadržavaju na škrgama sve do
stadija larve s ljuskom. Sazrele ličinke napuštaju majku i
plutaju u vodenom stupcu i do dva tjedna dok ne naiđu
na čvrstu podlogu na kojoj će se nastaniti. Izlučivanjem
vapnenaste sluzi iz cementne žlijezde ličinka se
pričvršćuje na podlogu, nakon čega slijedi razvoj mlade
kamenice. Ljušture ove školjke su okruglaste ili jajaste,
a lijeva je veća od desne, koja predstavlja poklopac.
Kamenica se lijevom ljušturom prihvaća za podlogu.
Ljušture spaja jaki mišić. Ostrea edulis prirodno je
rasprostranjena u Sredozemnom i Crnom moru te u
istočnom Atlantiku, a kod nas je njezino najpoznatije
stanište Malostonski zaljev.

The major part of shellfish production in Croatia
takes place on small family-owned farms, although
larger farms, producing 100 to 200 tonnes annually,
also operate. Although there is huge natural and
environmental potential for the development of shellfish
farming in Croatia, total production in this segment
has been stagnant, reaching barely 2,500 tonnes of
mussels and some one million oysters in the last years.
Croatia is one of the few countries in Europe where the
European flat oyster, Ostrea edulis, is the dominant
species in oyster farming activities.
Oyster - Ostrea edulis
The European flat oyster grows to the size of 13 cm
and 100 g. It feeds on plankton. It is a hermaphrodite -
its sexual organs contain both the female and the male
cells. It spawns all year round, except in the winter. The
eggs are fertilized in the body, and are kept in the gills
until they reach the larval stage. Matured larvae leave
the mother and float in the water for up to two weeks,
until they find a solid surface where they will settle.
Secreting a special mucus from the cement gland, the
larva attaches itself to the ground, and thereafter the
development of the young oyster begins. The shells
are round or egg-shaped, and the left is larger than the
right, which acts as a lid. The oyster attaches itself to
the bottom with its left shell. The two sides of the shell
are connected by a very strong muscle. Ostrea edulis
is naturally distributed in the Mediterranean, the Black
Sea and the eastern Atlantic, and in Croatia its most
famous habitat is the Mali Ston Bay.

Proizvodno najznačajniji segment hrvatske marikulture
čini uzgoj tuna. Proizvodnja je u stalnom blagom
porastu, a namijenjena je gotovo isključivo izvoznom
tržištu. Vrijednost izvoza tune 2006. godine dosegla je
90 milijuna dolara s proizvodnjom od oko 4000 tona.
Uzgojem tune danas se u Hrvatskoj bavi sedam tvrtki
na nekoliko uzgojnih lokacija, a sam uzgoj razlikuje se
od tova koji je poznat u ostalim zemljama Sredozemlja.
Tuna - Thunus thynnus
Tuna je iznimno mišićava i ima snažno tijelo vretenastog
oblika. Najveći zabilježeni primjerak težio je 684 kg
i bio je dugačak 458 cm. Srednji lovni primjerci dugi
su između 50 i 150 cm. Najveći primjerak ulovljen u
Jadranu težio je 336 kg (Bakar, 1885). Hrani se ribom,
glavonošcima i rakovima. S obzirom na njezin način
života, tunin matabolizam i jaki mišići zahtijevaju iznimno
velike količine kisika u usporedbi s ostalim ribama. Zbog
toga je tuna uvijek u pokretu: mora isplivati najmanje
jednu dužinu tijela u sekundi da bi joj organizam dobio
dovoljno kisika.

The most important segment of Croatian marine
aquaculture in terms of both value and foreign exchange
is tuna farming. Production has been growing steadily,
and is targeted solely for export markets. Total value
of export of tuna reached US$90 million 2006, which
amounted to some 4,000 tonnes of production. There
are seven tuna farming companies in Croatia today,
with several farming locations. Farming practices in
Croatia differ from fattening practices elsewhere in the
Mediterranean, since farming in Croatian cages often
lasts for periods in excess of two years.
Bluefin tuna - Thunus thynnus
Tuna has an exceptionally muscular, lean and strong
body. The largest specimen recorded weighed 684 kg
and measured 458 cm in length. Average sizes range
from 50 to 150 cm. The largest specimen caught in the
Adriatic weighed 336 kg (Bakar, 1885). Tuna feeds on
fish, cephalopod and crustaceans. Given its lifestyle, its
metabolism and strong muscles require a lot of oxygen
when compared with other fish species. This is the
reason why tuna is always moving - it needs to swim
at least the length of its body each second in order

Ukupna proizvodnja u slatkovodnom uzgoju posljednjih
je godina u porastu i danas iznosi oko 6000 tona.
Najveći dio - oko 4500 tona - odnosi se na toplovodne
vrste. Najznačajnije vrste u uzgoju su šaran i pastrva, a
uzgajaju se još i amur, som, bijeli i sivi glavaš te linjak i
smuđ. Značajno rastu proizvodne površine pastrvskih
ribnjaka. U Republici Hrvatskoj registrirano je 40
tvrtki za uzgoj i mrijest slatkovodne ribe. Nedavno je
započet i uzgoj jegulje što predstavlja novo dostignuće
u slatkovodnom uzgoju. Povezivanje ove djelatnosti
i razvoja ruralnog turizma otvara daljnje mogućnosti
povećanja proizvodnje, te se u tom smjeru očekuje
značajan razvoj slatkovodnog uzgoja.
Šaran - Cyprinus carpio
Obični šaran ima izduženo, debelo tijelo potpuno
prekriveno ljuskama. Čini se da šaran više voli stajaćice
ili rijeke sporijeg toka koje se ljeti jako zagriju. U prvim
godinama života šarani rado žive u jatu, ali kada ostare
veći primjerci pribjegavaju samotnjačkom životu. Za
razmnožavanje je šaranu desetak dana potrebna
temperatura vode od barem 20°C. Ženke polažu od
120.000 do 130.000 jajašaca po kilogramu težine, što
znači da ženka od 15 kilograma položi više od 1,8 milijuna
jajašaca. Šaran može doživjeti i 30 godina starosti težiti
i do 35 kg težine te narasti do 1 m dužine.

Total freshwater aquaculture production has been
constantly growing over the last years, and today
amounts to some 6,000 tonnes. The largest part
- some 4,500 tonnes - is taken up by warm water
species. Overall, the most important species farmed
are carp and trout, with some quantities of pike perch,
catfish, tench, grass carp, silver carp and bighead carp
also being farmed. Surface areas of trout farms have
increased in recent years. There are 40 companies
registered in Croatia for freshwater farming activities.
Recent achievements also include eel farming. Linking
of freshwater aquaculture with rural tourism may
provide new and significant market outlets for farmed
fish, thus offering new possibilities of development for
this activity.
Carp - Cyprinus carpio
The common carp has an elongated, fat body com-
pletely covered with scales. Carp prefers standing
waters and slow rivers, which may become very warm
during the summer. In its first years of life, carp lives in
a shoal, but as an adult it prefers a solitary type of life.
To spawn, a carp needs a temperature of at least 20°C
over ten days. Females lay 120,000 to 130,000 eggs
per kilo of weight - meaning that a female of 15 kilos will
lay as many as 1.8 million eggs. Carp can live up to 30
years, and grow to 35 kilos and 1 m.

Prerada
Jedna od najstarijih industrijskih djelatnosti na istočnoj
obali Jadrana - prerada ribe - prolazi kroz proces
restrukturiranja i bilježi lagani zaokret s dosad gotovo
jedinog proizvoda, konzervi male i krupne plave ribe, ka
novim proizvodima. Oko 30 tvrtki, većinom u kategoriji
malih i srednjih poduzeća, proizvodi posljednjih godina
gotovo 20 tisuća tona prerađevina. Novi proizvodi
uključuju dimljene i marinirane lubine, dimljene jegulje,
dimljenu slatkovodnu ribu, očišćene repove rakova te
paštete i salate od čitavog niza vrsta ribe.
Značajan udio proizvodnje čine soljeni i marinirani inćuni,
namijenjeni gotovo isključivo izvoznom tržištu. Većina
proizvodnih pogona primjenjuje visoke standarde
proizvodnje (HACCP, ISO), a u posljednje vrijeme počinju
se razvijati i brendovi koji će dodatno potvrditi visoku
kvalitetu i nutricionističku vrijednost ovih proizvoda.
Osim visokom standardu proizvodnje, riboprerađivačka
industrija u Republici Hrvatskoj posebnu pozornost
pridaje očuvanja okoliša i informiranosti potrošača.
Razvojem novih proizvoda potencijali proizvodnje
u ovom segmentu proizvodnje daleko nadmašuju
današnje količine.

Processing
One of the oldest industrial activities on the eastern
coast of the Adriatic - fish processing - is currently
restructuring and switching from the “old”, relatively
cheap product - sardine in cans - to new and more
expensive products. Some 30 companies, mainly
SME’s, produce almost 20,000 tonnes of processed
products per year. New products include smoked and
marinated bass fillets, smoked eel, smoked carp and
trout, marinated shrimp tails and spreads and salads
prepared from a wide number of species.
A significant portion of Croatian production is taken up
by salted and marinated anchovies, targeted almost
exclusively towards export markets. Most processing
companies already apply high standards of food
safety and hygiene (HACCP, ISO), and in recent years
are showing the development of brands and labels,
aimed at further consolidating the quality of the final
product and indicating the sustainability of resources
upon which these products are based. In addition to
high product quality, Croatian producers are paying
particular attention to environmental and sustainability
concerns, as well as to all issues relevant for consumer
protection and information. The development of new
products provides an outlook for further production, far
exceeding the present values.

Proizvod budućnosti
Tradicija i kvaliteta najbolji su temelj budućnosti
proizvoda hrvatskog ribarstva. Dugogodišnje iskustvo,
stalna prisutnost na svjetskom tržištu i veliki razvojni
potencijali otvaraju niz mogućnosti u daljnjem razvoju
i budućim ulaganjima. Značaj ribarstva prepoznat je i
kroz pomorsku orijentaciju Republike Hrvatske, o čemu
svjedoči i raspoloživost mehanizama potpore sektoru
te Vladina strategija razvitka. Danas je ukupno 321
tvrtka registrirana u djelatnosti ribarstva, a još ih je 46
registrirano u djelatnosti prerade.
Kao jedna od najvažnijih tradicionalnih aktivnosti,
osobito u ruralnim područjima, ribarstvo je oduvijek
činilo okosnicu održivog razvoja, koji sve veće značenje
dobiva upravo posljednjih godina. Razvojni potencijal
ove djelatnosti dodatno osnažuju potreba diversifikacije
aktivnosti u ruralnim područjima te mogućnosti
korištenja mehanizama strukturne potpore koji se
očekuju. Tome svakako valja dodati i važnu ulogu koju
ribarstvo može imati u razvoju turizma, kako kao dio
ponude u aktivnostima ruralnog turizma, tako i kao
zdrava i kvalitetna namirnica te u povećanju ukupne
turističke ponude u organiziranom turističkom ribolovu.
Uzgojne instalacije na moru mogu turističku ponudu
obogatiti i u ponudi turističkog ronjenja, što se u drugim
zemljama Europe i svijeta pokazalo kao pravi «mamac»
u ponudi ljetnih aktivnosti.
Osim ulaganja u razvoj uzgojnih djelatnosti, povećavanja
kapaciteta mrijestilišta i razvoja školjkarstva, hrvatsko
ribarstvo nudi i niz mogućnosti ulaganja u preradu ribe
i drugih vodenih organizama. Diversifikacija proizvoda,
kako vrsta u uzgoju tako i finalnih proizvoda u preradi,
već pokazuje zavidan rast i pronalazi nova tržišta. Uz
uvođenje brendova - jamstva prepoznatljivosti visoke
kvalitete proizvoda hrvatskoga ribarstva - i programe
tržišne prezentacije, riba i ostali vodeni organizmi,
proizvodi hrvatske tradicije, zasigurno su proizvodi
budućnosti.

Product of future
Tradition and quality are the finest foundations for
the future development of Croatian fisheries. Long
experience, a constant presence on international
markets and strong development potential open
numerous possibilities for further development and
investment. The importance of fisheries has been
recognised by the Government, as can be confirmed
by a number of structural mechanisms available for the
sector. Today, there are 321 companies registered for
fisheries activities, and a further 46 are registered for
processing.
As one of the most important traditional activities,
particularly in rural areas, fisheries have always been
the backbone of sustainable development - which is
becoming increasingly important over the past years.
Development potential of this activity is further supported
by the need for diversification of rural activities, and by the
possibility of access to structural support mechanisms.
In addition, fisheries may play an important role in the
development of tourism, as a part of rural tourism, as
the source of food for larger tourist chains as well as an
alternative option for active vacations. Fishing vessels
may provide a good opportunity for a tourist fishing
trip, and farming facilities may provide excellent diving
grounds - experience shows that this has been a real
tourist attraction during the summer months!
In addition to investments in farming activities, an
increase of hatcheries' capacities and shellfish farming,
Croatian fisheries offers an array of possibilities for
investment into fish processing. Diversification of
products and species both farmed and processed is
already indicating a significant growth and is finding
new markets. The introduction and development of
brands and labels - guarantees of high quality Croatian
products - as well as superior promotion activities will
most certainly make the Croatian product of tradition a
product of the future.

Uloga HGK
Jedan je od najvažnijih ciljeva Hrvatske gospodarske
komore promoviranje interesa njezinih članica -
gospodarskih subjekata Republike Hrvatske - kako u
domaćim gospodarskim kretanjima, tako i na svjetskoj
sceni. HGK u svojim aktivnostima pomno prati proces
pridruživanja Republike Hrvatske Europskoj uniji te
teži stvaranju pozitivnog ozračja za razvoj i ulaganja u
hrvatsko gospodarstvo u procesu integracija.
Interese ribarstva, kao iznimno osjetljivog i značajnog
sektora, zastupa Udruženje ribarstva i prerade ribe,
ustrojeno u Sektoru za poljoprivredu, prehrambenu
industriju i šumarstvo HGK. Udruženje ribarstva i
prerade ribe HGK okuplja 130 članica koje se bave
uzgojem, ulovom i preradom ribe. Udruženje je član
nekoliko međunarodnih organizacija, od kojih posebno
ističemo FEAP i MEDISAMAK. Stručnu potporu radu
Udruženja pružaju djelatnici Sektora koji prate pravne
propise, gospodarska kretanja, mogućnosti ulaganja i
kreditiranja te mogućnosti daljnjeg razvoja djelatnosti
ribarstva u uvjetima poslovanja i financiranja na
jedinstvenom tržištu Europske unije.

Situation and role of the CCE
One of the most important goals of the CCE is promoting
the interests of its members - Croatian companies
- both on domestic and foreign markets. The CCE
closely follows the processes of accession of Croatia to
the European Union, and is seeking the best possible
atmosphere for the development of investment into the
Croatian economy throughout the integration process.
The interests of fisheries, as a highly sensitive
and important sector, are represented through
the Association of Fisheries and Fish Processing,
which is operationally supported by the sector for
agriculture, food industry and forestry within the
CCE. The Association has 130 members, engaged in
fishing, farming and processing. The Association is a
member of various international organisations, such
as FEAP and Medisamak. Employees of the sector
provide support to the Association, through technical
organisation and expert consultation on issues such as
legislation, economy, policy, investment opportunities
and development options for Croatian fisheries within
the single EU market.
