Mondays) for dinner from 7 p.m. – 11:30 p.m.

Each of the seven meeting rooms and the Grand Ballroom are statements in style and elegance
with shimmering chandeliers, rich gold infused murals and frescos, and delicate mirror work
on the walls reminiscent of the famous Sheesh Mahal of Amber Fort. Add to this a host of
state-of-the-art facilities such as web-casting, internet connectivity and video conferencing,
break-out areas and a team of chefs dedicated to culinary excellence in a city that is a
fascinating testament to the beauty of Rajasthan, and you have an event that is a winner from
the word go.

TRAINING OVERVIEW
DEPARTMENT: F&B Service
I trained in F&B Service department at THE FAIRMONT JAIPUR for 45 days. In f&b
service i worked in two sub departments and they were:

 RESTAURANT (ZOYA)- WEEK:1 TO WEEK:3


 BANQUETS- WEEK:4 To WEEK:6
First day I was sent to their main restaurant ZOYA that is the all day dining restaurant of the
hotel. I worked in ZOYA for three weeks where I was assigned various duties like

 Back area cleaning, turn down service,


 Restaurant setup, cover setup.
 I was eventually allowed to take orders and then explained what all happens in closing of a
restaurant. We also used to have various trainings sessions

After the first three weeks I was shifted to the banquet department as it was the wedding
season in Rajasthan and due to this the banquet department was in a lot of pressure. I had a
very different experience there because of the odd shift timings and long working hours but I
got to learn a lot like working under pressure, how to handle problematic guests, etc. In the
banquet department my duties included the management of the buffet, clearance of the halls,
back area clearance, snacks service or sometimes escorting the guests to various areas of the
hotel.
FOOD PRODUCTION AND TRAINING OVERIEW

The Back Area of Kitchen is Divided into 6 parts.

All various cuisines are prepared by the chefs with best quality of Materials. The Chinese
Section is made in the Continental Kitchen. Whereas Banquet Kitchen Space is Shared By the
Halwai Chef.
Basic Gravies Like MakhaniGravy, Dal Makhani, Onion Tomato Masala is Prepared well in
advance and Stored in the Deep Freezer.

A GUEST WHEN STEP IN THE HOTEL , THE FIRST THING HE WOULD EXPECT IS
CLEAN ENVIRONMENT WITH A PLEASANT APPEARANCE . IT IS ENSURED BY THE
HOTEL THAT GUEST WOULD RECEIVE THE SERVICE AS THEIR REQUIREMENTS AND
MAKE THEM FELL “ HOME AWAY FROM HOME .”

Wooden Parrot can be seen sitting on a wall hanging right next to


the bed. The traditional story behind this parrot states that Parrots
use to be the messengers and gossip source for Kings, who use to
inform the king about his kingdom’s happenings upon his absence.
Parrots were also considered lucky, in ancient times.

CONCLUSION

I Would like to say that I feel really grateful that I was selected by the Fairmont ,Jaipur
because all the knowledge that I got during the training period might be difficult to share in
this report due to the strict word limits ,but yes one thing that I have learnt was that the hotel is
mine and every loss of the hotel is my own loss and every gain was my own or in simple and
easy way you can say that i was having a feeling of ownership and self belongingness.

I was very disinterested during the initial days of my training, but as the time passes I got to
know that this is the only opportunity where i can find the best out of me and can see my
ability and interest. this training period also taught me that how we can survive in each and
every circumstances with different people having different nature.

I really enjoyed my training period and got familiar with the every aspect of the hotel industry.
