Every food factory has the responsibility to assure food safety by controlling food
hazards.

a) Explain three types of food hazards with an example for each type of hazard.

b) Choose a method to prevent or control hazard example given in your answer 1
a).

c) A factory has found out that their seafood product was contaminated with a trace
of banned drugs and pesticides. Develop a recall procedure step-by-step for that
product.

Figure 1 shows the typical bacterial growth curve that takes place in a closed
environment, whereby nutrients are not added while waste and dead cells are not removed.

a) Explain the growth curve at Phase 2.

b) A microbiological analysis shows that a cream pie has 3 x 106 Staphylococcus


aureus cells in it. It was suspected that the pie was contaminated with 500
Staphylococcus aureus cells 6 hours ago at premise XYZ.
i. Determine how many generations have occurred.
(5 Marks)

ii. Determine the generation time.

(2 Marks)

iii. Using generation time from b) ii how many Staphylococcus aureus cells
would be present after 8 hours?

iv. In your opinion, how could the pie be contaminated with Staphylococcus
aureus at premise XYZ and which measures should be taken to prevent
the contamination from happening again?
