MODULE 6
HEHRS3- INTRODUCTION TO BARISTA
(Bartending 3,4)
Name: ______________________________________________________________________
I. INTRODUCTION:
A long drink or tall drink is an alcoholic mixed drink with a relatively large volume (> 12 cl, frequently 16–40
cl or between 5–9 fluid ounces).
A long drink will have a tall glass full of mixer, in contrast to a short drink, or shooter, which has less mixer,
or none. Short drinks are generally stronger since both types tend to contain the same amount of alcohol.
Long drinks are therefore generally more dilute than short drinks.
A classic long drink is a Tom Collins. A simple style of long drink is the highball, a cocktail composed of one
liquor and one mixer (excluding garnish or ice). A classic example of the highball is the gin and tonic.

4. 1 OBJECTIVE 1: Discuss what are the Long Drinks and Muddled Drinks, and each origin
1. Tequila Sunrise
The tequila sunrise is a cocktail made of tequila, orange juice, and grenadine syrup. It's served
unmixed in a tall glass. The modern drink originates from Sausalito, California in the early 1970s
after an earlier one created in the
1930s in Phoenix, Arizona. The
cocktail is named for its
appearance when served—with
gradations of color resembling a

juice, and soda water, and was served at the Arizona Biltmore Hotel where it was created by Gene Sulit in
the 1930s or 1940s.
The more popular modern version of the cocktail contains tequila, orange juice, and grenadine, and was
created by Bobby Lozoff and Billy Rice in the early 1970s while working as young bartenders at the
Trident in Sausalito, California north of San Francisco. In 1972, at a private party at the Trident organized
by Bill Graham to kick off the Rolling Stones' 1972 tour in America, Mick Jagger had one of the cocktails,
liked it, and he and his entourage started drinking them. They later ordered them all across America, even
dubbing the tour itself their "cocaine and tequila sunrise tour".
At the time, the Trident was the largest outlet for tequila in the United States, and in 1973 Jose
Cuervo picked up on the new drink as a marketing opportunity and put the recipe for the new drink on the
back of their bottles of tequila, and promoted it in other ways. Later that same year, the Eagles recorded a
song called "Tequila Sunrise" for their Desperado album as the drink was soaring in popularity
2. Harvey Wallbanger
The Harvey Wallbanger is a mixed drink made with vodka, Galliano, and orange juice
HISTORY
The Harvey Wallbanger appears in literature as early as 1971.
The cocktail is reputed to have been invented in 1952 by three-
time world champion mixologist Donato "Duke" Antone, and
named by Antone after a surfer frequenting Antone's Blackwatch
Bar in Los Angeles. However, recent research by culinary
historians casts doubt on this theory. Robert Simonson goes so
far as to say that "no sane person ever believed that
story." Simonson emphasizes the lack of a historical record for
any Blackwatch Bar, and indicates that, in fact, Antone lived in
Hartford, Connecticut, rather than Los Angeles during the relevant
period.
Other historians such as David Wondrich emphasize the role of
McKesson Imports Company and its marketing team for
developing the drink, confirming among other things that the
company commissioned a graphic artist to develop a "Harvey Wallbanger" sandal-clad surfer mascot in the
late 1960s. It is known that McKesson executive George Bednar was instrumental in promoting the drink as
a means of selling its component Galliano liqueur, and Bednar claimed to have penned a popular tagline for
the drink: "Harvey Wallbanger is the name. And I can be made.

MUDDLED DRINKS
1. CAIPIRINHA- is Brazil's national cocktail, made with cachaça (sugarcane hard liquor), sugar, and lime.
The drink is prepared by mixing the fruit and the sugar together, then adding the liquor. This can be made
in a single large glass to be shared among people, or in a larger jar, from which it is served in individual
glasses.
HISTORY
Although the origin of the drink is unknown, one
account says it came about around 1918 in the
region of Alentejo in Portugal, with a popular recipe
made with lemon, garlic, and honey, indicated for
patients with the Spanish flu. Another account is
that Caipirinha is based on Poncha, an alcoholic
drink from Madeira, Portugal. The main ingredient
is aguardente de cana, which is made from sugar
cane. Sugar cane production switched from
Madeira to Brazil by the Portuguese as they
needed more land to plant it on. Before this people
in Madeira had already created aguardente de
cana, which was the ancestor to cachaça.
HISTORY
Havana, Cuba, is the birthplace of the
mojito, although its exact origin is the
subject of debate. It was known that the
local South American Indians had
remedies for various tropical illnesses,
so a small boarding party went ashore
on Cuba and came back with ingredients
for an effective medicine. The
ingredients were aguardiente de
caña (translated as "burning water", a

crude form of rum made from sugar cane) mixed with local tropical ingredients: lime, sugarcane juice, and
mint.
