This module was designed and written with you in mind. It is meant to help you gain the basic
knowledge of Bread and Pastry Production. The scope of this module permits it to be used in
many different learning situations. The language used recognizes the diverse vocabulary level
of students. The lessons are arranged to follow the standard sequence of the course.

The module is divided into three (3) lessons, namely:


● Lesson 1 – Hazards and Risks Identification and Control
● Lesson 2 – Occupational Health and Safety (OSH) Indicators
● Lesson 3 – Personal Hygiene and Proper Handwashing

Hazards and Risks
1 Identification and Control

Hazards and risks in the workplace are very important to identify and control. You
need to check the laboratory or kitchen to identify the hazards and risks before doing any
work. Proper utilization and placing of tools, utensils, and equipment will help you to prevent
the hazards and risks in the workplace and you can work easily. The success of work will
depend on how you organize, follow, and arrange work workplaces.

Note to the Teacher

In this lesson, the learners are expected to identify the hazards and
risks within the workplace in order to prevent themselves from getting harm.
Give examples to the students how to identify the hazards and ricks to
improve their safeness in the workplace.

Identification of hazards and risks in the workplace is to find and record possible
hazards that may be present in the workplace. Spot the hazards in the workplace. Encircle as
many hazards as you can find in the picture below.

Do you feel safe in your workstation? Do you worry about what may go wrong while
working? How comfortable are you at your workplace? These are some of the questions you
need to ask when assessing whether your workplace is safe or not. A place that is threat-free
and work-conducive implies more work with less effort.
To prevent accidents, sickness, or absence, the workplace must identify, monitor, and
reduce the risk associated with workplace hazards. Every workplace has hazards and risks.
Business owners and managers have a legal responsibility to look after their employees’
safety and protect them from health and safety hazards in the workstation.

Hazards can come from a variety of sources. Suitable examples may include
substances, materials, work procedures, and practices that can cause harm or sickness to a
worker under certain conditions.

What are the Most Common Workplace Hazards and Risks?


There are many types of workplace hazards which fall under six (6) categories:

1. Safety Hazards – are the most common type of hazard and are present
in every workplace at one time or another. These working conditions may
cause injury, illness, and death such as inadequate and insufficient
machine guards, unsafe workplace conditions, and unsafe workplace

2. Biological Hazards – are organic substances such as bacteria, viruses,


fungi, and parasites that can cause health effects. People who work at
daycare centers, colleges, hospitals, or nursing homes can be exposed to
blood or other body fluids, fungi and mold, bacteria, viruses, and more.

3. Chemical Hazards – are hazardous substances that can cause harm to the worker such
as solid, liquid, vapor, or gaseous substances, dust, fume, or mist.

4. Ergonomic Hazards – are physical factors that harm the musculoskeletal


system, such as repetitive movements, forceful movements, vibrations,
extreme temperatures, manual handling, and poor body positioning. Harm
can also be caused by the improper design of workstations, tools, and
equipment.

5. Physical Hazards – common workplace hazards are noise, vibration,


radiation, pressure, electricity, and weather.

6. Psychological Hazards - also known as work stressors. These are
occupational hazards that affect the psychological and physical
well-being of workers. It includes the inability of the worker to work
with others.

What is Risk?
Risk is the uncertainty of outcomes, actions, and events where something of human
value (including humans themselves) are at stake and where the outcome is uncertain. Risk
is an uncertain consequence of an event or an activity concerning something that human
values.
What is Risk Assessment?
Risk assessment is the process where you:
● Identify hazards and risk factors that have the potential to cause harm.
● Analyze and evaluate the risk associated with that hazard.
● Determine appropriate ways to eliminate the hazard, or control the risk when the
hazard cannot be eliminated.
