1.Background of the study: 1

Chow mein , simplified Chinese:  are Chinese stir-fried noodles with vegetables and

sometimes meat or tofu. Over the centuries, variation of Chaowmein was developed in
many regions in China; there is several methods of frying the noodles and range of toppings
can be used. It was introduced in other countries by Chinese immigrants. The dish is popular
throughout the Chinese Diaspora and appears on the menus of most Chinese
restaurants abroad. It is particularly popular in India, Nepal, the UK, and the US, and
in Mauritius. vidence shows that the noodles eating practice in China is more than 4000 years
old. Chowmein is one of the common foods in Nepal - found now in almost every eateries
and restaurants. However, many Nepali are unaware about what chowmein means and its
history.

It is evident that the chowmein came to Nepal from Tibet. The tradition of eating momo and
such in Kathmandu Valley came during the ancient trading relationship between Kathmandu
and Tibet. But it seems that the culture of chowmein came recently, more with the Tibetan
diaspora in Nepal in 60s. However, even before chowmein arrived in Nepal, there was a long
tradition of making noodles soup in Nepal in mountainous communities- in Sherpa as
Shakypa and in Thakali as alangkhu but these were not of uniform thickness and long as of
chowmein. The culture of eating noodles is also brought by Burmese Nepali who returned to
Nepal after generations. People from Nepal migrated to Burma as early as mid-nineteenth
century during the British colonial rule and have also fought in second world war for them.
The culture of eating noodles has become widespread with the production of instant noodle
‘Rara’ in Pokhara in 80s, and also dried egg noodles were available in the market.
