GRILLED RECIPE AND PROCEDURE

Description: CPB is a mix grilled of chicken, pork, beef and some vegetable that will complement the
taste, the flavor of it is it’s kind of sweet and sour because of the sugar and calamansi and for the we do
different sauce like the teriyaki sauce with sesame seed on it.

Recipe: CPB (chicken, pork and beef)

Ingredients: 1pack 10-pcs small corn

1kg Chicken 500ml Soy sauce

1kg Beef 300g Sugar

1kg Pork ½kg Calamansi

1pc Tofu 1pc Garlic

¼ 5pcs Bell pepper green 3-45 tbsp-g Sesame seed

¼ 5pcs Bell pepper red 2-30 tbsp-g Salt

¼ 6pcs Tomato 2-30 tbsp-g Ground black pepper

2pcs Cucumber

Procedure:

Step 1: cut the chicken (breast) into medium size and put it in the bowl

Step 2: in the separate medium bowl add the soy sauce, sugar, calamansi, salt, garlic and ground black
pepper and mix it well

Step 3: put mix ingredients in the chicken and mix it, then rest it until it blends the flavor

Step 4: for the pork and beef repeat the procedure of chicken in the separate bowl

Step 5: cut the bell pepper green and red, tomato cucumber, small corn in medium size

Step 6: when were done in marinade and cutting, where going to put in barbecue stick with the mix of
chicken, pork, beef and some vegetables

Description: Casa Squid, we filled it with mix meat and seafood and, we add some vegetable in the
chicken to balance the oily of other ingredients, the flavor is it has a little of sweet and salty because we
brushed it using the mixture of sugar and soy sauce.

Recipe: Casa Squid

Ingredients:

1kg Squid(medium) 1 pc Lemon

¼ g Mix vegetables 8 tbsp cayenne

¼ kg pork 2 tsp Salt

150 ml Soy sauce 2 tsp Black pepper

2 pcs Onion

Procedure:

Step 1: check and make sure that the squid is clean and fresh

Step 2: in medium bowl mix the pork and mix vegetables

Step 3: in the small bowl mix the soy sauce, onion, lemon, cayenne, salt and black pepper

Step 4: in step 3 add it in the step 2 and mix it well to blend the flavor, but don’t put all the mixture of
step 5: separate some mixture

Step 6: put the mix ingredients inside the medium squid

Step 7: brush the separate mixture in squid to add some color and flavor, when it done grilled it

Description: Casa Lechon this is our main dish, we use whole chicken and we filled it some of seafood
like the mussels, crabs and shrimp and we marinade it using different seasonings and also, we use sprite
to add some sweet flavor on the chicken for the outside of the chicken we brush it in t mixture of
paprika, calamansi and salt to add some color and also we use lemon grass to make it more aromatic.

Recipe: Casa Lechon

Ingredients:

3kg Whole chicken 2-20 tbsp-g Ground black pepper

½ kg Mussels ½ cup Sugar

½ kg Crabs 1 stalk Lemon grass

¼ kg Shrimp 2-3- tbsp-g Paprika

3pcs Onion 3-45 tbsp-g Cajun powder

1 head Garlic 295ml Sprite

¼ k Calamansi

2-30 tbsp-g Salt

Procedure:

Step 1: clean the whole chicken, mussels, crabs and shrimp make sure that the chicken has no excess
feather and separate the mussels, crabs and shrimp in medium bowl.

Step 2: cut the onion, garlic in a small piece

Step 3: in small bowl mix the calamansi, salt, ground black pepper, sugar, paprika, cajun powder and
sprite and mix it well to blend the flavor

Step 4: put the step 3 in the step 1, mix it and marinade it for about 15 to 20 minutes, don’t put all the
mixture put it in small bowl

Step 5: add the mixture in the bowl of mussels, crabs and shrimp and mix it until it blends the flavor

Step 6: put all the mixture inside the chicken and make that it won’t come out

Step 7: brush the separate mixture in the whole chicken to add some color and flavor on it
