RESEARCH METHODOLOGY

This topic is a survey based project numerous surveys need to be done to achieve the
desired result.
The aim of the project is to find out the popularity/acceptability of Bihari cuisine (in five
star hotels) in Kolkata. By keeping in mind the various age groups and their preferences
and the popularity of Bihari cuisine among them and to look out for the best possible
results of the survey so that popularity/acceptability of Bihari cuisine can be proven.

The Research Methods may be defined as those methods / techniques that are used for
conducting the research.
Procedure of data collection:-
Primary data as well as secondary data is used for the present study.
 Primary data is collected through the questionnaire, observation, interviews and
feedbacks of various chefs, managers, youths and general public of various age
groups.
 Secondary data is collected through previous records, data and feedback forms,
library resources: newspapers, magazines and internet.
There can be various methods of conducting research that can be stated below:-
1. Survey among the various 5 star hotel‟s Bihari Cusine outlets in the market. Visiting
hotels like:-
 The Park Hotels, Kolkata.
 Hotel Hindustan International, Kolkata.

2. Having a visit to the 5 star hotels and discussing the topic with:-
 Chefs of the various specialty restaurants of the five star hotels.
 Guest of various age groups.

During the survey it was found that 80% of the management staff is well aware about
the Bihari cuisine, and there are 20% are in that profession for a long period of time. so
they are very well versed with their technical and practical skills Bihari cuisine.

It was found that 70% of the management staff is aware about the guests preferences
and that tells us that only few guest know about Bihari cuisine. Which is gives the
basic idea about the popularity of the Bihari cuisine.

By this survey it was discovered that 60% of the staff thinks that most of the times guest
like the experience of the visit to their Bihar cuisine outlet and the rest 30% of the guest
think that they didn’t liked the experience the other 10% staff was not certain about the
guest experience.

According to the 80% management staff thinks that the Bihari cuisine is not that
popular in Kolkata, and it will definitely take few years to flourish. And the rest 20%
don’t think it will flourish in future.

As per the survey done in the hotels the management often claims that most of the
people who are willing to spend much amount of money on this cuisine are often from
high income groups , and this cuisine do not attract the general public much.

In the survey it was reviled by 80% of the employees that most of the revenue of the
hotel comes from the speciality restaurants example. (Oriental cuisine restaurant) of the
hotel. So this cuisine affects the revenue of the hotel in large scale.

According to the survey done in the hotels of Kolkata, 70% of the management thinks
that there is a need of improvement in the Bihari cuisine live/display kitchens, So that
the revenue of the hotel can increase leading to popularity of the cuisine. Other 30% of
the staff don’t think that there is a need of improvement in the Bihari cuisine
live/kitchen display.

Management of most of the hotels of Kolkata think that there should be more number
of Bihari cuisine restaurants in Kolkata, which improves the revenue of the hotel leading
to popularity of the Bihari cuisine. Whereas about 20% don’t think that there is need of
more Bihari cuisine restaurants in the market.

During the survey, It was observed that 70% of the people belonged to the age group of 20-15
yrs. Which indicates that youth population is more in Kolkata .that is why they are more
influenced towards western culture. Rest 20% of the people belong to the people who are busy
in their profession and have less time for visit restaurants on frequent basic. Rest 10% people are
not interested in trying the new cuisine as they are interested in their own palate.

2. Which oriental cuisine have you tried the most

It was observed that 50% of the guests have tried Bengali cuisine because of its popularity. And it
is because they think all the dishes are similar in oriental cuisine. Other 40% of the guests have
tried Punjabi cuisine which indicates that people are aware of oriental food but they are not
specific about the various cuisine of Oriental cooking. And only 10% guests are aware of the
Bihari cuisine or they have tried Japanese cuisine.

In Kolkata, Bihari cuisine is not tried by 70% of the guest, and most preferably are willing to try
it because they think it might be different from Bengali cuisine and most of them were from high
income groups. Other, 20% of the guests are not even interested in trying the Bihari cuisine.

In Bihari cuisine Litti Chokha is the one dish which is heart of Bihari cuisine ,and about 22% of
the guests have tried Litti Chokha ,but they are not familiar with the other dishes of Bihari
cuisine. And other 67% of the guests have not tried Litti Chokha. And the rest 11% of the guest
would like to try it in future.

During the survey it was observed that only 22% of the guests do think that there are popular 5
star Bihari cuisine restaurants in Kolkata, and other 67% think that there are not enough Bihari
cuisine restaurants in Kolkata.

During the survey it was discovered that 20% of the guest do not wish to have more Bihari
cuisine restaurants in Kolkata, because most of them think it is not acceptable for the Indian
palate. And the rest 50% of the guest will to have more Bihari cuisine restaurants in Kolkata,
because they want to try more delicacy of Bihari cuisine.

While taking the survey it was discovered that 30% of the guests do not think that Bihari
cuisine’s live/display kitchens are popular among general public because of the lack of
knowledge and social awareness. Other 70% of the guest think that it is not that popular
because it is too expensive for the guest to approach that standard of the restaurant.

During the entire survey it was discovered that the guests do not think that the Bihari cuisine
(food) is popular in Kolkata . because it does not serve the Indian palate. And even it is high
on pocket which general public will not be able to afford leading to low popularity of Bihari
cuisine in Kolkata.

Conclusion

Bihari cuisine has gained popularity all around the globe in the past few years.it has
made its mark and established itself as one of the leading cuisine. Bihari cuisine is
proving to be a hit among culinary enthusiasts in India, especially the young and the
health conscious . Kolkata being one of the metropolitan city of the country has a great
section of people living here with a lot of different cultural heritage and traditions. Thus,
Bihari cuisine paving its way into the specialty restaurants of five star hotels in Kolkata
is something that we should be very surprised about.
According to the data collection from the survey, it is seen that a section of people has
already tried the cuisine and those who have not tried it they are very enthusiastic to
explore the Bihari culinary culture. Many people agree that Bihari cuisine may not be as
popular as Bengali cuisine due to its ingredients, but it can easily derived from the
assessment that the people of Kolkata willing to explore new cuisine. The popularity of
any cuisine is highly dependent on how much people are aware of its existence. There
are many number of people who know about of Bihari cuisine but there are more number
of people who are not aware about this cuisine, but due to lack of awareness a guest
going to an oriental restaurant order for a Bengali dish by default. Thus, awareness is
playing a very major part in the popularity of Bihari cuisine in the restaurants of Kolkata.
So, it can be concluded that Bihari cuisine (food) has already been a part of the culinary
culture of specialty restaurants of Kolkata, it is present in the market but not that popular.
However, with little enlightenment people can accept the live/display kitchen of Bihari
cuisine & discover the unique charm and delights of the Bihari culinary culture.

Limitations

The scope of any research project is limited to an extent. The constraints of the
research project are:-
 The survey which was taken from various hotels was very time consuming
and took several days to complete.

 Many people were not interested in giving their opinion regarding the
Research topic.

 Many hotels restricted the process of research in their hotel as they thought it
might disturb their guest.

 During the entire process it was very difficult to convince the


concerned authorities of the hotels to do the survey in their hotel.

 Many concerned authority of kitchen even denied for the survey as they were
too busy with their compact time schedule and busy kitchen.

 During the survey it was observed that most of the guests don‟t have
idea regarding the Bihari cuisine.

 While the survey it was discovered that there are only limited number of Bihari
cuisine restaurants in Kolkata.

 While the survey it was found that there are no specialty chefs from who
could be at the Bihari restaurants to popularize the cuisine, leading to low
popularity of Bihari cuisine.
