Rationale

Project PPE (Portfolio Predicate on Exemplar) is a backup contingency response of


the Schools Division of Surigao del Sur for learning delivery and learning resource
which parallel to the on-going endeavors of the higher offices in the Department. It
is the utilization of a lesson exemplar that is streamlined in a teacher-and-learner-
friendly format to cater to the new classroom setup in light of the COVID-19 health
crisis. These exemplars will be paired with a self-contained and self-instructional
portfolio.

The portfolio is a deliberate collection of works that highlight a learner’s effort that
would enable the him/her to see his/her growth and achievement, ability to reflect
on his/her own work and ability to establish goals for future learning.

Welcome to the TLE_FFP – 10 – First Quarter Exemplar on Washing and Sterilizing of
Packaging Materials!
This exemplar was collaboratively designed, developed and reviewed by educators
from different schools in the Division to assist you in helping the learners meet the
standards anchored on Most Essential Learning Competencies (MELC) set by the
Department while overcoming the constraints in schooling brought by the COVID-19
pandemic.
This learning resource hopes to engage the learners into guided and independent
learning activities at their own pace and time. Furthermore, this also aims to help
learners acquire the needed 21st century skills while taking into consideration their
needs and circumstances.

What is It

WASHING AND STERILIZING OF PACKAGING MATERIALS


Thinking about food contamination and responding appropriately to
ensure safe food is a crucial part of food processing operations. Containers are a
convenient and attractive means of packaging products; they also protect food
from environmental influences and damage during distribution. Rigid and semi-
rigid containers made of a wide variety of materials are filled with product and
securely closed. In some cases, the heated food product is used to sterilize the
container and closure after filling, or a post-fill sterilization process is implemented,
such as a hot-water bath or pressure cook. Before filling, however, the container
should be cleaned to remove soil, foreign objects, and chemical contaminants.
The process of cleaning food containers, even when they are new, is
indispensable to ensure a safe product. Empty food containers can harbor

foreign materials such as insects and pieces of glass or plastic. Sterilizing food
containers (for example, by irradiation) without cleaning them
eliminates biological hazards but may leave physical and chemical hazards in
the container that affect the safety of the food product. When consumers
discover foreign materials in a product, the results may include a loss of
confidence in the manufacturer, sales reductions, product recalls, and lawsuits.
Therefore, a system to clean containers and improve the safety of food products
should be established.

WASHING, CLEANING AND STERILIZING

Washing - is a method of cleaning usually with water and often some kind of soap
or detergent.
Cleaning
Cleaning is the process of achieving and maintaining an area to a standard
deemed visually free from debris which can include dirt, food, feces, blood, saliva
and other body secretions. It is the removal of foreign material from areas and
objects. Cleaning reduces amount of organic matter that contributes to the
proliferation of bacteria and viruses. The actual process of cleaning is achieved
with the use of aids such as cleaning tools and cleaning agents. Cleaning tools
such as mops, vacuum cleaners, cloths, floor scrubbers are used to achieve a
state of visual cleanliness.
Cleaning is a simple easy method using the two essential components of
cleaning, namely, friction and the use of fluid. Friction through rubbing and
scrubbing the soiled area and fluids generally water and a soap solution are the
first stage of cleaning. Washing is one way of achieving physical cleanliness,
usually with water and often some kind of soap or detergent.
Cleaning Agents

Cleaning agents are substances which come in many forms but generally are
liquids, powders, sprays, or granules. Some cleaning agents can kill bacteria and
clean at the same time. Cleaning is important because it prevents the spread of
dirt and contaminants to oneself and others. It is about removing dirt, including
stains, dust, bad smells and clutter on surfaces.
There are four types of cleaning agents it includes detergents, degreasers,
abrasives and acids.

Cleaning Process
The cleaning process can be divided into two:

1. Washing – cleaning with the use of water and soap or detergents.
2. Disinfection – the process to eliminate most of pathogenic
microorganism.

Cleaning Methods
There are many cleaning methods which can be used, and a satisfactory result
can be obtained several ways. According to the size of equipment, tools
materials to be cleaned.
1. Manual Cleaning – using different types of brushes that are easy and
simple to use, low cost, effective and gives a good result.
2. Foam Washing – this process is often used in food industry. Special
foaming detergent are sprayed in the surface to be cleaned and left in
contact with the surface. This is particularly useful in processing
equipment where the complexity of design makes manual cleaning
impossible. The foam and soil is removed by hasing or manual cleaning.
To make the foam, special equipment is needed. This is connected to a
tank with special chemicals and the foam/water mixture is sprayed on
the items to be cleaned.

of both portable equipment and stationary types.

Sterilization – a process used to completely eliminate all living microorganisms. It
can be achieved by moist heat, dry heat, filtration, irradiation or by chemical
methods.

Methods of Sterilization
1. Moist Heat Sterilization is one of the most effective methods of sterilization
where the steam under pressure acts as a bactericidal agent. Moist heat
sterilization usually involves the use of steam at temperatures in the range
121–134°C.
2. Dry Heat Sterilization is the process of removing microorganisms by applying
moisture-free heat which is appropriate for moisture-sensitive substances.
3. Filtration - The process of filtration is unique among sterilization techniques
in that it removes, rather than destroys, microorganisms. Further, it is
capable of preventing the passage of both viable and nonviable particles
and can thus be used for both the clarification and sterilization of liquids
and gases.
4. Irradiation - is the process of exposing surfaces and objects to different
kinds of radiation for sterilization. Mainly electromagnetic radiation is used
for sterilization.

HOW TO CLEAN, DISINFECT AND STERILIZE PLASTIC MATERIAL


There are several ways to properly clean plastics. Only some of these methods
may be applicable to your specific product.

● Wash the container: For proper plastic disinfection wash the plastic with
anti-bacterial dish soap and hot water. The soap will immediately kill
surface bacteria, but may not guarantee complete sterilization; combining
washing with another method below is more effective. For the best results

always use a non-diluted alcohol rinse when washing. Additionally, both
rubbing alcohol and grain alcohol kill bacteria on plastic surfaces.
● Soak the plastic: For complete plastic sterilization soak the plastic container
in a bleach-water solution of about 5 to 10 percent bleach. Bleach will not
take long to disinfect, so the soaking time is minimal.
● Heat plastic: This can be done in a hot dishwasher rinse, but a microwave
is more effective. Wet the plastic container first, as the interaction between
the microwave's heat and water is what causes sterilization. Place the
plastic container in a microwave on high power for approximately two
minutes. Be cautious as both the dishwasher and microwave can melt
plastic. Polypropylene plastics are stronger than standard plastics and can
withstand high heat.
● Place plastics under a UV lamp: Ultraviolet plastic sterilization is a safe, non-
heated method used widely in food processing, laboratories and water
treatment. Although a UV lamp is not the most common kitchen or garden
tool, UV lamps are commercially available.

How to Clean and Sanitize Packaging Tools, Equipment and Containers

Have food containers, packaging equipment and tools ready and


thoroughly cleaned and sterilized before using. Thorough rinsing would not
be enough for they may still contain yeast cells and spores. Glass containers
and similar containers that are thoroughly washed should be placed in
boiling water for 15 minutes to be sterilized. Keep them warm until ready to
use.
