When you arrive:

● Meet on the corner of South and Capitol. Enter through the glass box building at the
Indiana Convention Center--you will need to show your ID to go down the escalator.
There are tables to the right where you will sign in--groups are organized alphabetically;
look for the person who has the SHS binder. You will sign in and show IDs with DOBs
for students/alcohol permits and server training certificates for adults.
● Start sending students to security as soon as they’ve signed in. Sometimes there’s a
line; tell them to go through security and wait to gather as a group on the other side of
the doors.Make sure your leader is the last one to sign in and pass through security; also
make sure your leader has the stand binder.
● Follow the hallways along to the left. When you see the glass-walled corner (dispatch),
you’re in the right place.If you continue past dispatch and turn left, the vault is the
guarded, unmarked door with the security camera above it. Your banker needs to
immediately go to the vault with the slip of paper from the binder. The rest of the group
will go up to the first level via the Northwest ramp. Once you’re on the first level, find the
stand by locating the seat numbers closest to your stand number. Note: if you need
additional uniform pieces, the uniform shop is directly across from dispatch, next to the
NW ramp. The Centerplate uniforms are all the way in the back; talk to Judy for your
uniform needs.

Stand Manager Notes:


● There are a few sheets in the binder that all workers must sign--I suggest getting all
signatures when you first get to the stand.
● Begin by counting inventory. Divide and conquer everything on the inventory sheet, then
check your numbers with the supervisor.
● You will need to check temperature of food--try to do this before doors open. The
supervisor can help with this.
● Track all spoilage (any items on the inventory list that you throw away instead of sell). I
suggest having everyone report their spoilage to you, and you keep the master list.
● When other workers come to your stand for meals, write what they ordered on the pink
ticket. If they don’t order a drink (soda or water) write one on the ticket anyway--it helps
to offset the spoilage charges.
● Send a few people on break right as doors open. Anyone who doesn’t take a break at
this time will have to wait until after halftime for their break. Pink tickets for meals are in
the stand binder. Breaks/meals must be taken in the assigned places--ask your stand
supervisor for the nearest breakroom.
● Advise all cashiers to be careful with ringing in purchases. It is very nearly impossible to
refund an item, and it also messes with our totals when we enter an incorrect number
(i.e. $200 instead of $2.00)
● At the end of 3rd quarter, when alcohol sales end, close down half the registers and
have the banker begin counting drawers. I would even suggest pulling additional
drawers as 4th quarter progresses; you can have one register be cash and 1-2 others
only accept cards.
● At the end of the game, take inventory again.
● At the end of cleanup, collect shirts/aprons and return to the uniform room. Put all visors
in a garbage bag and take with you. Then return your binder and the deposit slips from
the banker to the war room (down the hallway near the uniform room and dispatch)

Banker Notes:
● Go immediately to the vault with your entry slip. Count your money before leaving.
● Don’t put all cash into the drawers. $100 in fives, $100 in ones, and two rolls of quarters
(one opened, one still rolled) is enough to begin. Stash your bank bag under the soda
machines.
● Prepare for the money drop at kickoff; start counting maybe 20-30 minutes prior to
kickoff time. Pull any bills $10 and higher; no coins.
● At the end of 3rd quarter, when alcohol sales end, close down half the registers and
begin counting drawers. I would even suggest pulling additional drawers as 4th quarter
progresses; you can have one register be cash and 1-2 others only accept cards.
● Save all receipts, pink tickets, and any other vouchers.
● Get to the vault as quickly as possible after the game ends. Have all money counted,
and all bills facing the same way smallest to largest.
