Send the stock count to the line manager (by kilo, bag or unit). Turn off all electric equipment, including grill, fryer, bain maries, rice cooker, gravy pot). Clean and organise upstairs fridge. Clean fridge doors. Clean the grill. Clean lids, containers, food trays etc Empty all heat containers etc (rice cookers, gravy pot, bain maries). Clean outside heat holders. (rice cookers, gravy pot, bain maries) Deep clean bain marie. Including change the wa- ter. Every Monday and Friday. Clean & wipe down all surfaces, including under the bain maries, grill, fryer, etc. Soak kidney beans. (1.5kg / half bag). Sweep & Mop the Kiosk floor. Sweep & Mop the Kiosk floor. Including behind the fridge. (Wednesday and Saturday) Clean under the sink. Leave dirty laundry upstairs in the kiosk every Tuesday night. Throw away the rubbish. Leave old/dirty oil upstairs in the kiosk every Sat- urday night. Clock Out.
