C Restaurants must follow strict food safety rules. If restaurants don’t have the right hygiene procedures, customers
could get very ill from food poisoning. Inspectors could also shut down a restaurant if it doesn’t follow the
D correct food safety guidelines. Here are five important hygiene tips you should follow if you work in a restaurant.

E WASH YOUR HANDS BEFORE AND AFTER TOUCHING FOOD


5 One cause of food poisoning is germs that spread from your hands. Every day, your hands are exposed to all types
F of germs, which can be passed on to any food you handle. To prevent this, wash your hands regularly.
Some foods, such as raw meat, fish, and poultry, can also contaminate other foods. These foods have lots of
G germs, which could be passed on to any other food you touch. Always scrub your hands with warm, soapy water
after handling these foods.

10 KEEP ALL WORK AREAS AND EQUIPMENT CLEAN


Besides washing your hands, you should wash all work surfaces.

up any spills quickly. Sweep and clean floors with disinfectant twice
e a day. Never thaw meat on a counter – keep it in the refrigerator.

Keep food, such as raw meat, fish, or chicken, away from other
foods. Put these items in containers so they don’t drip and

chopped vegetables, that has been left at room temperature longer than two hours.

WASH FRUITS AND VEGETABLES


Fresh produce, such as lettuce, tomatoes, and carrots, may have germs on its skin. Even peeled vegetables can
have germs on the surface, too. To avoid the risk of spreading these germs, wash them well with cold water.
25 COOK FOOD TO THE RIGHT TEMPERATURE
Cooking food will kill most germs. However, the food needs to be cooked to the correct temperature. When
cooking meat, fish, or poultry, use a meat thermometer to make sure it is cooked thoroughly.
By following these tips, you can make sure that your kitchen stays safe and that customers will enjoy their meals.
Finally, if you’re unsure about these tips, talk them over with your manager.
