Introduction

A homogeneous mixture is a solution and a heterogeneous mixture is a


suspension. A colloidal dispersion or colloid has properties which are
intermediate between those of solution and suspension.
Colloidal dispersions are composed of two parts: the dispersed phase and
the dispersing medium. The particles suspended in the colloid make up the
dispersed phase. The solvent-like material in which the particles are suspended
is the dispersing medium. A solid, liquid or gas can serve as a dispersing
medium.
In this experiment, you will prepare a colloidal dispersion.

Objective

To prepare a colloidal dispersion – ice cream.

Materials

blender mixing spoon


shallow ice cream tray with cover measuring spoon
measuring cup mixing bowl or container

1 tbsp cold water ½ cup scalded milk


1 tbsp unflavored gelatin ¼ cup sugar
1/8 tsp salt 1 tbsp vanilla extract (for flavoring)
2 egg yolks 1 cup heavy cream, whipped

Procedure

1. Put water into blender container.


2. Sprinkle on gelatin.
3. Add salt, egg yolks and milk.
4. Cover, blend at low speed until smooth.
5. Add sugar and vanilla (or any other chosen flavor).
6. Cover, blend at medium speed until smooth.
7. Fold gelatin mixture gently into whipped cream.
8. Pour into shallow ice cream tray, cover and freeze until firm.
