CHAPTER I

THE PROBLEM

Introduction

As time goes on the objective of each students nowadays is to improve


their learning about nutritional requirements so that they can become healthy and
participative in school. Their knowledge about nutritional requirements has a great
impact on their performance and health on daily lives. Students need to strive hard
and give their best and effort to maintain a healthy lifestyle because they are the
beneficiaries of their own work.

High School students are at risk for having a poor dietary choice that
can lead to bad eating habits or eating disorder. Eating habits refers to why and how
people eat, which and what foods they eat, with whom they eat with, and how people
eat, which and how they obtain, store and discard food. All humans eat to survive.
There are different types of eating habits and schools and studies can affect the way
of how high school students eat.

Nutrition may be less confusing when reduced to its fundamental


building blocks. Foods can be broken into five distinct food groups, each serving a
distinct purpose. Understanding how these food groups affect your body can help
you determine what, and how much, you should eat.

Majority of the time of the students has focuses only on the activities and the
performance tasks that’s why a lot of students didn’t attain the health and nutrition
way of eating. That’s why different kind of diseases has appeared. Despite the
strong emphasis on meeting nutritional requirements every day to achieve optimal
health, many students tend to care less about or neglect their nutritional
requirements. Many factors come in to play as they transition to student life. Many of
them leave the parental home, adapt to social and environmental changes,
acknowledge new financial responsibilities, build different social networks, and
experience different time availability. Yet, meeting nutritional requirements remains
important in achieving one’s health. It is very beneficial for college students to
formulize good eating habits that lead them to obtaining health and optimal function.

The purpose of this quantitative research is to search and investigate student


from Mataasnakahoy Senior High School if they had a good or bad eating habits. We
will also ask them if their eating habits causes an increase or decrease to their
knowledge about nutritional health.

The research will answer what does eating habits do in our daily performances, how
does eating habits affect the nutritional requirement or Senior High School students
and what is the real reason why they become obsessed with that eating habits. For
overall meeting one’s nutritional requirement were very important in one self. This
research will be very beneficial to students to formulize good eating habits that lead
them to obtaining health and optimal function

Statement of the Problem

The main purpose of this study is to determine their knowledge about


nutritional requirements and what eating habits do they have as a student. This
study seeks to answer the following questions.

1. What is the importance of eating habits to the students?


2. What is the knowledge of the students about nutritional requirements of
food in Mataasnakahoy Senior High School?
3. Why is it important for the student to eat healthy foods?
4. What is the possible output to be manifested in the study?

Background of the Study

A fear for many students who transition from high school to university life may
include gaining and dreaded “freshman 15” Through too much consumption of
unhealthy foods. However, a recent study published in the journal of nutrition
education and behavior found over half of students had high levels of food insecurity”
meaning they had limited or uncertain availability to healthy foods due to high costs,
leading to a higher risk of malnutrition.

As individual transition from home to student life, nutritional knowledge


becomes more important because food option change and dietary challenges arise.
Traditional on campus students use dining facilities to eat meals. Students have the
liberty of choosing a variety of healthy and unhealthy food options. O brown, noted
those attending college can expect to gaining pounds in the first 2 years of college. If
students are unaware of the nutritional requirements to maintain a healthy body
weight, they can make poor nutritional decisions, which can cause poor weight
management and health problems.
Individuals entering school are beginning to live independently. Student’s
physical activity and eating habits usually shape or change during these years.
Establishing good eating habits during this time is critical, because these behaviors

often continue through adulthood and can be very difficult to change once they are
established. O brown et al. stated, “overweight students are more likely to become
overweight adults and are at a higher risk for diet related chronic diseases such as
cardiovascular disease. Type 2 diabetes, some cancers, and hypertension”.
Educational inventions need to be addressed to help college students meet their
daily nutritional requirements

Significance of the Study

This study focused on determining Students Eating Habits and Knowledge of


Nutritional Requirements. The researcher believes that the findings of this study will
be a great help to the following:

STUDENTS- They will have an idea on improving their eating habits techniques.
They can change their way of how they eat. And they can change their perception
about nutritional requirements and knowledge.
PARENTS- They will have an idea on what meal plan or how does their child will get
a healthy lifestyle. They can also have the knowledge to prohibit what their child ate.
And also, as parents this research can be their guide to achieve healthy lifestyle.
TEACHERS- They will have an idea on setting limitations about the food that
students eat especially in school. This study will also allow the teachers to add up
the information present in the study to their lesson plans and strategies. This will also
serve as their guide to proper health education, especially to those teachers who are
major in health education.
CANTEEN STAFF- They will have an idea on what to prohibit and what to sell in
school canteen. They can also have the knowledge to adequate nutrition which gives
students and staff a high energy level and can prevent diseases.
SCHOOL- They will have an idea of implementing rules to students in what to eat or
not. It is also important to them because as individuals faces transition to school life
nutritional knowledge become more important because food option change and
dietary challenges arises.
FUTURE RESEARCHER- They will gain ideas about Nutritional Requirements and it
will serve as their guide if they meet a research that is connected to this research.
This study will also benefit them to be their guide.

Scope, Limitations and Delimitations


The main focus of this study is to determine the Students Eating Habits and
Knowledge of Nutritional Requirements. It also considers the profile of the
respondents of researcher. The respondents of the researcher are the students from
Mataasnakahoy Senior High School Year 2019-2020. The researcher will choose
students from Grade 11 and 12 of Science Technology Engineering and
Mathematics (STEM), Grade 11 and 12 of Humanities and Social Sciences
(HUMSS), Grade 11 and 12 of Accountancy and Business Management (ABM) and
Grade 11 and 12 of Technical Vocational Livelihood (TVL).
Also, the study was limited only on the students of Mataasnkahoy Senior High
School. This study will focus only on the eating habits and the nutritional status of
Mataasnakahoy Senior High School. the study aims to identify the eating habits of
the students like how often they eat junkfoods in a day or too much eating unhealthy
snacks that can affect their nutritional status that can cause malnutrition or obesity.
The study is delimited to the Students Eating Habits. It is only limited in the
students of Mataasnakahoy Senior High School and not for other schools. This
presents the coverage of the research in terms of location wherein it is conducted in
Mataasnakahoy Senior High School only. The respondents where only delimited only
in 220 students with different strand (TVLE, HUMSS, ABM, STEM). And the potential
weaknesses or problems with the study identified by the researcher.

REVIEW OF RELATED STUDIES

This chapter presents several literary readings and citations which contribute
to the classification of vague ideas with regards to the subject of the study and also
discusses the related literature that focuses on Students Eating Habits and
Knowledge of Nutritional Health Requirements.
Related Literature

It is crucial to meet daily nutritional requirements for one’s body to function


properly and to maintain one’s health to the optimal level. According to Whales et al.,
Most nutritional values such as protein, energy, carbohydrates, fats and most
minerals can be obtained by food sources. However, some individuals take dietary
supplements on a daily basis to ensure their nutrition level. The current college-aged
group should have had education on nutrition back in elementary school via the
Food Pyramid. Also, since 2011, people have had access to MyPlate, which is a
visual representation of nutrition requirements. Each nutrient plays an important role
in establishing health, metabolism, and proper function of the body
It is inevitable that students face a new environment for meal preparation,
planning, and eating as they transition to their student life. Even though many
students are aware of the importance of meeting nutritional values, their knowledge
and attitude might hinder them from changing their behavior. Many other factors
come in to play in their decision-making, however, the college students’ knowledge
on nutrition does not always lead to healthy food choices. Stockton and Baker
discovered college students do understand that consuming fast food can lead to
disease; however, their knowledge was not a factor that influenced their food
choices.
According to Doctor Millers The study found that the more servings of
white rice a person eats per day, the greater their risk for developing type 2 diabetes,
the form of diabetes most closely linked to obesity. White rice ranks high on the
glycemic index, which means it can cause a sudden spike in blood sugar levels
Interestingly, according to Stockton and Baker (2004) found that students did
not think the harm from fast food was related to calories but rather harmful chemicals
and additives. The main concern the students had was not the number of calories
they were taking, but the additives to their food. Also, the male students consumed
more fast food than female students. Students thought that hamburgers were not
harmful to their health

According to Mamofuku Ando, Though instant ramen noodles provide iron, B


vitamins and manganese, they lack fiber, protein and other crucial vitamins and
minerals. Additionally, their MSG, TBHQ and high sodium contents may negatively
affect health, such as by increasing your risk of heart disease, stomach cancer and
metabolic syndrome.
According to Group Diabetes Org Being active includes all the ways you move
your body and decrease the time you spend sitting. If you have diabetes, it can also
help keep your blood glucose closer to ideal target levels and reduce or prevent
health issues now and in the future. Being active is an important part of staying
healthy.
Brown (2003) et al. conducted an experiment in which they implemented
interventions on vending machine sales on a university campus. They stated that
many students tended to select food according to convenience, taste, time, and
pricerather than nutritional values. Many students tended to choose quick and tasty
options, which were usually available through vending machines

Barnes et al. surveyed 264 college freshmen between the ages of 18 and 20
years can also suffer in osteoporosis Through this survey, they found little evidence
of the effect of parenting style on eating habits in a group of student. About 44%
reported that they had the same eating practice as they did before coming to school.
The researchers concluded that parenting style did not affect the eating habits of
students as much as it does in the eating habit of children and youth .

According to Das and Evens they surveyed 45 first-year students who were
recruited using a cross-sectional method. They found that the reasons for weight
gain among first-year students were the changes in the social and physical
environments, such as dietary intake including alcohol use, physical activity, stress,
and sleep. They discovered that men and women reported different types of barriers
for maintaining health. Men’s perceived barriers were limited access to healthier
foods and gym supplies, not enough time for physical activity, large work overload,
and lack of support from family and friends. On the other hand, women reported lack
of time to exercise or eat healthy, inability to manage time, stress from different
environments, and failure to prioritize weight management as their perceived barriers

According to Miller et al. conducted a survey on the effectiveness of a health


promotion smartphone application for students. The researchers noted that many
undergraduate students had less than optimal health nor participated in healthy
behaviors on a regular basis. They discovered that college students believed the
application was beneficial and helpful in that it promoted healthy behaviors and
raised awareness

Many colleges in the United States provide nutrition-related courses for their
students. Lockwood and Wohl (2008) studied the effectiveness of a lifetime wellness
course on changing students’ global self-efficacy, physical self-efficacy, and wellness
behavior. The participants reported that the 15-week course had a significant impact
on their behavior changes. More physical activity and exercise were initiated. Also,
the students’ food choices were more nutritious and healthier after the course
According to the college student’s knowledge it is inevitable that college
students face a new environment for meal preparation planning and eating as they
transition to their college life. Even though many college-aged students are aware of
the importance of meeting nutritional values, their knowledge and attitude might
hinder them from changing their behavior.
Many other factors came into play in their decision-making however, the
college student’s knowledge on nutrition does not always head to healthy food

Boucher et al. investigated an intervention to promote the consumption of
fruits and vegetables among young adults in junior college. Consuming fruits and
vegetables is one of the important healthy behaviors to achieve one’s optimal
physical function. The researchers found that the intervention increased the number
of college students eating at least five servings of fruits and vegetables. They
emphasized the importance of developing interventions tailored to college students
to promote healthy behaviors.
Similar results were shown in another recent study. Texting has become one
of the common communication tools in college-aged population. Brown et al. used
text messaging in their study to provide nutrition education and inform better food
choices in college students. They found out that college students had better
understanding of nutrition and increased their fruit and vegetable consumption.
Furthermore, text messaging appeared to be an effective education tool to enhance
nutrition related knowledge and encourage healthy behaviors in college students 
The researchers in the reviewed studies supported and demonstrated
evidence for nutritional requirements, student’s eating habits, knowledge, weight
management, barriers, healthy behaviors, and education. Many research based
articles support that there is a need to investigate students’ eating habits and
knowledge of nutritional requirements for health. There is a lack of knowledge in
nutritional values among students. Some students develop poor eating habits and
tend to select food according to convenience, taste, time, and price available to them
rather than their nutritional values Therefore, many students struggle managing their
weight as they gain more weight each year.

Definition of Terms

For the purpose of gaining more understanding in this study, the following
terms were defined conceptually. These is essential to ensure a common
understanding of Key Concepts and terminology that is shared between authors and
readers. These terms were clearly defined according to the unfamiliar words present
in the research.

BEHAVIOR- The way in which one acts or conducts oneself, especially toward
others.

CONSUMPTION- In economics, the use of goods and services by


households. Consumption is distinct from consumption expenditure, which is the
purchase of goods and services for use by households.

CONVENIENCE- The state of being able to proceed with something with little effort
or difficulty.

EATING DISORDER- Eating Disorders describe illnesses that are characterized by


irregular eating habits and severe distress or concern about body weight or shape.

EATING HABITS- Refers to why and how people eat, which foods they eat, and with
whom they eat, as well as the ways people obtain, store, use, and discard food.
Individual, social, cultural, religious, economic, environmental, and political factors all
influence people's eating habits

FAST FOOD- Fast food is a type of mass-produced food designed for commercial


resale and with a strong priority placed on "speed of service" versus other relevant
factors involved in culinary science.

HEALTH- Refers to a state of complete emotional and physical well-


being. ... Health can be defined as physical, mental, and social wellbeing, and as a
resource for living a full life. It refers not only to the absence of disease

INEVITABLE- Certain to happen; unavoidable; Incapable of being avoided or


evaded and it means sure to happen

KNOWLEDGE- Facts, information, and skills acquired by a person through


experience or education; the theoretical or practical understanding of a subject.

NUTRITION- Nutrition is the science that interprets the nutrients and other
substances in food in relation to maintenance, growth, reproduction, health and
disease of an organism. It includes food intake, absorption, assimilation,
biosynthesis, catabolism and excretion

PHYSICAL ACTIVITY- Is defined as any bodily movement produced by skeletal


muscles that requires energy expenditure. Physical activity encompasses
all activities, at any intensity, performed during any time of day or night. It includes
exercise and incidental activity integrated into daily activity.

PRODUCTS-  Is an object or system made available for consumer use; it is anything


that can be offered to a market to satisfy the desire or need of a customer.

REQUIREMENTS- A thing that is needed or wanted; something that is needed or


must be done that is necessary for something else to happen or be done

STUDENTS- a person who goes to school and is learning something. Students can


be children, teenagers, or adults who are going to school, but it may also be other
people who are learning, such as in college or university. A younger student is often
called a pupil.

The conceptual framework shows the process where in the independent


variable which are students eating habits and knowledge of nutritional requirements
affect the dependent variable which is Service Quality, Price and Ambiance in eating
habits. Also, this research uses different methods such as correlation, regression
which shows the relationship between the independent and dependent variable as
well as to show the research hypothesis.

H1- The students know the importance of good eating habits.

H2- The students didn’t know the importance of good eating habits.

CHAPTER III
RESEARCH METHODOLOGY
This chapter shows the instrument and methods in gathering data as well as
the number of the respondents who participated in the research. Research
Methodology is used by the researchers to collect, analyze and interpret the answer
for hypothesis and questions to a more systematic and structural way.

Research Method and Procedure


This research was conducted through information gathering. The researchers
formulated a questionnaire that deals with the Student Eating Habit and knowledge
of Nutritional Requirement. Then the researchers interpreted and analyzed the
results based on the answers given by the respondents. This research was
conducted for us to know and have some idea of Student Eating Habit and
knowledge of Nutritional Requirement.

Research Design
This study focuses on Student Eating Habit and knowledge of Nutritional
Requirement: a case in Mataasnakahoy Senior High School. the researcher used
quantitative research method. The researcher gathers information to know the
Student Eating Habit and knowledge of Nutritional Requirement.

Subject of the Study


To show the validity of this research we need respondents for us to make it
more reliable. The researchers chose to conduct a survey questionnaire to the
students of Mataasnakahoy Senior High School.

Data Gathering Procedure

The researcher had allotted vigorous time, effort and cooperation in


developing their questionnaire so as to serve its intended respondents the survey
was created using suitable questions, modified from related research. And individual
questions formed by the researchers. The survey was comprised of 3 main parts
divided into different sub parts which were related to the participants perception
regarding the nutritional requirement of the students.

Distribution of the Questionnaire- The researchers created a self-made


question that is suitable to the topic and as soon as the questionnaires are
reproduced, the distribution of the questionnaires to the respondents happen.

Validation- The questionnaire were given to the respondents and the


researchers make sure that the respondents were given enough time to answer the
questions.

Administration- The questionnaire were distributed to 220 respondents from


the students of Mataasnakahoy Senior High School.

Scoring Response- The score of each item has a corresponding weight value
with three from the highest and one as the lowest.

The Instrument
The researchers conducted a self – administered questionnaire that was used
in conducting a survey on the respondents. Each question was composed ten sub
question to specify the necessary information. It served as the main instrument in
gathering data for it depicts the answers of the respondents.
Frequency- the method used to depict the number of respondents response on the
questionnaires and bring up the result.
Percentage- this is used to tally the Student Eating Habit and knowledge of
Nutritional Requirement
Weighted Mean- this is used to know and reflect the relative importance of each
number that is being averaged.

Ranking- this is used to know what item comes first and what item comes last.

Statistical Treatment of Data

After the researcher conduct a survey to the students from Grade 11 and 12
of Science Technology Engineering and Mathematics (STEM), Grade 11 and 12 of
Humanities and Social Sciences (HUMSS), Grade 11 and 12 of Accountancy and
Business Management (ABM) and Grade 11 and 12 of Technical Vocational
Livelihood (TVL). The researcher will formulate the generalization of the study
through the guide of the answers of the students and after tallying the answers the
researcher will get the percentage of it.
Responses to the questionnaires by Senior High School students were
statistically analyzed with the data requirements of the study. Student were
statistically analyzed with the instrument of the study. Descriptive statistic such as
Frequency Count, Mean, Percentage and Ranking are considered to know if there is
correlation between the independent and dependent variables.

This chapter presents the presentation, analysis and interpretation of data on


the students eating habit and knowledge in the nutritional requirement of the
students in Mataasnakahoy Senior High School. this chapter includes the answer in
the question stated in the statement of the problem

The table illustrated the demographic profile of the students of


Mataasnakahoy Senior High School with the use of percentage and frequency.

Based on the data and information gathered by the researcher, the item that
ranks first who got a mean of 3.58 with the verbal interpretation of very important is
the fifth question that states importance of eating habits can prevent you from early
death. Eating healthy foods can prevent you from early death. A major study has
found that unhealthful eating is responsible for more deaths worldwide than any
other risk factor, including smoking. Healthy diets boost "good" cholesterol (high-
density lipoprotein) and decrease unhealthy triglycerides. This directly impacts risk of
heart disease, stroke, metabolic syndrome, diabetes and high blood pressure by
helping your blood flow smoothly. It is connected with the study of Das and Evens.
They believed that students often do things like intake of alcohol, physical activities
and stress. This is connected to the study of Das and Evens that stress, intake of
alcohol and other bad physical activities can lead you to early death

Next is the number eight item that got the second rank which the respondents
have also agreed with a mean of 3.37 and with the verbal interpretation of important
and which also get as the second rank. It can help you to have faster metabolism.
Hypermetabolism is the state of increased rate of metabolic activity and is
characterized by an abnormal increase in the body's basal metabolic rate.
Hypermetabolism is accompanied by a variety of internal and external symptoms,
most notably extreme weight loss, and can also be a symptom in itself. Body size,
age, gender and genes all play a role in the speed of your metabolism. Muscle cells
require more energy to maintain than fat cells, so people with more muscle than fat
tend to have a faster metabolism. As we get older, we tend to gain fat and lose
muscle. It is connected to the study of Das and Evens. They found out that the
reasons for weight gain among students were connected with the importance of
eating habits. It is also stated again here that it is also caused by intakes of alcohol.

Then the item that ranked third with the mean of 3.32 and has the verbal
interpretation of important were item number 3 it can help you gain more height and
strong bones. Building strong bones should start in childhood, and it's something to
work on throughout your life. Bones are made up of collagen and calcium. However,
they're far from the lifeless skeletons that appear every Halloween. Your body is
constantly breaking down and renewing your bones through remodeling. Like
remodeling a house, your body breaks down and discards old bone tissue and

good eating habits can give you strong bones and can prevent you from early
crusting of bones in the body

Lastly, the item that ranks last were item number 4 with a mean of 2.85 with
the verbal interpretation of important. It can clean your organ and can make your
stool normal. Many of the students wrongly believe that having regular bowel
movements means you move your bowels every day. However everyone’s bowels
are unique to them, and what’s normal for one person may not be normal for

This study focuses on the students eating habits and knowledge about the
nutritional requirements wherein the respondents were from that student of
Mtaasnakahoy Senior High School. In Chapter 1 the researchers have discussed

more reliable and helpful. The researcher also included the definition of terms where
in these terms were the selected unfamiliar words that has meaning so that readers
can understand the RRL of the study. Lastly, the researchers created the paradigm
of the study or the conceptual framework and the hypothesis of each question.

In Chapter 3 it shows the instrument and methods used by the researchers to


easily interpret and rank the answers given by the respondents. In this section you

they believe that it can prevent you from early death. And some of the students

2. In the assessment of the respondents on their knowledge about nutritional


requirements of food in Mataasnakahoy Senior High School majority of the
students believed that water can make skin hydrated. While some of them
believe that instant noodles has wax.
3. In the assessment of the respondents on the importance of eating healthy foods
to the student. Majority of them believed that eating healthy foods can help to
become energized and can help you perform happily. While some of them
believe that eating healthy food can help you lose weight.

Recommendation

Based on the conclusion, the following are hereby suggested:

1. School canteens should sell healthy food and items. Teachers school staffs
should check if the canteen were selling unhealthy foods. Same as for outside
the school. The barangay captain and councilors should monitor if vendors were
selling unhealthy goods and should prohibit them from selling.

2. Canteens should sell water than to sell juices, soft drinks and drinks from
vending machine. School should also prohibit them from selling instant noodles
because a lot of students didn’t know that noodles have wax. Wax or not it is not
healthy to eat instant and processed foods.

3. School staff and canteen staff should post a poster in canteen/cafeteria about
what to eat or not. They should also post some nutritional benefits of eating
healthy foods so that the student will be engage in eating healthy food and not
to eat junk food.

4. The researchers will create an informative poster about the nutritional


requirement of the student and the created poster will be posted in the school
canteen.
