Assistant Manager

Restaurant Manager

Purpose:
Responsible for assisting the Manager in maximising the restaurants profit contribution by
achieving planned sales, controlling costs, achieving operating and customer service
standards through the effective management and development of staff.

Principle Accountabilities:
‰ In the Managers absence is able to control and be responsible for the total running
of the restaurant.
‰ Assist the Manager in deciding methods of operations to improve sales, profitability
and restaurant / company standards.
‰ Staff development and motivation.

Company Standards:
‰ Assist with the maintenance of the restaurant building, product quality and service
standard to achieve and exceed laid down minimum standards.
‰ Ensure that customer relations are maintained and that the highest level of
hospitality exists at all times.
‰ Handle customer complaints.
‰ Joint responsibility with the Manager for all statutory regulations being met within
the restaurant.
‰ Ensure compliance with all Company policies, rules and guidelines provided within
the restaurant manuals.

Financial Controls:
‰ Liase with the Manager in order to achieve or exceed profitability targets via:
o Management of cost of sales against targets / plan
o Management of cost of labour against targets / plan / hours
o Management of controllable´s against target / plan

Training:
‰ Maintain acceptable levels of staff turnover as agreed with the Manager.
‰ Recruit high-calibre staff as required.
‰ Maintain a positive and challenging work environment.
‰ Conduct new staff training plan to the required standard as laid down in the training
manuals.
‰ Assist with the training / retraining of staff to maintain required customer service
levels and product quality adherence, as laid down in the standards of operations.
‰ Assist in conducting and preparation of staff appraisals.
‰ Follow up and provide feedback to staff on their performances and carry out
corrective training when required.
‰ Maintain staff files.
‰ Conduct individual training sessions.
‰ Conduct group training sessions.

Supervision:
‰ Lead by example. Be seen by the customers and staff as a person in charge.
‰ Look for the positives in staff performances and recognise their actions.
‰ Plan, set shift objectives for both the staff and yourself.
‰ Supervise all staff ensuring prompt friendly customer service.
‰ Ensure all ingredients and products are prepared according to specifications.
‰ Allocate duties to staff and direct activities whilst on shift
‰ Ensure clear communication channels exist between management and staff.
‰ Ensure all restaurant rules and regulations are adhered to at all times.

Marketing and Public Relations:


‰ Ensure that marketing promotions are carried out according to instructions / brief.
‰ Assist the manager in implementation of all local marketing programmes in order to
drive sales.
‰ Maintain community relations and handle sensitive Public Relations issues
correctly.
‰ Develop and implement at least 2 marketing ideas a year to drive sales.

Administration:
‰ Assist the manager in ensuring accurate paperwork is submitted.
‰ Ensure all shift paperwork is completed correctly and neatly.
‰ Ensure all stocks of daily paperwork; banking slips, printer ribbons, all printers and
credit card papers are available.
‰ Ensure adherence to Company Banking and security procedures and policies.
‰ Ordering, receiving, storing, handling of all products to be dealt with according to
laid down procedures.

Maintains Physical Plant:


‰ Ensure all front of house and back of house areas are clean and all equipment is
maintained in good working order.
‰ Ensure all company assets are maintained and accounted for.
‰ Ensure all hazards are reported and all necessary actions taken to prevent injury.

Customer Service:
‰ Ensure prompt, friendly and courteous customer service.
‰ Plan shifts to ensure customer service is at its peak.
‰ Actively communicate with customers to monitor service and product quality.
‰ Monitor delivery times of products and take action if appropriate.
‰ Continuously monitor the restaurant environment and make necessary adjustments.
‰ Recognise and deal effectively with all customer concerns.
‰ Recognise and deal effectively with special customer types and needs.
‰ Provide feedback to the Manager on staffing needs to meet projected sales.

‰ Keep up to date with local trends and competition.
‰ Carry out or assist with projects as required.
