From Seed to Salad

Imagine that you could combine literally any taste, colour and shape in
a new leaf to make the most delicious salad ever. It may sound like a
fantasy, but it is in fact possible to ‘create’ leaves like this by combining
desired traits. At Rijk Zwaan, we call this ‘breeding’: we mirror the natural
process, selecting the best plants and then embarking on the lengthy
and often challenging task of crossing them to develop new varieties.

1 Selection
We evaluate each plant regarding the desired traits. In the case of a visual trait, this
simply means assessing a plant’s appearance – such as leaf shape, colour, head size,
etc. But resistances against diseases or the potential for a long shelf life need to be
tested. Is the new variety intended for the fresh market or specifically for process-
ing? Rijk Zwaan has invested in its own processing facility to simulate the prepara-
tion, washing and drying steps that leaves are subject to in a fresh cut factory so we
can be sure newly developed leaves can withstand being processed, if required.

2 Trialling
Once a variety has been selected that
combines the desired traits, it can be
trialled at any of several locations
around the world; the Rijk Zwaan
demo fields enable growers, proces-
sors, traders and retailers to see, feel
and taste a wide range of new varie-
ties as well as exchange experiences
and ideas for future developments.

3 Commercial production
In the final stage of the process, Rijk Zwaan produces large quantities of

One-cut-ready
seeds of the new variety. These are then delivered to growers around the
world so that they can grow the new leaf with the desired combination
of traits. A leaf that, when harvested, will offer improved yield, be more
suitable for processing and hold lasting appeal for consumers thanks to
its appearance and taste. That’s how we get from seed to salad!

Salanova® beauties
Salanova lettuce has many leaves of babyleaf
dimensions that are characterised by a good
shelf life, a nice flavour and a high percentage
of usable product. This makes Salanova a very
interesting product for the processing industry.

With the stagnating growth in the market for fresh

cut salads, product development is becoming
increasingly important. Consumers want variation
in taste, shape and colour as well as softer leaf
textures. Salanova butter and Salanova oakleaf
meet all these demands and offer consumers an
entirely new quality of lettuce. The large number
of uniform, small leaves per head make them very
efficient for processing companies. The core of
Salanova lettuce is easily removed by cutting it
out with a circular movement. What remains are
lovely, tender leaves which are unmatched by
other lettuce types.

Salanova butter comes in a green version and with a very pretty
colour contrast on the red butter: combining yellow, green and red
in one leaf. Salanova oakleaf has very nicely-lobbed leaves and
comes in a fresh, (dark) green or warm red colour. Its small,
3D-shaped leaves have a pleasant nutty flavour. Because of the
whole leaves and 3D shape, Salanova has extra in-bag appeal.

Dark green butter Pascal RZ
Rijk Zwaan introduces the first
‘dark’ green Salanova butter lettuce:
Pascal RZ (79-110 RZ). A real feast
for the eyes as the leaves of this new
Salanova variety excel in colour.
The beautiful dark green slowly
changes in gradients of light green
to a blond green. And because

Salanova® beauties
Pascal RZ is strong against yellow
edges and haloing, its colour will
remain nice and green on the field.
Another advantage of this Salanova

One-cut-ready
It’s no real surprise that one-cut-ready machine
harvested leaves continue to gain in popularity
around the world since it offers some very
important advantages. And now, thanks to the
introduction of new varieties, the possibilities
just got even more interesting.

One of the most important reasons for choosing

mechanical harvesting is the fact that it reduces
the need for labour, which is becoming increa-
singly scarce, and hence expensive, in more and
more countries. As well as reducing the number
of workers required, mechanical harvesting can
also improve processing efficiency and result in a
higher-quality end product.

Multi-purpose lettuce
Iceberg and cos remain the most important bagged
salad ingredients in the world, while smooth endive
is also extremely popular in certain countries.
What they all have in common is a strong, crisp
leaf texture, a nice green colour and large heads
which produce an abundance of usable leaves after
cutting. Rijk Zwaan asked itself what could be done
to improve these primary lettuce types, which are in
effect ‘commodities’, so that consumers could gain
even more enjoyment from their favourite salads.
Cos lettuce already comes in a wide range of shapes
and sizes to suit almost any palate: baby-size little
gem, short and dense small cos, dark and upright
midi, and various larger types. However, Open
Heart Cos and Crunchy Cos are true innovations
in this range, both bringing interesting characteristics
to the table.

Innovative commodities
Rijk Zwaan breeders set out to combine the best characteristics from the
numerous existing cos varieties to produce a new, multi-purpose cos.
The result was Open Heart Cos, a variety named after one of its most
notable characteristics: its open habit.

The Open Heart Cos lettuce’s open habit makes it ideal for mechanical
harvesting, either as loose leaves or whole heads for further processing.
A single cut above the plant’s growing point reveals lots of strong,
uniformly narrow leaves with solid veins. Practical trials have
demonstrated that Open Heart Cos generates approximately 25% more
usable product than a traditional cos lettuce.

Different cultures
Every country has its own culture with its own eating
habits – dishes that families have been preparing for
generations, based on products typical for that coun-
try or region. This is also reflected in the market for
fresh-cut fruit and vegetables, with different types of
produce being sold ‘ready to cook’ or ‘ready to eat’
in different countries. What is common to all coun-
tries, however, is the fact that – driven by the need
to innovate and differentiate as a result of increased
competition – growers, processors and retailers alike
have identified fresh-cut vegetables as a way of of-
fering consumers greater convenience, and hence
generating growth. While the market for fresh-cut
vegetables still demonstrates certain regional diffe-
rences, convenience is clearly emerging as a univer-
sal trend. The result: global consumption of fresh-cut
vegetables is on the up.

Universal convenience
As consumers’ lives become increasingly busy, growers, processors,
retailers and foodservice companies are developing new and innovative
ways of setting themselves apart by offering increased convenience.
While it invariably helps consumers to save time, convenience can take
many different forms: packs of pre-chopped, ready-to-use vegetables,
useful or even inspirational mixes of ingredients in the same bag or
the retail fresh-cut market there re-

country. In Italy, for instance, babyleaf is
a popular product, which is why Italian
growers have started to wash the baby

of their beloved corn salad, oak leaf and

market there.

Salads as innovation
The market for prepared salads is
particularly well established in the
USA and the UK, where consumers
enjoy eating salads but do not like the
chopping, rinsing and other preparation
involved. Hence, processors are increas-
ingly offering complete ‘salad kits’,
including croutons, dressings and more.

Let’s snack
Not only the vegetable industry itself stands to
benefit from increasing the amount, and in particu-
larly the number of times, of vegetables consumed
per day, but so too does the wider food industry and
in fact society as a whole. Vegetable snacks are no
longer a new idea, and several products are already
available which promote vegetables as an alternative
to confectionery by selling them as impulse buys at
checkouts. However, there are plenty of other inte-
resting possibilities to explore, such as ready-made
fruit salads which are designed to be eaten as snacks
between meals. Other products can be specifically
developed for children; snack-sized cucumbers or
tomatoes are ideal for inclusion in lunch boxes, for
instance. However, ‘veggie snacks’ can no longer
rely on the novelty factor so they must tick all the
boxes to have a chance of success.

Healthy yet tasty snacking

Needless to say, any snack product should look nice and fresh, enticing
shoppers to purchase and subsequently devour the delicious-looking
produce. However, the actual quality must live up to expectations –
empty promises and a disappointing flavour can soon undo any pro-
gress. That’s why taste research is so important, along with an ongoing
search for improvement in colours, shapes and applications, to create
sustainable growth in the fresh-cut fruit salad segment.
