 The sandwich is the one of the most popular snack in the


Philippines, that’s why there are many restaurants that offers
sandwich in their menu.

new concepts  1. THE STRUCTURE OR THE BASE – it is the part upon which

 THE SECRET TO A GOOD SANDWICH BEGINS WITH A

 The type of bread has a dramatic effect on the finished
product. The quality of the bread may be of more

have bought a week ago, and the other one, is you just
bought and is freshly bake. You will put mayonnaise,
lettuce, tomatoes, ham and cheese on both bread, which

 2. THE MOISTENING AGENT– is meant to bind the sandwich
providing an improvement of both flavor and texture. It acts as the
protective layer between the filling and the structure, preventing
the filling from softening or wetting the bread.
 MOISTENING AGENT-“It’s purpose is to lubricate and bind
the sandwich, it compliments the flavor of other ingredients”
 Moistening agent improves the flavor and texture of the
sandwich. In some cases, it acts as a protective layer
between the filling and the base, to prevent the filling from
becoming too soft or wetting the bread.
 The most commonly use moistening agents are the
mayonnaise, butter, mustard, dips or any appropriate cold
or hot sauce. However, it can also be a relish, salsa, chutney
or some other form of pickled vegetable or fruit.
 3. THE FILLINGS– consists of one or more ingredients that are
stacked, layered or folded within or on the structure to form the
sandwich. The varieties of fillings should be carefully selected. The
filling can be hot or cold and comes in any form of cooked cured
meat, fruits, vegetables, salad or a combination of any of them.
 THE FILLINGS - “It is the main EVENT”
 Once you settle on your choice of bread and spread, the next
decision is what to put on the inside. The varieties of fillings
are endless and should be carefully selected in keeping with
the theme and flavor signatures of the rest of the
components. The filling can be any form of cooked or cured
meat, fish, poultry, vegetable, fruit, and cheese. Include at
least one, but preferably three. The filling can be hot or cold,
and sometimes a combination of both
