Dish Name: - Cold Sesame Noodle Salad

Dumplings 35 (11 plates)

Ingredients:-

For Dumplings(35pcs)

Chicken Mince 500gms

Flour 100gm

Chicken Stock 50ml

Coriander Leaves 30gm Chopped fine

Spring Onion 30gm Chopped fine

Baking Powder 5gm

Egg 1

Garlic 2 Cloves Minced

Pink Salt 2tsp For chicken Mince

Pink Salt 1/2tsp For Stock

For Noodles(Per Plate)

Egg Noodles 75gm cooked. per plate

Sesame Seeds(white) 4gm Roasted until light golden

Cucumber 150gm Julienned without seeds

Spring Onion 2tbsp FIne chop greens

Purple Cabbage 1tbsp julienned

For Dressing (For 280gm)

ACV 1tbsp

Lemon Juice 1 Lemons

Tahini 25ml

Peanuts 15gm Roasted

Spring Onion 1tbsp finely chopped.


Soy Sauce 15ml

Ginger 15gm Fine chopped

Jaggery powder 1tbsp

TSO 15ml

Garlic 5 cloves

For Garnish & Plating(Per Plate)

Sesame Seeds(white) 4gm Roasted until light golden

Cucumber 50gm Julienned without seeds

Spring Onion 1tsp Slant cut

Sesame seeds(black) 4gm Toasted

Purple Cabbage 1tbsp julienned

Method:-

● For Dumplings-

o Season the chicken mince and set aside.


o Beat egg and stock.
o Mix spring onion, coriander & garlic with the chicken.
o Whisk flour and baking powder together.
o Mix the egg+stock with the chicken mince.
o Add flour+baking powder to the mix.Combine, but do not overmix.
o Gently portion the mix into 20g dumplings without squeezing too tightly.
o Store in the freezer.

● For Dressing:-

o Put ginger, garlic, peanuts, lemon juice, jaggery powder, tahini, soy sauce,
TSO, ACV, 200ml water and blend.

● For Noodle:-

o Boil in stock and water.


o Toss 75gm noodles with cucumber(150gm), sesame seeds(white, toasted),
Dressing ( ), purple cabbage, and spring onions.

● For Service :-

o Dumplings

▪ Boil pot of half stock and half water.

▪ Boil dumpling in covered pot for 10 mins, Flip over halfway through.

o Plate noodles with 3 dumplings.


o Garnish with toasted sesame(black and white), spring onion, purple cabbage,
cucumber.

o This is a cold salad. Dressing and noodles should be chilled prior to service.

o Plate in the square black bowl.
