Part 1 (20 marks)

Reading Aloud
Read the following text aloud.

Japanese cuisine

Japan is famous for its cuisine. Most Japanese dishes are small and
delicate. They are also nicely decorated. As Japan is an island
country, seafood is a common ingredient in Japanese cuisine. Rice
and miso soup are the basics in a Japanese meal, while noodles or
udon are also commonly seen.

Japanese use a lot of vinegar and soy sauce in their cooking.

Japanese soy sauce is sweeter and less salty than the Chinese one.
It goes well with sushi.

Japanese people set a very high standard for their food and also the
people who make the dishes. Years of training are needed to
become a sushi chef. The training can take a few or up to twenty
years. Cleanliness, freshness and taste are the keys to good
Japanese food, so the chef’s main duty is to make sure the food is
clean, fresh and tasty.
