Types of Food and Beverage Linen
Meal preparation and food service will not be complete without using a number
of linen. Whenever a diner eats, there will always be fabrics, cloths, and textiles
nearby. A planner and food service personnel ought to know these different
linens needed in serving meals.
Linen includes table coverings and napkins of all types. The
ideal characteristics of table linens are resilient, functional, eye-
catching, cost effective, pliable, and washed with ease. Before
using linens, see if it is clean, free of stains, fragrant, and
wrinkle-free.
Table Cloth is a big sheet of fabric material that is neatly
hemmed intended to cover tables for cleanliness and
decorative purposes. It comes in different shapes (round,
oval, rectangular, square).
Place Mat is a small often rectangular mat on which a
set of dishes knives, forks, etc., for one person are
placed at a table.
Table Runner is a long strip cloth that is put down
on the middle of the table, lengthways to decorate
it and to protect the surface. It is centered on the
table and runs the length of the table.
Table Napkin is a small piece of cloth or paper used during
a meal to clean one’s lips and fingers and to protect one’s
clothes. It is usually square in shape. It is usually used in
fine dining restaurants and hotels, and for table decorations
to look more elegant and classy.
Table Skirting is a way to dress up a table by wrapping
around the edge of a table that adds style and functions to a
room.
The table skirt is a fabric or a paper drape which covers the
front and the sides of the table from the surface down to the
floor to hide the legs of the table and the underneath from plain
sight. Table skirting is traditionally done from scratch. However,
most establishments now commonly use ready-made table skirts
which can be easily attached to a table.

Performance Task - Activity # 3
Preparation of Table Linen
Perform the following procedures. Record your performance using a any video recording device.

1. Check if table is clean and sturdy.


2. Make sure that the tablecloth is folded in a concertina or accordion-like manner.
3. Place the folded tablecloth on the table with its open end facing away from you.
4. Unfold the topmost layer toward your direction.
5. Hold the second and the bottom layer to secure them in place.
6. Let it hang on the edge of the table.
7. Using your thighs, press the unfolded topmost layer to secure it in place.
8. Pull the bottom layer to release the rest of the tablecloth.
9. Adjust the tablecloth to make sure that the overhang falls equally on each side.
10. Place a table runner at the top of the table.
11. Place a placemat.
12. Place the centerpiece of the table.
13. Take a picture the final output.
