Prep Time min / Cook Time Ingredients: 1 cup, water I small onion, chopped 1 bouquet garni 1 teaspoon, lemon juice 1 pound of scallops 8 oz of mushrooms 6 tablespoons butter 4 tablespoons flour Bread crumbs Swiss cheese Salt and pepper to taste min I Yields 6

Method of Preparation: 1. Heat water, onion bouquet garni, and lemon juice in a sauce pan, bring to a boil. Add scallops, cover and simmer on very low heat for about 5 minutes. 2. Remove scallops and add mushroom continue to simmer, then uncover and let cool for 10 minutes. 3. Melt butter in a sauce pan, whisk flour and add 2-3 tablespoons of pouching liquid, over very low heat. Add cream and simmer, stir until thickens. Season with salt and pepper. 4. Add scallops and mushroom and stir. Fill 6 scallop shells with scallop mixture, dust lightly with bread crumbs and cheese. 5. Preheat broiler, broil until mixture bubbles and cheese melts.
