Shu Puff (cream puff)

Ingredients: FOR PASTRY: 3 tbsp. butter 2 tsp. sugar c. water c. flour 1 eggs to 2 eggs Powder sugar for topping FOR CREAM FILLING: 2 tbsp. flour c. sugar 1 c. milk 2 egg yolks 1 tbsp. melted butter

Method of Preparation: Pastry Prep: Preheat oven to 375F. Beat eggs in a bowl. Add butter, sugar, and water in a pan and bring to a boil. Add flour to the butter mixture and stir quickly. Remove from heat. Add eggs slowly to the mixture and mix well. Cover baking sheet with parchment paper. Put dough in pastry bag and squeeze into small mounds (about 8 to 9) on the baking sheet. Bake them in the preheated oven for 30 minutes. Cool the puffs and cut them in halves horizontally.

Cream Filling: 1. Heat milk to almost boiling. Mix egg yolks and sugar in a pan. Add sifted flour to the pan and mix well. Add warm milk gradually to the pan. 2. Place the pan on low heat and stir the mixture constantly until thickened. 3. Remove from heat and add melted butter and stir well. Cool the custard cream. Fill the bottom halves of the puffs with custard cream and place the top halves. Sprinkle with powdered sugar.
