Our Common Goal1

As college students, we dont ever really ask ourselves where our cup
of coffee comes from or the work that is put in every cup you drink. We just
get our typical Dunkin Donuts or Starbucks drinks and go about our lives.
After dedicating our time to the Global Coffee Culture class offered here at
Providence College and traveling to various plantations and co-operatives in
Guatemala, we started to think about these issues through the lens of coffee.

Our goal by creating this Coffee Consumer Guide is to show the


massive amount of effort and work that it takes to get coffee into your cup
everyday. From the planting and growing of the cherry, to the fermentation
process, to the roasting, packaging, and final pour to your cup, there are
many people involved in the coffee industry. We have created this pamphlet
as well in order to close the gap between the farmers who labor over these
beans to the customer going about their day.

Taking the knowledge we obtained in and out of the classroom, this


guide will show off many places within the Providence area that thrive off of
coffee distribution. This list of venues shows the mission statements, prices,
and general appeal for coffee drinkers alike.

Why is it Important?

This is important for the whole Providence College community because


of the direct impact coffee has in all of our lives. Coffee is the second most
traded commodity globally, as well as over 2 billion cups being poured and
consumed on a daily basis.

As college students, coffee can be the life-saver to cramming for a


midterm, the energy to stay focused on a project, or even a delicious
addition when hanging out with friends. This, though, comes at a price for
those involved with the growing and cultivating of the coveted commodity.
Payment for these families and workers across the globe has decreased
tremendously over the past 30 years because of environmental, political,
economical, and social aspects playing major roles in their local
communities. Many families have their children leave school to provide more

income and constantly fear over the threat of losing their homes and food for
survival.

Many of the local coffee shops in Providence, Rhode Island that are
mentioned throughout this pamphlet indicate many different locations that
provide more stability for these families, particularly from Guatemala. The
list of coffee shops showcases these qualities, informing the average college
coffee-drinker into the conscious consumers.

About: To maintain a consistently excellent product, we seek out
direct relationships with farms, creating a dialogue with growers so
they can understand and act on the expectations we have for the
coffee we roast. At the same time, our relationships enable New
Harvest to witness and verify first-hand that the higher prices we pay
for these beans benefits the farmers and their coffee-growing
communities.

We gave New Harvest Coffee and Spirits five stars because of the quality
and uniqueness of their products along with their direct trade mission.
They serve one-of-a-kind alcoholic and non-alcoholic beverages, most of
which are made with coffee. New harvest is a direct trade coffee roaster
in Pawtucket, where its on site caf is also located. Their other caf,
located in Providence, is featured here.

About: 95% of our green (unroasted) coffee comes from Cooperative
Coffees, a green coffee importing cooperative, comprising 23
community-based coffee roasters (including Coffee Exchange) in the
USA and Canada, who are committed to building and supporting fair
and sustainable trade relationships for the benefit of farmers and their
exporting cooperatives, families, and communities.
Mission: Our Mission is to operate a coffee roasting business and
caf that provides our customers and our community, our employees
and our coffee-farming partners, with those sustainable quality of life
elements that a coffee business can provide and affect, from the
quality of their lives to quality in the cup.

Coffee Exchange earned four out of five stars even though it is fair, not
direct, trade. The owner was willing to share their fair trade mission
(which is also thoroughly explained on their website), along with Coffee
Exchanges impressive history. Two brothers co-founded coffee exchange,
and one of them, Bill Fishbein, founded the Coffee Trust. The Trust
empowers Guatemalans from the Ixil region by providing la roya (the
rust) recovery plans, scholarships for higher education, training for
farmers, and economic diversification. Although their coffee is not direct
trade, we learned that the implications of its label is not always
transparent; but, the Fishbeins mission, fair trade or not, is.

Although not indicated in its mission statement, Seven Stars Bakery serves
drip coffee that is direct trade from the Acatenango region of Guatemala.
Their workers have visited this region which would fulfill this direct trade
mission with New Harvest workers. Their espresso coffee is supplied by
New Harvest as well, which is direct trade. Had they emphasized their
direct trade mission as much as they emphasized their dedication to the
local community, they would have earned five out of five stars. While
actions speak louder than words, it important that customers know where
their coffee comes from, especially when it is directly sourced.

About: We're proud of our relationships with our vendors and of the
commitment we've made to support other small business people. Our
coffee is direct trade; the dairy is grass fed, and the pastries
handmade daily by local bakers.

and organic wherever possible.

Rating:

The Shop, located on Wickenden, handily earned five out of five stars. Their
pastries are purchased from local vendors, and their coffee, which cannot be
produced locally, is directly sourced. Further, their dairy is grass fed which
is better for us and the animals that supply our produce. The Shop is an
example of how the ideal coffee shop should operate; their mission is moral
and clear, and they carry it out.

Blue State Coffees words spoke louder than its actions; its mission was
the best we had seen, but it serves fair trade, not direct trade, coffee.
Blue State cares about farmers, baristas, and the community, and makes
this clear in its mission statement. Although the workers at Blue State
Coffee build relationships along the supply chain they do not actually
build direct trade relationships. They do not actually know their
farmers/suppliers like other shops do, and for this reason they earn four
and not five stars.

Small Point Caf earned three out of five stars. Their coffees and teas are
organic, which is a plus. However, their coffee is fair and not direct trade,
and they have no mission statement. Their lack of mission statement or
commitment to directly sourced coffee earned them three stars.

Caf Zog

About: Cafe Zog offers delicious dining and takeout to Providence, RI.
Cafe Zog is a cornerstone in the Providence community and has been
recognized for its outstanding bagels cuisine, excellent service and
friendly staff. Our Bagels restaurant is known for its modern
interpretation of classic dishes and its insistence on only using high
quality fresh ingredients.

For a consumer who is not conscientious about his purchases, Caf Zog is
fine. Its food is fresh and cuisine outstanding, but not direct, or even
fair, trade. They also fail to post a mission statement on their website,
indicating that it likely is not very important to them. It does not claim to
have relationships with the local community or roasters, and it is unclear
where their coffee is supplied from.

About: Chikondi Caf was founded by Gerado Reyes in 2016. He
serves Colombian coffee roasted by Mills Coffee Roasters. Their
mission is to engage [the various coffee lifeline stages] by nurturing
strong partnerships at each stage in the coffee lifeline -- from seeking
out sustainable farms with superior quality Arabicas and ethical
harvests to individually monitoring each roast. While they have a clear
mission that is conscious of the coffee lifeline, they do not mention
roasting fair or direct trade products.
Mission: Deliver a great product and service. Where our costumers
are also our friends. Etregar un buen producto y servicio. Donde
nuestros clientes tambien son nuestros amigos. He also hopes to
make Chikondo Caf a place for local high school students to, feel part
of the community, and realize that they, like him, can reach their
goals as [he] did with [his] cafe.

We gave Chikondi Caf three stars because its coffee is not yet fair
trade. Both Gerardo and his brother Kristhian emigrated here from
Guatemala, and, fueled by their ambitions and work-ethic, created their
own small businesses. Gerardo understands what goes in to each cup
of coffee. Even though his coffee is not yet fair trade, he will likely
serve fair or direct trade coffee when his business is up and running.
Regardless, his mission promotes joining the community through coffee
and he serves coffee from roasters who do too.
