    Thinly sliced smoked salmon with dressed orbost salad, cherry tomatoes &
    wasabi mayonnaise

    Steamed bowl of Isle of Skye mussels


    (I.) with tomato & basil
    (II.) with coconut & ginger
    (III.) with lemongrass & coriander

    Roast supreme of chicken on a belly of garlic mash with light Madeira pan
    juices

    Loch Bracadale crab and basil linguini, tossed in olive oil & garlic with a
    little ginger
