Ingredients used in Tiffin Center Sambhar


• Mixed vegetable - ½ cup.
• Onions chopped - 2 numbers.
• Cumin seeds - ½ tea spoon.
• Mustard seeds - ½ tea spoon.
• Oil - 1 tablespoon.
• Tomatoes chopped - 2 numbers.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 2 springs.
• Compound hing - 1 piece.
• Jaggery - 1 tablespoon.
• Green chilly chopped - 3 numbers.
• Coconut chopped - 1 tablespoon.
• Rice - 1 tablespoon.
• Fenugreek seeds - 1/4 tea spoon.
• Toor daal - 2 tablespoons.
• Channa daal - 2 tablespoons.
• Coriander seeds - 1 tablespoon.
• Pepper corns - 1 tea spoon.
• Whole red chilly - 12 numbers.

• Tamarind juice - ½ cup.


• Salt - to taste.

Method:
Heat oil in a pan add whole red chilly, peppercorns, compound hing, coriander seeds,
channa daal, toor daal, cook this till daal is golden in color.
Add fenugreek seeds, rice, cook this on a slow flame till raw flavor is gone.
Add chopped coconut, green chilly, curry leaves, turmeric powder, tomatoes, cook it for
3 minutes.
Switch off the flame, once the mixture is cool down put it in the blender and make a
paste.
Heat oil in a pan add mustard seeds, cumin seeds, saute it.
Add chopped onions, curry leaves, salt cook this till onions are golden in color and Add
finely chopped vegetables, saute it.
Add masala paste, water, tamarind juice, jaggery, let it boil for 20 to 30 minutes after
that add chopped coriander.

Serve this with idly, dosa and vada.
