Banana Oat and Bran Muffins (Makes 32 mini muffins)

 1 cup oatmeal (or whizz rolled oats in food processor)


 ½ cup flour
 1 teaspoon baking powder
 2 teaspoons ground cinnamon
 1 cup wheat bran

 3 very ripe bananas large, mashed
 1 Tablespoon  golden syrup
 ¼ cup oil eg olive oil
 1 teaspoon vanilla essence or extract
 2 eggs, beaten
 ½ cup natural yoghurt or coconut yoghurt
 1 teaspoon baking soda
 Topping – pumpkin seeds

Heat oven to 200°C and fanbake. Grease 3 mini muffin trays.

Mix oatmeal, flour, baking powder, cinnamon, bran in one bowl.

Mix bananas, golden syrup, oil, vanilla, eggs, yoghurt and baking soda. Whisk
together.

Fold the wet mixture into the dry mixture until mixed. Do not overmix, just
combine.

Spoon the mixture into the prepared muffin tins.

Place 3 pumpkin seeds on each muffin.


Bake for 10-12 minutes or until risen and golden.
