Savoury Scones

INGREDIENTS
2 cups self-raising flour

85g chilled unsalted butter, cubed, plus extra to serve

2 slices ham, finely chopped

2 spring onions, finely chopped

½ C ingredients of choice capsicum, corn, feta, sundried tomatoes, olives

1 cup grated tasty cheese

¾ cup milk, plus extra to brush

METHOD
1. Preheat the oven to 190°C fan-forced. Line a baking tray
2. Sift the flour into a large bowl and rub the butter with your fingertips until it
resembles fine breadcrumbs. Stir in the ham, spring onion, and other
chosen ingredients and ¾ of the tasty cheese and season well with salt and
pepper
3. Add the milk, cutting it into the dry mixture with a bread and butter knife
until just combined - do not overmix.
4. You can either use a cutter to cut them out – make sure you push down
evenly or
5. Place the mixture onto the prepared tray form into a flat round, about
25cm in diameter. Cut into eight wedges, then separate wedges slightly.
Brush the top of the scones with extra milk and sprinkle over the remaining
cheese.
6. Bake for 20 minutes or until golden.
7. Serve warm, spread with extra butter.
