Commercial Operations
Restaurants

• A restaurant may be licensed part of a hotel


operation.
• An independent business entity under individual
ownership and management.
• A chain restaurant that is part of a multi-unit
organization.
Coffee Shop

• Menus are light and simple.


• Food is pre-plated from the kitchen.
• Informal atmosphere inside the coffee shop
with lively piped music.
• Usually operates 24 hours than other
restaurants.
Specialty Restaurant

• The atmosphere and décor are geared to a


particular theme (Cuisine).
• Concentrates on a particular food item or
cuisine.
Grill Room or Rotisserie

• Specializes in grills of different meats, fish and


poultry.
• Décor is distinctly American.
Discotheque

• Meant for dancing to recorded music.


• Features a bar which also offers light meals
and finger picking snacks.
Night Clubs

• Open at night for dinner, dance and live


entertainment.
• Décor is lavish.
Food Bars

• Informal snack bars, kiosks, theater counters,


etc.
• Limited seating places and the service is quick.
Fast Food Restaurants

• Also called QSR - Quick Service Restaurant


• Offers convenience to customers.
• Ready-to-serve meals, value for money meals.
• Fast turnover of customers/diners.
• Dine-In/To go services.
Casual Dining

• Delectable pre-plated meals are served in an


informal atmosphere, yet formal in
presentation.
Food Courts

• Variant to fast food operations brought about


by the emergence of mega malls.
Cafes

• Casual restaurants found in commercial and


entertainment districts.
• Meant to serve only coffee or tea. Now offers
limited snacks and wine.
Bars

• Where liquor is sold and consumed.


Food Service Innovations

• Innovation like drive-thru facilities, home


delivery service and cyber cafes.

• Refers to food programs in factories and


corporate houses.
Hospitals/Nursing Homes

• Focus on providing diet foods to patients.
