Executive Summary
In Mindoro province, Banana is one of the local fruits that can be fermented
and turned into a fruit wine. Bananas are one of the sweetest foods available to most
people and are high in sugar. This sweetness is ideal for winemaking, and with only
a few additions to balance the acidity, it can be made in no time. These characteristics
of the banana contribute to the success of making wine from a banana. Because
bananas are inexpensively offered in the market, they have the potential and
necessity to be used as a source of income for the inhabitants of Mindoro province.
Moreover, bananas are high in vitamins and minerals, and they may help with weight
loss, digestion, and heart health.

Our company BanaWine Mindorohut wants to separate our own product from
other banana wine on the market. We are dedicated to making and selling high-
quality wines at a reasonable price to our clients. We are committed to developing
ideas that will benefit humanity. Making banana wine a popular healthy lifestyle
choice and assisting the poor and needy are two of our goals. Other than this, our
banana wine products can be used as gifts or souvenirs. Offering banana wine to
people of all ages as a healthy beverage. Moreover, our banana wine products will
be marketed as being both healthy and trendy.

Statement of the Problem
• Banana wine quality guarantee period is short, can easily become outdated.
• The transportation of banana wine is not convenient. Because banana wine is a
liquid, also heavier and easy to damage, the load may be more expensive.
• The brand of banana wine is not yet well known.
• There are more affordable fruits than bananas.

Despite the fact that there are more affordable fruits than bananas, wine
fermentation is less expensive than any other type of fruit fermentation since banana
wine fermentation takes a few days to generate better results and bananas are
abundant in vitamins and minerals.

a. This occurs frequently due to the presence of microorganisms that assist in

the completion of the activity. Fermentation also refers to the process of creating
wines, beers, bread, yogurt, and other types of preservers. Fruit wine is one of the
most prevalent types of fermentation that incorporates a range of foods. Yeast plays
a vital role in the winemaking process as well.

b. The carbohydrates inside the fruit are transformed to alcohol through yeast
during in the fermentation process. The amount of oxygen in the must at the start of
fermentation, as well as the temperature and rate of fermentation, are all important
considerations in winemaking. There is a possibility of obstructed fermentation and
the development of several wine faults during this stage, which can extend anywhere
between 5 and 14 days for primary fermentation and possibly additional 5 to 10 days
for secondary fermentation. The end products of the fermentation process in the
production of fruit wine are ethyl alcohol (drinkable alcohol) and carbon dioxide
gas.

4
c. Glycolysis is a process that includes fermentation and winemaking. When
cells seek energy from sugar but are unable to complete cellular respiration due to a
lack of oxygen, they must rely on sugar. There is a shortage of oxygen in this
location. As a result, cellular respiration's participation in wine production is critical
for a successful experiment or preservation.

d. Time, the aging container, and a few key chemical interactions between the
liquid, air, and container are all critical factors in the maturation of an alcoholic
beverage like whiskey. These three factors have an impact on the whisky's character
and flavor profile.
