1. Origin: Origin, source, inception, root mean the point at which something begins
its course or existence. Origin applies to the things or persons from which
something is ultimately derived and often to the causes operating before the
thing itself comes into being.
Versatility is what best describes root crops. They are reliable and
dependable source of food, feed, medicine; an essential raw material for
commercial and industrial products; and most importantly, cash crops among
the farmers.
CASSAVA
One of the famous root crops of all times is Cassava. Cassava (Manihot
esculenta), also known as manioc, tapioca, yuca, and mandioca, is a
domesticated species of tuber, a root crop originally domesticated perhaps as
long ago as 8,000–10,000 years ago, in Southern Brazil and Eastern Bolivia
along the Southwestern border of the Amazon basin, and today, it remains a
staple crop in many developing countries as it is highly protean, nutrient-
packed and energy-dense.
Cassava is today a primary calorie source in tropical regions around the world,
and the sixth most important crop plant worldwide. Cassava is popularly
known in the Philippines as Balanghoy or kamoteng-kahoy, it is utilized mainly
as food, dried chips for feed, and starch, and contributes of about two percent to
gross value-adding in agriculture.
There are two kinds of cassava plants: sweet and bitter. Bitter cassava plants
have a higher level of cyanide, and they have to be washed and crushed well
before they are cooked. This will remove all harmful toxins. Once that has been
done, you can grind the roots of cassava plants into flour to prepare different
kinds of dishes. Sweet cassavas, on the other hand, contain lower levels of
cyanide, and you may eat them as traditional root veggies.
Digestive System-Friendly
Cassava is good for digestive system. It helps in the absorption of toxins
that enter your intestines. In that way, it improves your digestive health
and keeps it chugging along nicely.
Anti-Inflammatory
Every serving of cassava also offers antioxidants including anti-
inflammatory phenolic compounds. It includes many different food
sources of phenolic compounds in your diet that is helpful to provide a
variety of antioxidants that can work together to support short- and long -
term inflammatory-related health processes.
Reduces Blood Pressure
Cassava is exceptionally high in potassium. Potassium lowers blood
pressure levels and can help balance out sodium intake which raises
blood pressure.
While cassava may have some amazing health benefits, it also has some side
effects that you should be aware of. Here are a few of them:
Cassava contains a toxin called Linamarin. when eaten raw, the human
digestive system converts this toxin into cyanide, which can prove to be fatal.
The cassava root rots quickly, which leads to depletion in its nutritional value.
It can also cause fungal and bacterial infections.
The toxic substances in cassava are known to affect the pituitary gland and
impact
the functioning of the liver and kidney.
But don’t let these side effects scare you away! If you peel, clean, and
cook cassava well, you can enjoy its goodness without worrying about
toxins! Cleaning and cooking flushes out all the toxins from cassava and
makes it completely edible.

This local ingredient would cross the horizon of homespun. We had able to
cognize the potential of this delish protean-ingredient that would result to novel
products. In our mind map, we actually have ideations that formed different
prospects and desired products.
A TWIST OF CASSAVA GIST:
1. Cassava Cinnamon Rolls with Cheesecake Filling. - From an ordinary
Cinnamon rolls, it is now upgraded into cassava cinnamon rolls, made with
minced and strips casava, combine the flavor of cheesecake as its filling so in
every bite, there’s a burst of sweetness and saltness that would pop in your
mouth.
2. Cassava Waffle Cheesecake - As you eat this product, you’ll taste an untypical
waffle, because it is not made from typical ingredients, it is now made up of
crashed cassava, and with the filling, it is not made from chocolate ganache or
strawberry syrup, but it’s filled with cheesecake like you never imagined
before.
Cassava is forsooth a protean root crop. Who would have though that it would
turn into something more incredible and amazing products? Albeit we only made
up all of these from envisioning, but we are sanguine to somehow look forward to
