1. Hamburger: I would keep this article but promote it with a formula

2. Caesar Salad: I would change this article for another “healthy” dish like chicken or salmon bowl with rice for a price
and reduce the portion to sell the article at 5.20€

3. Ham sandwich: I would replace the ham sandwich by a hot dog, and sell it for 4€

4. Veggie salad: The veggie salad has a super high cost margin but a below average popularity. As me know that our
public is price sensitive, I would reduce the quantity and lower the price to 4.20.€.

5. Tuna sandwich: Whether it is on-site or take away, the tuna sandwich is a dog item. The contribution margin is at
2.5 and the popularity of the product is very low (105 and 13). The best solution is to replace the item by tuna and
crudité bagel. The price should be around 4€.

6. Parmentier soup: I would take off this article and replace it by a dessert, like a cookie for example and sell the
cookie for 2€

7. French fries: Most popular food article but with a below average, I would keep the same price but maybe reduce
just a bit the portion.

I would also offer a menu with burger + French fries + drink or dessert and the same formula with the salad

Regarding the beverage, the trend shows a product sensitive behaviour from customer.

1. Still water: We need to keep this article

2. Sparkling water: We also need to keep this article

3. Cola: I want to remove this article an replace it by another soda like Ice tea or oasis.

4. Cola Diet: The Cola diet has a contribution margin of 1.4, which is above average 1.38. However, the
popularity, which is 57 for take away and 43 on site, are below popularity average. Because the Cola diet is
a puzzle item and that it lacks of popularity, the product must be promoted.

5. Orange juice: The orange juice is a puzzle item whether it is on site or take away. The contribution margin
is at 1.55, which is higher than average (1.38). The problem is that it does not have great popularity (66 take
away and 41 for onsite), which is lower than popularity average. The price of the item should be lower. I
would sell the orange juice at 1.80€.

6. Apple Juice: I want to remove this beverage as it has a really low demand and replace it by a home-made
aromatised water like tap water with cucumber or fruit in it.

7. Coffee: The coffee is a star item. It has the highest contribution margin at 1.93 than the 6 other items.
Moreover, the popularity is the best with 248 for take away and 144 on site, which is way above average.

I would also offer a menu like coffee break with a coffee and a cookie.
