INTRODUCTION

BACKGROUND OF THE STUDY

Korean culture has influenced Filipinos greatly.

From their music, clothes, skincare products, and even their

food such as ramyeon, kimchi, spicy noodles, milk tea, and the

most popular “samgyeopsal” or Korean barbecue. We can see many

posts on social media about it and there are many new

restaurants in Manila and even in the provinces that offer the

dish. Many Filipinos are going crazy about it because of its

unique concept of having various side dishes.

Samgyeopsal is a popular Korean dish that is commonly

served as an evening meal. The meat, usually either marinated

or seasoned, is cooked on a grill at the diner's table.

Usually, diners grill the meat themselves and eat directly

from a grill. It is typically served with ssamjang,

vegetables, and lettuce leaves to wrap it in.

Samgyeopsal or also known as samgyeop-sal-gui or grilled

pork belly is a type of gui (grilled dish) in Korean cuisine.

Its name literally means “three-layered flesh” which denotes

the layers visible on the meat. It is said that samgyeopsal

originated from Kaesong in the early 20th century. The people

in Kaesong were known for their excellent skills and

innovative ideas when it comes to business. Koreans have long

preferred beef over pork, a predilection that dates back as

far as the Joseon Dynasty. So, entrepreneurs come up with the

idea of samgyeopsal thinking that it would be successful

because Koreans love eating meat.

The proponents who are also partners in this proposed

service decided to name the business as Samgy-To-Go. This was

chosen because it is easy to remember and describes the

service that the enterprise has to offer.

This aims to provide on how the researchers came up with

the proposed business, the service “Samgy-To-Go” and its

millennial approach of social gathering that would suit the

preferences of the consumers.

A catering business concept offers the Samgyupsal setup

in the comforts of the customer’s house. Providing all cooking

equipment’s and all food items needed to setup a Samgyupsal

meal and all ingredients for shabu shabu. From setup to the

actual party up to the cleaning, the team of SAMGY-TO-GO will

be there in your house to assist you in your party.

History of the Project

The first mention of the meat dish was in a Donga-

ilbo article published on November 3, 1984, titled "How to

Distinguish Between Good and Bad Meat", where the dish is

called "segyepsal ( 세 겹 살 )" instead of samgyeopsal. The word

samgyeopsal only became an entry for the Standard Korean

Language Dictionary after 1994. The last mention of

"segyeopsal" was in an article in 1974.

Until the 1980s, the main type of meat the Koreans

preferred was beef, but pork and chicken meat were encouraged

at a national policy level as a good alternative as most of

the cattle were used for agriculture and thus beef supplies

were deficient. In response to government policies, Chaebols,

especially Samsung, started to run pork farms. Samsung later

shut down the farms due to backlash from farmers worried that

Samsung was attempting real estate speculation.

During the late 1980s to the 1990s, the dish became a

popular menu along with Jokbal and sundae as Samsung

and Lotte entered the meat processing industry. The use of

pork in traditional Korean cuisine such as Bossam or jeyuk-

bokkeum focused on methods of hiding its smell with strong

seasoning using spices such as ginger, garlic, and leek. After

the smell problem was solved by scientific methods such as

castration of pigs at the production level, the popularization

of samgyeopsal became possible. In 1996, "daepae samgyeopsal",

a samgyeopsal that is named because it is thinly cut like it

was cut by a Plane (called "daepae" in Korean. A tool to cut

wood), was invented. The Hoesik culture after the 1998

financial crisis also popularized the dish as part of the

South Korean office cuisine. During the 2000s, beoljip

samgyeopsal, which was named as such because the way the meat

is cut resembled a beehive (beoljip in Korean), appeared. From

2005, the jeju island culture of providing bigger portions of

meat in geun (a traditional Korean unit that is equivalent to

600gs) instead of 100 grams, and the popularization of Jeju

Black pig meat influenced the samgyeopsal culture.

As samgyeopsal became popular in the Philippines, many

restaurants opened and offered this Korean dish. Korean

restaurants have been popping left and right in the Metro

partly because of the growing Korean population in Manila. And

despite the strong spicy flavor and distinct smell, there is

also a growing interest among Filipinos when it comes to

Korean food.

All over Manila, including nearby provinces, restaurants

offer "premium Korean barbecue" with special marinades and a

buffet for side dishes, too. Prices are usually between PHP

400 to PHP 2,000, depending on the variety. There are some

that have fusion dishes with other Asian cuisines. You might

also end up having different types of meat, too. It is perfect

for a family simple celebration, teammates, and for your next
