I.INTRODUCTION

Calamansi is a small green belongs to the citrus family. It is a fruit tree native in the
Philippines. Calamansi is indigenous to the Philippines. The tree grows to about 25 feet tall at maturity. Its
pulp has a distinctive flavor described as “a cross between lime and orange.” The tartness of calamansi
blends well with other juices, such as banana, apple, grape, papaya, mango and coconut water. Among the
Bisaya-speaking Filipinos, it is lemonsito. In other parts of the world, it is known as lime (scientific
name: microcarpa). It is also known as calamondin, Panama orange or acid orange. Calamansi is a citrus
fruit similar to lemon and limes. It is often called calamondin in America. Calamansi (also spelled
kalamansi) is used extensively in Filipino cooking – it’s squeezed on pancit noodles, used a marinade for
meats, and used to make desserts. It is very sour hence its popularity as souring agent for sinigang and
sawsawan (dipping sauces). It is also one of the more common backyard trees in the Philippines. It goes
well with soy sauce and lemongrass for marinating meats and fishes for grills. It is an excellent deodorizer
too, after handling fish just rub calamansi juice on your hands and the fishy smell vanishes. It also has
multiple purposes outside of the kitchen as well.

Our business name is Calamansi smoothie juice and we have different type of juices flavour made with
fresh calamansi as well.

juice. Calamansi smoothie juice can be enjoyed because of its freshness. It is suited for people who are
very much conscious about their health and mostly people are like the fresh food rather than the soda,
Carbonated drinks. It will be also favourable for children and health-conscious people.

FRESH CALAMANSI JUICE:

For the first time we are processing Calamansi juice for testing the consumer market. We are going to
make fresh juices flavors available in our town – Calamansi original, Calamansi with ginger, Calamansi
with mango, and Calamansi with cucumber.

Our Speciality, we produce juice for children and health-conscious people, because we reduce the fat
level on 0.5% and add extra vitamins and add some sugar that are best for diabetic people.

IV.PRODUCTION PLAN

The Whole of the manufacturing process will be maintained by our employees and all the raw materials
will purchased from our town Isabela and we produce using a simple machine.
EQUIPMENT AND ITS PROCESSES

JUICE EXTRACTION
The manufacturing process is carried out without causing damage to the Calamansi fruit. It is done to
avoid undesirable flavors and obtain the highest possible level of aldehydes. Second the juice is
extracted. The technology used involves cutting and squeezing the calamansi.

Extracted juice from the calamansi can be processed and bottled commercially as ready-to-drink
calamansi juice. The process of making the product includes the following

steps: 1) selection and washing of Calamansi fruits;

2) cutting of Calamansi and juice extraction;

3) preparation or mixing of ingredients according to desired formulation;

4) pasteurization at 80-95 °C for 1-10 minutes; and

5) hot filling and bottling. Pasteurization and bottling will give the juice a longer shelf-life. The product
can be stored at room temperature or best at refrigerated temperature to keep its flavor and freshness
for a longer period of time.
