DETERMINATION OF pH IN BEVERAGES.
AIM
Determine the PH of given beverage sample. You are provided with a standard solution of
sodium hydroxide of strength 0.1 N.

PRINCIPLE
The PH of the solution is related to [H+] as,
PH = -log [H+]
Thus the measurement of PH of the solution gives the concentration of H + ions in the solution.
When sodium hydroxide is added slowly from the burette to the solution of given beverage sample,
the fast moving H+ are progressively replaced by slow moving Na + ions. Due to this, the pH of the
solution increases. This increase in pH continues until all the H + ions are completely neutralized by
OH- ions i.e., up to the end point. After the end point, further addition of NaOH increases the pH
sharply as there is an excess of free, fast moving OH - ions.

PROCEDURE
0.1N solution hydroxide solution is taken in the burette after cleaning, rinsing and taking
other precautions. 20 ml of the given beverage sample is pipetted out into a clean 100ml beaker. The
glass electrode is dipped in it and is connected with a pH meter.
Now, sodium hydroxide solution is gradually added from the burette to the beverage sample
solution taken in the beaker. The pH of the solution is noted for each addition. This process is
continued until at least five readings are taken after the end point. The observed pH values are plotted
against the volume of sodium hydroxide added. From the graph the end point is noted.

RESULT:
The strength of the given beverage sample solution = N
