OVERVIEW
Glassware
Glassware refers to glass and drinkware items, besides tableware, such as dishes, cutlery and flatware,
used to set a table for eating a meal. The term usually refers to the drinking vessels, unless the dinnerware is also
made of glass.

A. ABSTRACTION
The choice of the right quality glass is a vital element if the cocktail is to be invitingly presented and give
satisfaction to the consumer. Well designed glassware combines elegance, strength and stability. It should be
smooth rimmed, completely transparent and free from chips.

Handling Glassware
1. Glassware is highly fragile and most delicate and expensive, hence utmost care has to be taken while
handling glass equipments.
2. Glasses are normally stored in glass pantry. It should be placed upside down in single rows on paper-lined
shelves to prevent dust settling in them.
3. Tumblers should not be stacked inside one another as this may result in heavy breakages and accidents.
4. The appearance of the drink mainly depends on the glass and therefore, the glass should be sparkling
clean and attractive in shape and style.
5. When glassware is machine or hand washed, each individual item must be polished and dried with a glass
cloth made of linen, as water leaves stains on the glasses.
6. Glasses, whether clean or dirty, have to be handled by the base or stem, since the finger prints left on the
glass necessitates polishing.

Washing Glassware
1. Use detergent and water (50-60 C in the first sink and water at 80 in the second)in hand washing
glassware.
2. Hand wash glasses one at a time using correct detergent, soft and clean brush.
3. Watch for lipstick or other stains and thoroughly clean them.
4. Do not knock glasses together.
5. When finished place upside down on a cloth or stable draining rack.
Polishing Glassware
1. Dry glasses as soon as possible after washing using a lint-free cloth.
2. Do not touch the glass directly with your hands. You may use dry tea cloth to handle the ware.
3. Ensure that there is sufficient number of glassware available for service, otherwise, inform your supervisor
about it
4. Make sure that cleaned glasses are clean, free from damage, chips or snacks before storing them in their
required areas.
The following equipment and materials may also be used to carry out this technique:

 Lemon
 Dry tea cloth
1. Put hot water and lemon slices in a stainless bowl.
2. Put the glass over the bowl. Let the steam moist the glass.
3. Dry glass using a tea cloth.

Storing glassware
1. Hold the glassware on the base or stem to prevent fingerprints getting on them and not to contaminate it
with bacteria from the hands.
2. Avoid knocking the glasses by placing it gently on the shelf.
3. To prevent dirt from falling into them, place glassware upside down.
4. If glassware should be hanged, make sure that is hanging securely from its handle before letting it go.
5. Do not store glasses inside one another or piled up.
6. Use cloth or paper lining on the surface when storing glasses upside down.
Handling broken glassware
1. Immediately cordon off the area where there is broken glassware to avoid injury or accidents.
2. Always exercise caution in handling broken glassware by carefully collecting all the broken pieces.
3. Even if the glassware broke in big pieces, do not use your bare hand in collecting it. You may use gloves or
sweep it collectively.
4. Never throw unwrapped glass into a bin. Wrap it in paper or newspaper before discarding it.
5. Never put broken glass into plastic waste bags.
Disposal of damaged or broken glassware
1. Chipped or cracked glassware should be taken out of service right away to avoid injury or accidents to
guests or staff.
2. The disposal of glass ware will be based on the organizational requirements. The establishment may take
part in glass recycling or other measures in handling these incidents.
