I. Performance Task

Title of the Topic: Wine Making

Area: General Biology 1
Grade level: 11
Quarter: 2nd
Competencies with code: Explain the advantages and disadvantages of fermentation and
aerobic respiration
STEM_BIO11/12-IIa-j-12
Title of the performance Prepare simple fermentation setup using common fruits to
task: produce wine via microorganisms.
Time allotment for the task: One (1) hour
Description of the task that targets the identified competencies
Through the given task, the learners will have hands-on experience on the process of
fermentation. With the emergence of the current situation that education is experiencing this time,
modular and online learning have been the avenue to continue education. Thus, the performance
task will target the identified competency in flexible learning through modular and online
modalities. Learners in both modalities will submit a sample of their final wine product and an
output showing the wine-making procedure. In modular learning, learners will submit their wine-
making through hard copies indicating the method they followed and the MOVs in conducting
their activity. The submission will be made during the retrieval and distribution schedules
supervise by their teacher. On the state of online learning, learners will submit wine-making
outputs through online platforms such as video presentations. With the use of a rating scale as a
rubric, the observed behaviors will be measurable. Given that wine making demands time,
learners should prepare all the needed ingredients and materials to maximize the time allotment.

Fermentation is widely used to produce alcoholic beverages, for instance, wine from fruit
juices and beer from grains. The knowledge gained by the learners from their activity enables
them to apply it to other products such as vinegar, bread, cheese that also undergo fermentation
process. Higher-order thinking skills go beyond basic observation of facts and memorization.
Hence, the task given will definitely target higher-order thinking skills because learners will
create their own wine out of their preferred fruit.
