 Poutine is a Canadian delicacy consisting of french fries with cheese

curds and gravy on top. It first began in rural Québec snack bars in the
1950s, and by the 1990s, it had spread across Canada and beyond.
Poutine can be found on menus ranging from fine dining to fast-food
eateries. It has become an emblem of Québécois and Canadian culinary
and cultural traditions.
 Poutine was virtually unknown in the mid-twentieth century, and is now
available in fine restaurants and fast-food businesses alike. The late
1950s saw the introduction of the combination of fresh-cut fries, cheese
curds, and gravy in rural Quebec snack bars. Despite the fact that the
exact origins of poutine are disputed, the meal was created in phases.
