CHAPTER I

BACKGROUND INFORMATION OF THE STUDY

Introduction

It is no secret that the typical Filipino has a sweet spot in food especially for

pastries and because of the variety of flavors available on the country, Filipinos

even invented, created, and adopted many recipes and variety of flavors of

pastries that truly satisfies the cravings of every consumer.

Pastries are various kinds of baked products that are made from ingredients

such as flour, sugar, milk, butter, shortening, baking powder, and/or eggs. Usually,

pastry products that are offered in the market are overly sweet and unhealthy. With

this, the partners decided to incorporate vegetables to the pastry products to even

out the sweetness of the pastry and make it healthier.

The Street Vegan Pastry is a food truck business that aims to produce a

healthier pastry product by incorporating vegetables. The partners wanted to

innovate and to create more different pastries infused with vegetable. The partners

decided to start a business that offers different kind of pastries such as squash

cupcake and carrot brownies in order to introduce a unique pastry that people used

to buy in the market. The business’ pastry products are healthier because it

contains natural vegetable ingredients like carrot and squash that has a lot of

health benefits. The carrot contains fiber that can help keep blood sugar level

under control and is loaded with vitamin A and beta-carotene which are good for

the skin and eyes and is also rich in calcium and vitamin K both important for bone

health. While Squash on the other hand is rich in anti-oxidant which plays an

important role in reducing oxidative stress and is also rich in vitamin C and beta-

carotene.

Along with the pastry products, the business will also offer drinks such as

coffee, bottled orange juice and bottled mineral water because the partners thinks

that pastry products are best paired with either coffee, soda or water.

Name of the Business

The name of the proposed business will be Street Vegan Pastry. The name

“Street” comes from the nature of the business which is a pastry shop using food

truck and is usually seen in the streets. While the name “Vegan Pastry” refers to

the product that the business offers, which is pastries infused with vegetables.

Hence, the name “Street Vegan Pastry” was formed.

Location of the Proposed Business

The business “Steet Vegan Pastry” physical store, preparation area and

parking area will be located at house #122 Brgy. 33-B La Paz Laoag City.

The business will start its preparation from 6:00 am to 9:00 am and will go

around on its designated areas from 10:00am to 8:00pm. The business has allotted

time and date schedule to which customers can visit the food truck as shown in

table 1.

Vision

Street Vegan Pastry's vision is to be known as the first Ilocano pastry shop

with food truck that offers healthy pastries.

Mission

Street Vegan Pastry's mission is to provide customers with nutritious,

delicious and affordable pastry products that is good for the health and to

encourage them to continuously eat nutritious foods to ensure that every consumer

will enjoy and get benefited from its nutritional value.

Goals & Objectives

• To become a profitable food truck business and to realize a satisfactory

financial gain.

• Continue to innovate healthy pastry products.

• To reduce costs without compromising the quality of the product that the

business offers.

CHAPTER II

MANAGEMENT ASPECT

Form of Business Organization

The Street Vegan Pastry is a partnership form of business organization

where the partners pool their financial and industrial resources together, and

agreed to carry on a business. Each proponent will contribute Php 68,000.00 and

will occupy different position following a routine schedule. The partners have

decided to assign each partner to different position bimonthly to enable them to

experience every designated position and to maximize productivity.

Organizational Chart

To ensure smooth operation of the Street Vegan Pastry, the flow of reporting,

information and control should be established.

The organizational chart of Street Vegan Pastry is shown in figure 1.

Compensation Package

The partners will be compensated monthly in exchange for their efforts and

services aside from the profit sharing. The amount of salary is based on the

agreement of the partners presented in the Articles of Partnership.

in table 3.

Routine Schedule

The partners have agreed to set a bi-monthly routine schedule to which all

the positions can be experienced by all the partners. All the owners agreed to

undergo trainings and seminar as well as driving lessons to accomplish each and

every position in the business. In cases that one partner is unable to attend to

work, one of the partners could relieve him and do his/her task on that day, which

could increase the business productivity. Furthermore, the partners have agreed

that they will not hire employees in the interim, but are open to do so once the

business grows in the future and if necessary.

The partners will report on duty six (6) days a week with a weekly scheduled

day off. From Monday to Sunday there will be at least five (5) personnel on the day

of the business operation, from 06:00 a.m. to 08:00 p.m. The bi-monthly routine

and day off schedule of the partners is presented in tables 4 and 5.

MARKETING ASPECTS

Product Descriptions

The Street Vegan Pastry will offer a variety of Filipino favorite pastries that

are unlike the regular pastry. All pastry product that the Street Vegan Pastry offers

are rich in vitamins and minerals that comes from its vegetable infusions on its

bread’s dough. The business will offer squash cupcakes and carrot brownies. For

the drinks, the business will also offer bottled water, bottled orange juice and

coffee, a great combination for such tasty indulgence.

Squash Cupcakes Flavors

Squash cupcake is a soft and delicious cupcake made with egg, flour,

sugar, milk, vanilla extract and butter. The chiffon cake is infused with squash and

has only one flavor to serve to the customer which is vanilla flavor and frosted with

different flavors such as cookies and cream, salted caramel, Choco peanut,

s'mores, vanilla and chocolate. Squash provides numerous health benefits that

may help reduce the risk of many diseases, including heart and respiratory

disease, cancer, diabetes and arthritis. Squash is rich in anti-oxidant which plays

an important role in reducing oxidative stress and beta carotene that can help

maintain the skin health. Squash is also rich in vitamin A which is an essential

vitamin that the body needs for growth and development. It is also vital for cell

recognition, vision, immune function, and reproduction and helps the heart, lungs,

kidneys, and other organs function correctly and Vitamin C which helps to reduce

risk from chronic disease, it can help manage high blood pressure and to boost the

immune system and also rich iron and calcium.

Cookies and Cream Cupcakes- the vanilla flavored cupcake is

topped with crushed Oreo frosting. The Oreo frosting is made from

butter, sugar, milk or water and Oreo cookies.

Salted Caramel Cupcakes –the vanilla flavored cupcake is topped

with a salted caramel frosting. The salted caramel frosting is made

from butter, brown sugar, salt and powdered sugar.

Choco Peanut Cupcakes - cupcake topped with chocolate

peanut butter frosting. The Choco peanut frosting is made from

butter, sugar, cocoa powder, milk, peanut butter, vanilla extract and salt.

S’mores Cupcakes –a moist cupcake topped with crust graham

cracker and marshmallow frosting which is made from butter,

chocolate, marshmallows, sugar and vanilla extract.

Vanilla Cupcakes- the cupcake is topped with vanilla buttercream

frosting which is made from butter, powdered sugar, milk and vanilla

extract.

Chocolate Cupcakes- the squash cupcake is topped with chocolate

frosting which is made from butter, milk, unsweetened cocoa,

powdered sugar and vanilla extract.

Carrot Brownies Flavors

Carrot brownies is a chocolate flavored brownie infused with carrots and

topped with different flavors such as dark chocolate, salted caramel, chocolate

chip, Nutella, s'mores and rocky road. Carrots has also numerous health benefits

like squash it includes fiber, the fiber in carrots can help keep blood sugar level

under control and is loaded with vitamin A and beta-carotene which are good for

the skin and eyes and is also rich in calcium and vitamin K both are important for

bone health. Carrots can also lower risk of cancer, help stay at a healthy weight

and lower chances of heart disease, help to boost the immune system and help

with constipation.

Dark chocolate brownies-fudgy brownie filled with dark chocolate

sauce.

Salted Caramel Brownies- fudgy brownie stuffed filled with

caramel sauce. Salted caramel is made from brown sugar,

evaporated milk, powdered sugar, butter and vanilla extract.

Chocolate chip brownies- chewy and intensely fudgy brownie

packed with chocolate chips.

Nutella Brownies- fudgy brownie swirled on topped with Nutella

cream. Nutella Brownie is made from butter, sugar, Nutella and

vanilla extract.

S’mores - brownie topped with graham crackers and chocolate

bars and torched marshmallow.

Rocky road- a chocolate brownie topped with a layer of puffy

marshmallows, sprinkled chocolate chips and almonds, and

drizzled with chocolate.

Drinks

Along with the pastries, customers could also buy drinks from the business

such as Coffee, bottled mineral water and soda.

Bottled Water- A staple product that is an essential human need

to boost energy as well as quench thirst. A refreshing beverage that

helps in flushing waste off the body.

Coffee- An essential drink for most of the people that helps them

boosts their performance for the day. A rich mix of ground coffee

bean that is brewed on the site that is served on a steamy to go cup and is served

with milk and sugar.

Minute Maid Juice Drink- A refreshing flavored juice drink that is

made up of 100% orange juice. A deliciously citrus drink that helps

build healthy bones and also provides a good source of Vitamin C, Folate,

Potassium and Thiamin and an excellent source of calcium and vitamin D.

Product Procedures

Squash Cupcake

• Preheat oven to 176 degrees Celsius and prepare a cupcake pan with

liners.

• Add the flour, sugar, baking powder and salt to a large mixer bowl and

combine. Set aside.

• Place the squash in a food processor and process until become fine.

• Add the milk, melted butter, vanilla extract, squash, and eggs to a bowl

and combine.

• Add the wet ingredients to the dry ingredients and beat until well

combined.

• Slowly add the water to the batter and mix on low speed until well

combined.

• Fill the cupcake liners about half way and bake for 15-17 minutes, or

until a toothpick comes out with a few moist crumbs.

• Remove the cupcakes from oven and allow to cool for 2 minutes.

Cookies and Cream Frosting

• Combine the butter and shortening in a bowl and mix until

smooth.

• Add 2 cups of powdered sugar and mix until smooth.

• Add 1 tablespoon of water or milk and mix until smooth

• Add the remaining powdered sugar and fine crumbs Oreo

cookies and mix until smooth

• Add remaining water or milk as needed and mix until smooth

• Pipe the frosting onto the cupcakes

Salted Caramel Frosting

• Melt the butter in a small pan over medium heat. Once melted, add

brown sugar and 2 tablespoons of heavy cream. Whisk constantly

until sugar is dissolved. Add salt. Allow to bubble for about 2 minutes,

whisking every 30 seconds or so. Remove from heat, pour into a

mixing bowl, and allow to cool for about 30 minutes.

• With a hand electric mixer beat 2 cups of confectioners’ sugar and 3

more tablespoons of heavy cream. Slowly add ½ cup more

confectioners’ sugar until reached the desired consistency. Add 1

more tablespoon heavy cream if the frosting is too thick.

• And now frost the cupcake

Choco Peanut Frosting

• With the hand electric mixer beat the butter on medium speed until

creamy. Add confectioners’ sugar, cocoa powder, and milk. Beat on

low speed for 30 seconds, and then add the peanut butter, vanilla

extract, and salt. Beat on medium-high speed for 2 minutes until

combined.

• Finally frost the cupcake.

S’mores Frosting

• In a mixing bowl cream together the butter, melted chocolate and

melted marshmallow until mostly smooth.

• Cream in the vanilla and cream. Then slowly add the powdered sugar

one cup at a time. Once all the sugar is added, whisk on high for

about two minutes.

• Let it sit and frost the cupcake.

Vanilla Frosting

• Combine the butter and shortening in a bowl and mix until smooth.

• Add 2 cups of powdered sugar and mix until smooth.

• Add the vanilla extract and 1 tablespoon of water or milk and mix until

smooth

• Add the remaining powdered sugar and mix until smooth

• Add remaining water or milk as needed and mix until smooth

• Pipe the frosting onto the cupcakes.

Chocolate Frosting

• Combine first the butter, milk, unsweetened cocoa and sugar in a

saucepan and boil.

• After it boil remove from heat.

• Add chocolate chips/Nutella, corn syrup, and vanilla extract and stir

until chocolate melts.

Carrot Brownies

• Preheat the oven to 175 degrees C. Grease the pan

• Place the carrots in a food processor and process until become fine.

• Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour,

baking powder, fine carrots, and salt. Spread the batter into the prepared

pan.

• Baked in preheated oven for 20 to 30 minutes or until a toothpick inserted

in the center comes out with crumbs, not wet.

• Remove from the oven and cool it.

Dark Chocolate Brownies

• Beat butter, corn syrup, cocoa, and vanilla until well mixed.

• Slowly add in powdered sugar

• Add in 2-4 tablespoon of milk until desired consistency is reached.

• Wait until brownies are completely cooled before frosting.

Salted Caramel Brownies

• Place ¼ cup butter, brown sugar and evaporated milk into a small

sauce pan over medium heat. Stir until melted and mixture is smooth

and no longer gritty.

• Cool mixture for 15 minutes and then pours into bowl of stand mixer

and add in powdered sugar.

• Turn to medium high and mix for another minute. Add in remaining

butter, and vanilla. Beat on medium for 3-4 minutes or until light and

fluffy. Add additional milk if needed to get a nice spreadable

consistency.

Chocolate Chip Brownies

• In the bowl, beat the butter until light and fluffy, about 3 minutes.

• Add the vanilla and mix well. Decrease the speed to low and slowly

beat in the powdered sugar, ½ cup at a time.

• Add in the melted milk chocolate and beat until well incorporated.

• To reach desired consistency, add in heavy cream 1 teaspoon at a

time with mixer on low speed. If frosting becomes too liquid, simply

add additional sugar.

Nutella Brownies

• In a bowl, beat the butter on medium speed until smooth. Stop the

mixer and add confectioners’ sugar, Nutella, heavy cream, and

vanilla extract. Beat on low speed for 30 seconds, then increase to

medium-high speed and beat for 2 full minutes

• Add up to ½ cup more confectioners’ sugar if frosting is too thin or

another tablespoon of cream if frosting is too thick. Add a pinch of

salt if frosting is too sweet.

• Pour to the brownies and spread evenly.

S’mores Brownies

• In a bowl, break graham crackers into 1inch pieces and toss with

miniature marshmallows and milk chocolate.

• After baking the brownies for 15 minutes remove in the oven and

sprinkle the s’mores mixture evenly over the top.

• Bake for an additional 15 to 20 minutes or until a toothpick inserted

in the center comes out clean.

• Remove the brownies in the oven and allow brownies to cool.

Rocky Road Brownies

• Combine chocolate chips heavy cream, corn syrup and salt in a

sauce pan over low or medium heat

• Stir frequently until chocolate chips are completely melted and

mixture is smooth

• Remove from heat and allow to cool for ten minutes before stirring in

mini marshmallows and chopped almonds or nuts

• Stir just until marshmallows and nuts are coated in chocolate and

then immediately pour over brownies. Use spatula to spread if

needed so the topping is even.

• Allow the brownies to sit and the chocolate to set.

Pricing Strategy

A business can use a variety of pricing strategies on selling their products or

services from cost-plus pricing, price skimming, penetration pricing, competitive

pricing, premium pricing and psychological pricing. The partners agreed to use

cost-plus pricing for all its products and will add 40% markup to the cost incurred

in the production of the goods/products.

Target Market

Street Vegan Pastry aim to provide the needs and wants of its customers

through serving veggie pastry and letting them experience the different variety of

pastries like squash cupcakes and carrot brownies. The business will sell their

products, in Cultural Center in Batac City, Torre Currimao and NWU along bypass

road.

The target market of the business are the tourist/travelers, the students and

employees, and the passers-by who will drop by or visit the business.

Competitive Advantage

Street Vegan Pastry’s competitors are the Baker’s Percent, Toti’s Bakeshop

and Julies Baked shop. These competitors sell the same products and they are

near the location. The competitive advantage of Street Vegan Pastry is its natural

ingredients which is the vegetable that is good for the health, and it is new to the

consumers. The use of food truck is also an edge because it can always have the

perfect location since the business can go around to different strategic locations.

Distribution Strategy

Street Vegan Pastry will sell its product following a schedule as agreed upon

by the partners. The business will be adopting direct selling strategy in which the

product will be directly distributed to its consumers around North Western

University along bypass road, in Batac City Cultural Center and Torre in Currimao.

The distribution strategy of the business is shown in figure 2.

Promotional Strategy

Promotion is one of the key ingredients for a business to inform and

persuade the customers to buy their products. The promotional strategy that will

be used by Street Vegan Pastry are advertisement and sales promotion.

Street Vegan Pastry will advertise the business through social media

platforms like Facebook, Instagram, Twitter and printed media advertisement like

tarpaulin. The partners will also use word of mouth wherein the partners will ask

their friends and relatives to influence and recommend their products to potential

customers.

The printed media advertisement cost of the business is shown in the table

7.

The business will also use sales promotion particularly Buy 1, Take 1

scheme. The business will offer the Buy 1, Take 1 scheme for any cupcake flavors

dozen. The business decided to use the Buy 1, Take 1 scheme for the customers

to encourage them to buy the other offerings once they have tasted the other

flavors.

SWOT Analysis

One of the strengths of Street Vegan Pastry is that it offers innovative and

healthy pastry products because of the natural vegetable ingredients. Another

strength is that they are the first ever pastry shop with food truck here in Ilocos

Norte. On the other hand, the business is still not well known since it is a new in

the market and the proponents have insufficient experience in handling the day-

to-day issues of the business since they are fresh graduates, and also the business

has only one food truck that means it has a limited area of operations. Although

the opportunities of the business include the expansion of the business, and food

truck business falls in the category of recently emerging business. The threats are

natural disaster, too much pastry shop in the market, unstable gas price, and

hygiene conscious people since we are facing pandemic today.

CHAPTER IV

TECHNICAL ASPECT

Technical Specification of the Product

The main product of the business is a vegetable twist pastry that a lot of

Filipinos love. The business offers different kind of pastries like cupcakes and

brownies infused with healthy vegetables like carrots and squash. Every pastries

are frosted or filled with the traditional flavors that people love like cheese,

chocolate, cookies and cream, peanut butter and are paired with steaming hot

coffee, refreshing water and minute maid juice drink that can also be bought on

the food truck. The vegetables used as the main ingredient will be purchased at

the local public market of Laoag City, while the other ingredients will be

purchased at the CF Mart that is also located at the heart of Laoag City

commercial area. The finished products are placed on pastry box which can hold

at least 6 pastries while customers who wish to purchase pastry per piece, pastry

are served in a brown paper bag which will also serve as take out container,

disposable paper cups with lid are used for the coffee and stirrer can also be

offered as per customers request. All of the containers/bag use will be labelled

with the business’ logo for brand recognition.

Business Location

Street Vegan Pastry will be renting an 8 meter wide by 10meter long

residential property located at house #122 Brgy 33-B Lapaz Laoag City and will go

around on its designated area as presented in table 1.

4 and 5.

The Street Vegan Pastry will also have its own business area which will serve

as storage room, preparation area, office and parking area that is aside from the

roaming food truck. This will be located at the residence of one of the partners at

house #122 Brgy. 33 B LaPaz Laoag City. The said location is offered by the

partner Ms. Shirley Anne A. Villaroman as physical location of the business for the

property is unused and is ideal for the business needs. In addition, the business

Street Vegan Pastry will pay rent amounting to Php 500.00 per month.

Vehicle

The vehicle that the partners decided to purchase is a secondhand multi cab.

The vehicle will be customized to cater the needs of the business, including

installation of a power inverter, as well as lights, shelves and preparation area for

• Gas operated Oven –a heating installation for baking products, it uses

energy generation source of gas. This is an equipment where the dough is

place in order to be baked.

• Electric Hand Mixer –a device consists of a set of beaters to mix

Description: Baking Tools

• Spatula – a narrow spatula that is built with a thin, flexible stainless-steel

WASTE DISPOSAL

In business, proper waste disposal is very important not just for the business

but also for the environment. Street Vegan Pastry will ensure the cleanliness and

safety of products and the areas of operation by implementing proper waste

disposal. The business will use garbage bags, waste will be segregate according

to biodegradable and non-biodegradable. The biodegradable waste will be put into

a compost pit near to the house of one of the partners while the non-biodegradable

waste will be put in a local recycling facility where recycling happened because

one of the best ways to dispose non-biodegradable waste is to do the 3Rs the

Reduce, Reuse and Recycle in this way we can help our environment keep clean

and also to reduces the amount of waste produced.

Basic Financial Assumptions

1. The total project cost is Php 408,000.00 only.

2. The source of fund will be 100% from the owner’s contribution.

3. The sales of the business will increase annually for the year 2023 by

58%, 2024 by 6%, 2025 by 6% and 2026 by 7%.

4. The partners will set Php 2,000.00 for the sales return and allowances

of the business.

5. The partners will set Php 4,000.00 as its maintenance cost for the

vehicle of the business.

6. The partners will set Php 20,000.00 for the customization of the vehicle

of the business.

CONCLUSION

Based from all the gathered information and the results generated in the

conduct of the study, the proposed project is feasible. The project is in

accordance with its objectives which are to give the customers good quality,

delicious, healthy, nutritious and very affordable products, and create more

innovative pastries.

On its management aspect, the partners will report to duty daily. They will

offer their abilities in the management of the business by filling all the positions

needed for the business to operate and they will be paid for the services they

provide.

On the marketing viewpoint, the business will offer innovative, and unique

dishes out of vegetables like carrots and squash. The unique offerings and its

distribution strategy are its competitive advantage.

In relation to its technical and operational aspects, a positive result was

obtained. The food cart will be able to go around and locate new markets,

resulting to a bigger sale. The business will go around most especially to busy

place or strategic place where its target markets are located.

The financial aspect also shows a good result. The first five years of

operation is highly predicted to generate enough income to cover all the incurred

expenses while also generating profit for the business owners. The year ROI

Moreover, the socio-economic aspect of the business shows the benefits

and employee. The business will pay a 30% tax on its earnings to the

government that will be beneficial to our country's development. Customers will

also be benefited through good customer service and serving delicious, healthy

and affordable food. The employee will be given as monthly salary and

employees of the business will be benefited with the annual SSS, PAG-IBIG and

PhilHealth contribution provided by the business.

The logo of the business is the representation of the brand, for this illustrates

and give their customers the idea of what to expect about the business. The

Vehicle in the logo of Street Vegan Pastry shows the concept of the business which

is through food truck. The colors yellow and green symbolizes the vibrancy of the

business for the color represents happiness and warmth as well as sunshine, and

the partners want that their customer feel that way through every bite of their

pastry. The vegetables represent the main ingredients that the partners chose to

incorporate to every pastry that they make. For they want to serve a healthy,
