Testing
Parameters  Pectin (at 11.5º Brix)

Sample Size
 20 – 25 ml

Sampling
Responsibility  Q.C. Officer

Sampling  Take 100 ml clean and dry beaker.


Method  Take 20-25 ml sample from finished product Tanks and
leave the sample for 5-10 min for cooling down.
Testing
Frequency  Take the sample from each tank.

Equipment Used
 Pectitest Kit.

 Take 2 ml of juice treaded with pectolytic enzyme.


 Add 2 ml of solution A (acetone) & 8 drop of solution B
(indicator).
 Shake briefly
 Wait for around 10 minutes and than observe the results.
Testing Method  If pectin is present a “red-orange-yellow” color will form on
the surface.
 If the color is uniform in test tube this indicates that the
enzymatic treatment is positive.

Acceptance
Criteria  Pectin must be negative in the product.
