Sampling  Take 100 ml clean and dry beaker.
Method  Take 100 ml sample from finished product Tanks and leave
the sample for cooling down.
Testing
 Take the sample from each tank.

 Pipette
 Burette.
 Take 1 gm Apple, Pear, Peach, Pomegranate and
Strawberry, Mango, Guava, Banana, Pear, Apricot, Carrot
and Tomato Paste, Pulp and Concentrate in titration flask.
 Mix 5 to 10 ml distilled water.
Testing Method
 Put a drop of phenolphthalein indicator.
 Titrate with 0.1 N NaOH until pink color appears.
 Note the reading of NaOH consumed.

Calculation  % Acidity = NaOH consumed X 0.67 citric acid factor or


0.70 malic acid factor
 Acceptable acidity range of the Clarified Apple, Pear, Peach,
Pomegranate and Strawberry juice concentrate is more then
Acceptance 1.5%
Criteria  Acceptable acidity range of the Mango, Guava, Banana,
Pear, Apricot, Carrot, Date Syrup and Tomato Paste, Pulp
and Concentrate is not less then 0.5%
 In case acidity decreases the acceptable range of mentioned
products will not be included in the production.
