INTRODUCTION
The king of the fruits," mango fruit is one of the most popular, nutritionally rich fruits with
unique flavor, fragrance, taste, and heath promoting qualities, making it numero-uno among new
functional foods, often labeled as “super fruits. “Mango is one of the delicious seasonal fruits
grown in the tropics. The tree is believed to be originating in the sub-Himalayan plains of the
Indian subcontinent. Botanically, this exotic fruit belongs to the family of Anacardiaceous, a
family that also includes numerous species of tropical fruiting trees in the flowering plants such
as cashew and pistachio. It is a tropical tree cultivated in many regions of India, and now its
farming has been extended wide across the world in many continents. After flowering, its fruits
grow at the end of a long, string-like peduncle, with sometimes more than one fruit to a peduncle.
Each fruit measures 5 to 15 centimeters in length and about 4 to 10 cms in width, and has typical
“mango” shape, or sometimes oval or round. Its weight ranges from 150 g to around 750 g. Outer
skin (pericarp) is smooth and is green in un-ripe mangoes but turns in ripe fruits into golden yellow,
crimson red, yellow or orange-red depending upon the cultivar type. Fresh mango season lasts
from April until August. Mango comes in different shapes and sizes depending upon cultivar types.
Internally, its flesh (mesocarp) is juicy, orange-yellow in color with numerous soft fibrils radiating
from its centrally placed flat, oval-shaped stone (enveloping a single large kidney-shaped seed).
Its flavor is pleasant and rich and tastes sweet with a mild tartness.
Mango fruit is rich in pre-biotic dietary fiber, vitamins, minerals, and poly-phenolic
flavonoid antioxidant compounds. According to new research study, mango fruit has been found
to protect from colon, breast, leukemia and prostate cancers. Several trial studies suggest
that polyphenolic antioxidant compounds in mango are known to offer protection against breast
and colon cancers. Mango fruit is an excellent source of Vitamin-A and flavonoids like β-carotene,
α-carotene, and β-cryptoxanthin. 100 g of fresh fruit provides 765 IU or 25% of recommended
daily levels of vitamin-A. Together; these compounds have been known to have antioxidant
properties and are essential for vision. Vitamin-A also required for maintaining healthy mucosa
and skin. Consumption of natural fruits rich in carotenes is known to protect from lung and oral
cavity cancers. Fresh mango is a good source of potassium. 100 g fruit provides 156 mg of
potassium while just 2 mg of sodium. Potassium is an important component of cell and body fluids
that helps controlling heart rate and blood pressure. It is also an excellent source of vitamin-B6
(pyridoxine), vitamin-C and vitamin-E. Consumption of foods rich in vitamin-C helps the body
develop resistance against infectious agents as well as scavenge harmful oxygen-free radicals.
Vitamin B-6 or pyridoxine required for GABA hormone production within the brain. It also
controls homocysteine levels within the blood, which may otherwise be harmful to blood vessels
resulting in coronary artery disease (CAD), and stroke. Further, it composes moderate amounts
of copper. Copper is a co-factor for many vital enzymes, including cytochrome c-
oxidase and superoxide dismutase (other minerals function as co-factors for this enzyme are
manganese and zinc). Copper also required for the production of red blood cells.
Having a creative mind, we did innovation on serving this healthy mango in a unique and
exciting way wherein it is in the form of Panna Cotta. Panna cotta is the simplest of desserts; a
softly set pudding that, at its most elemental, is made with cream, sugar, and gelatin. It originated
in Northern Italy, where the earliest recipes mention simmering the cream with fish bones (the
collagen would set the cream). The name literally means cooked cream.
Mango panna cotta is almost invariably made with gelatin and fresh mango which gives it
a smooth mouthfeel and a melt-in-the-mouth texture. The product will create a wide spectrum of
taste and richness of the mango. This new product can please the food lovers to try and be
fascinated on its looks and new taste. For we believe that customers should be satisfied with what
is being serve, the company will make sure to offer sweet delicacy. For them to not forget and
make them ask for more or even surpass their expectations.

ROLES AND THE RESPONSIBILITIES OF MEMBER OF ORGANIZATION


In our business, we appoint three (3) managers and four (4) supervisors. Who is responsible
for overseeing a department or group employee within the company and who have the liability to
perform their own task more efficiently and proficiently?

Erin Julia Balanag- A chief executive officer (CEO) is the highest-ranking executive in a company,
and their primary responsibilities include making major corporate decisions, managing the overall
operations and resources of a company, acting as the main point of communication between the
board of directors and corporate operations, and being the public face of the company. A CEO
often has a position on the board; in some cases, they are even the chair.

Shiela Mae Adsuara - A marketing manager is someone who manages the marketing resources of
business or product. He may be responsible for various product and services. A manager needs to
be friendly, social and spontaneous nature. In accord with these attributes, he needs to be highly
focused, detail-oriented and very scrupulous of meeting budget restraints and timelines.

Lianna Bunoan - Finance Manager. Typical duties include reviewing financial reports, monitoring
accounts, and preparing activity reports and financial forecast. Financial Managers also investigate
ways to improve profitability, and analyze markets for business opportunities, such as expansion,
mergers or acquisitions.
Operation Manager- An operations manager is a senior role which involves overseeing the
production of goods and/or provision of services. It’s an operations manager’s job to make sure an
organization is running as well as it possibly can, with a smooth efficient service that meets the
expectation and needs of customers and clients.
Jake Reamucio - Marketing Supervisor. The role of a marketing supervisor involves coordinating
all internal and external marketing and promotional efforts including merchandising, community
relations, public relations, information, events, and demos. A marketing supervisor also leads the
marketing team in some companies and prepares the marketing budget.

Glen Marielle Rubis- Finance Supervisors. Supervise financial and accounting processes and
ensure adherence to company/federal laws. Prepare and distribute budget reports and financial
statement to management in a timely fashion. Manage account payables and receivable in a timely
manner.

Jhonalyn Palabay- Operation Manager. Play the important role of facilitating day-to-day activities
to keep organizational processes flowing smoothly and effectively. Responsibilities include
supervising staff member, processing client orders and request, overseeing logistics and order
delivery, organizing meetings and quarterly reports and general administrative duties, such as
office management and planning employed trainings.

MARKET PROFILE
Yummango Panna Cotta will launch around City of San Fernando La Union. Our target is to
provide healthy product with reasonable price and to have branches nationwide. Our business is
specified to be selling healthy panna cotta to the costumer that they can enjoy not only the taste
but also its nutritional content. Also, we are most likely to be kind and approachable to the
consumers. Thus, it is compromised of these target groups:

"Mango Panna Cota" is a product that a consumer is willing to purchase at a given price
in a period of time. The commodity for the consumers desire to purchase the product as well as
the ability to pay for it. Since a business would not be able to exist if there was improper demand
estimate or demand forecast, the company undergo further research and data analyzation. Where
in fact, this product fills the individual demand and direct demand wherein satisfies an individuals'
demand for food and the like

The supply of Mango Panna Cota depends on the demand of the consumer. Hence, the supply
won’t fall due to continuous supply and controlled usage of raw material. That will maintain the

PRODUCTION PROCESS

B. Procedure
1. Prepare all the raw materials and ingredients.
2. Wash the mango and slice it. Scoop the inner part and separate the seed.
3. Blend the mango with water in the blender for 5 minutes. Then, put it in a clean bowl.
4. Mix the blended mango, condensed milk, all purposed cream and sugar well.
5. While mixing, boil the gelatin powder in a whole liter water. Mix accordingly.
6. When the gelatin mix is ready, mix it in the mango mixture. Mix accordingly.
7. Add sugar or condensed milk according to your taste.
8. Put it in the molder. And let it solidify. See better result after putting it on fridge.
9. Ready to serve.
