Number one: More than 2000 years ago, the Mochica culture prepared a dish
based on fresh fish, which was cooked with the juice of a local fruit, called
tumbo.
Number two: Years later, at the time of the Incas, fish was macerated with a
CHICA.
Number trhee: It was not until the arrival of the Spanish when the ingredients
that we know today in ceviche were added: lemon and onion.
INGREDIENTS
- 800 grams of fillet (merlusa - optional).
- 3 red onions (cut Julienne).
- 8 or 10 lemons
- 5 ají limo.
- Rocoto.
- Pepper.
- Salt.
- 1 ½ tablespoon chopped cilantro.
PRESENTATION
- 3 lettuce leaves.

preparation:
2- Cook the sweet potatoes, peel them and cut them into slices.
6.- Add the onion, then the chili pepper cut into small pieces, the freshly
squeezed lemon, the hot pepper juice, the pepper and the chopped cilantro.
For the plating, first place the lettuce, the preparation will go on top and the
ends of the plate will go: the corn, the sweet potato. On top of the preparation,
place a slice of hot pepper (optional).
Tips:
- The garnishes can vary from yuccas, toasted field, zarandajas, chifles, among
others.
- Making undercuts of the fish will make the lemon juice penetrate easier.
- Rub Rocoto in the bowl where it will be prepared allows to intensify the flavor
of the hot pepper without increasing the heat.
- Adding salt at the beginning helps seal the fish and prevents it from falling
apart when you prepare it.

- Sal.
- 1 ½ cucharada culantro picado.

- 3 hojas de lechuga.
- 3 camotes anaranjados.
- Rodajas de choclo (maíz).
Preparación:
- Realizar cortes sesgados del pescado, hará que el jugo de limón penetre más
fácil.
6.- Añadir la cebolla, luego el ají limo cortado en partes pequeñas, el limón
recién exprimido, el jugo de rocoto, la pimienta y el culantro picado.
