Welcoming the Guest


Food Service Attendant: Good afternoon Mam/Sir, I am ________, I am your food service
attendant , do you have a table reservation. Table for how many?
Guest: NO, I don’t have a table reservation. And table for 1 please.
Food Service Attendant: Do you have a table preference? Or Would you like to be seated by the
window or lounge?
Guest: I would like to be seated by the window.
Food Service Attendant: Alright mam, this way please. ( Walks ahead and directs guest to the
table)

Seating of the Guest:


Food Service Attendant: May I assist you with your chair?
Guest: Yes, thank you.
Food Service Attendant fixes chair for the guest.
Service Sequence Proper:
Food Service Attendant: May I serve you a glass of cold water or would you like to browse our
beverage menu?
Guest: A glass of cold water is great.
Food Service Attendant serves guest the cold water.
Food Service Attendant: May I unfold the table napkin on your lap?
Guest: Yes please.
Food Service Attendant unfolds the napkin on the guest’s side and places the napkin on the
guest’s lap.
May I present the menu?
Just call my attention when you are ready to order.
Food Service Attendant proceeds to prepare complimentary bread for service.
Food Service Attendant: Excuse me mam, may I serve you our hot and fresh baked dinner
rolls?
Guest: Yes, thank you.
Food Service Attendant serves guest dinner roll.
Guest calls Food Service Attendant to order.

Order Taking and Food Service Sequence


Food Service Attendant: Are you ready to order? Holds an order slip and a ballpen.
Guest: Yes. I would like to order : Sample Orders
Potato Chowder for my soup
Caesar’s Salad for my appetizer
Food Service Attendant: Excuse me mam, but may I inform you that we use fresh anchovies for
the Caesar’s dressing, would that be alright with you?
Guest: Yes. For my maincourse, porterhouse steak.
Food Service Attendant: for your porterhouse, will this be cooked well-done….?
Guest: No, Medium rare .
Food Service Attendant: The porterhouse will be cooked 30-45 minutes, would this be okay with
you?
Guest: NO problem
Food Service Attendant: How about some red wine to match your main course? A bottle or a
glass of cabernett sauvignon perhaps?
Guest: That would be great!
Food Service Attendant: And a slice of blue berry cheesecake perhaps for dessert?
Guest : YES!
Food Service Attendant: May I now repeat your order mam?
Guest: Sure
Food Service Attendant: Mam, you ordered for your soup: Potato chowder, appetizer: Caesar’s
salad: main course: Medium Rare porterhouse to be served together with a bottle of Cabernet
Sauvignon, and a slice of blueberry cheesecake. Did I get your lunch order correctly?
Guest: yes, thank you.
Food Service Attendant: Okay mam, I’ll be back to serve your orders in a short while

Food service attendant adjusts the table. Removes the Bread and butter plate on the left side
after confirming if guest is done with the bread. Places salad fork on the left side using the left
hand service.
Asks permission for adjustment of the table and places on the right side , using the right hand
services. Places the salad knife and soup spoon. Adds the dessert fork and spoon on the center
of the cover.
Food Service Attendant: Excuse me mam, may I serve you your soup? Potato chowder. Be
careful the soup is hot!.
Food Service Attendant: Excuse me, mam, are you done may I bus out?
Removes Soup bowl with underliner and soup spoon
Food Service Attendant: May I serve you your appetizer salad? Caesar’s Salad. Enjoy!
Food Service Attendant: How was the salad mam? Are you done may I buss out?
Guest: Yes
Food Service attendant removes salad fork and salad knife including the salad plate.
Food Service Attendant: Excuse me, mam , may serve your main course? Medium rare
porterhouse.
Guest: Thank you. Please serve the bottle of wine .
Food Service Attendant: May prepare the table for wine service?
Places the BB plate or saucer and red wine glass on the table.

Wine Service:
Food Service Attendant: May I now present the bottle of red wine that you ordered? You
ordered this red wine vinified from the finest Cabernet Sauvignon. From the vineyards of
France, with a vintage year of 2015 and an Alcohol Per Bottle Volume of 12% . May I open the
bottle of wine for you?
Guest: Absolutely!
Opens the bottle of wine and presents the cork for sensory evaluation.
Food Service Attendant: May I serve you a sample of the wine?
Guest: Yes please .
Serves a sample. Guests asks to leave the bottle on the table.
Food Service Attendant: Are you done with your main course? May I buss out ?
Guest: Yes thank you and you may buss out the bottle of wine too.
Food Service Attendant busses out the main course plate, dinner fork , dinner knife and salt and
pepper shaker followed with the wine glass, BB plate and wine bottle.
Food Service Attendant: May I perform crumbing?
Guest: Yes
Food Service Attendant performs crumbing. Note: Crumbing may be done before the service of
the dessert or if guest orders coffee to be served after main course. It can also be done before
the
Food Service Attendant: May I serve your dessert?
Guest: Oh! Id love that.
Food Service Attendant: Your blueberry cheesecake.
Guest: Thank you very much.
Food Service Attendant: Excuse me are you done with your dessert? May I buss out ?
Guest: yes Thank you. I am ready to settle my bill.
Food Service Attendant: Okay mam Ill be back for your bill
Food Service Attendant: How was the food mam?May I present your bill?
Guest receives the bill folder . Checks the bills and pays amount. Amount can be exact etc.
Food Service Attendant: I received the exact amount I’ll be back for your receipt.
Here’s your receipt.
Guest stands up.
Food Service Attendant: Thank you for dining with us. We hope to see you again.
Guest leaves. Food Service Attendant clears the table.
