SEQUENCE OF SERVICE

IN RESTAURANT UJIAN ON APRIL


GREETING AND WELCOMING THE GUEST
Waiter/waitress : “Good morning ladies and gentleman”
Guest : “Good morning”
Waiter/waitress : “How are you today?”
Guest : “I’m fine. How about you?”
Waiter/waitress : “I’m fine too, thankyou. Welcome to Cempaka Restaurant. May I
assist you?”
Guest : “Yes, please”
(IF NOT)
Waiter/waitress : “Have you made a reservation before?”
Guest : “No, we don’t”
Waiter/waitress : “May I know your name dan how many person with you?”
Guest : “My name is .... and for... person
Waiter/waitress : “Well ladies and gentleman we have special table for you. The table
is number... the position is... Would you like to follow me please?”
Guest : “Yes, of course
Waiter/waitress : “This way please”
(IF YES)
Waiter/waitress : “Have you made a reservation before?
Guest : “Yes, I have”
Waiter/waitress : “May I have you name please?”
Guest : “My name is...”
Waiter/waitress : “Allright madam/mr ... wait a moment please, I woild like to check
your reservation”
Guest : “Yes right”
Waiter/waitress : “Well, Mr... your table is number.... the position in over there (or in
the) would you like to follow me please?
Guest : “Yes”
SHOW THE GUEST SITS
Waiter/waitress : “This table is fine for you?
Guest : “Yes”

PULL THE CHAIR AND INVITED THE GUEST TO SITS


(seeting the guest and served ladiest first clock wise)
Waiter/waitress : “Excuse me madam/sir, have a sit”
Guest : “Thank you”

UNFOLDING NAPKIN
(Ladies first and from right side)
Waiter/waitress : “Excuse me madam/sir”

INTRODUCE YOUR SELF


(Done among guests)
Waiter/waitress : “Excuse me ladies and gentleman. I would like to introduce my self,
my name is ... I will be your waiter/waitress during your lunch. And I
will be back with apperitif drink for you. Thank you.”
Guest : “Thank you”

SERVE APPERITIF DRINK


(Served ladies first with clock wise direction)
Waiter/waitress : “Excuse me madam/sir this is your apperitif drink. Please enjoy it
before the appetizer we serve”
Guest : “Thank you”

PRESENTING THE MENU


Waiter/waitress : “Excuse me madam/sir this is our menu today, have a look please”
Guest : “Thank you”
Waiter/waitress : “Excuse me ladies and gentleman, I will be back right way”
(After presenting the menu, go back to the side board and take the bill tray and captain
order)
EXPLAIN MENU
Waiter/waitress : “Excuse me ladies and gentleman, as you can see for the menu. Today
we have special menu for you. There are ... for the starter, for the
second course we have ...., for the special main course we have...., for
the last course we have..... and complate with coffee or tea. So are
you clear with the menu?”
Guest : “Yes, thank you”
Waiter/waitress : “Well ladies and gentleman whenever you ready to order, please let me
know. Thank you”
Guest : “Thank you”

TAKING ORDER
Waiter/waitress : “Excuse me ladies and gentleman, are you ready to order now?
Guest : “Yes”
Waiter/waitress : “Well would you like to order our complate menu? How about you
madam? How about you sir?”
Guest : “Yes please”

REPEAT THE ORDER


Waiter/waitress : “Well madam sir, I would like to repeat your order. So you order 2 set
menu complate? It’s correct?
Guest : “Yes thank you”
Waiter/waitress : “Well your order will be coming around 20 minutes and I will be back
with bread and butter for you. Thank you”
Guest : “Thank you”

PASS THE ORDER


(Taken menu. Food order to the kitchen and drink order to the bar)

POURING ICE WATER


(Take the service napkin and ice water and pour from the right side. Always do it every
time, don't let the water run out of the water goblet, try after it's clear it's always poured
without being asked by the guest )
Waiter/waitress : “Excuse me madam/sir, ice water please”
Guest : “Thank you”

BREAD AND BUTTER


(Serving the bread and butter from left side and use service set. Bread is always offered
until the main course is finished, if there is still stock )
Waiter/waitress : “Excuse me madam/sir bread and butter please. Have enjoy please”
Guest : “Thank you”

ADJUSMENT
(Adjusting the cutleries, add if there is no its and take if there is not necessary)

SERVING APPETIZER
(Before serving appetizer, first adjust the aperitif drink. Serving appetizer from the right
side)
Waiter/waitress : “Excuse me madam/sir, this is your appetizer ..... (example : Shrimp
Coctail Salad”
Guest : “Thank you”
Waiter/waitress : “Excuse me ladies and gentleman, have enjoy with your food, if you
need anything else.. please let me know”

CLEAR UP
(Clear up through the right and clockwise)
Waiter/waitress : “Excuse me ladies and gantleman, have you finish with your food?
Guest : “Yes”
Waiter/waitress : “How was your food?”
Guest : “Its nice, thank you”
Waiter/waitress : “Thank you for your feedback. May I clear up your plate?”
Guest : “Yes, Thank you”

SERVING SOUP
Waiter/waitress : “Excuse me madam/sir, this is your soup ..... (example : Cream of
Pumpkin Soup served with toast french bread) have enjoy please ”
Guest : “Thank you”
CLEAR UP
(Clear up through the right and clockwise)
Waiter/waitress : “Excuse me ladies and gantleman, have you finish with your food?
Guest : “Yes”
Waiter/waitress : “May I clear up your plate?”
Guest : “Yes, Thank you”

SERVING MAINCOURSE
Waiter/waitress : “Excuse me madam/sir, this is your maincourse today, you have...
(example : Cheateu Briand with mess potatoes turning vegetable
served with mushroom sauce)”
Guest : “Thank you”
Waiter/waitress : “Excuse me ladies and gentleman, have enjoy with your food, if you
need anything else.. please let me know”

CLEAR UP
(Clear up through the right and clockwise)
Waiter/waitress : “Excuse me ladies and gantleman, have you finish with your food?
Guest : “Yes”
Waiter/waitress : “How was your food?”
Guest : “Its nice, thank you”
Waiter/waitress : “Thank you for your compliment, I’m very happy to heard that. May I
clear up your plate?”
Guest : “Yes, Thank you”

REFILL ICE WATER


(Ice water refill is carried out when the water goblen is half/no longer filled with water,
especially when it is finished serving the main course.)

CRUMBING DOWN
(Before crumbing down, first adjust the bread and butter. Crumbing down is done when
the main course clears up. Done from the left of the guest by using a dessert plate and
service cloth. First the female guests. After crumbing down, adjusting salt and paper
shaker and set up cutleries for dessert)
Waiter/waitress : “Excuse me madam/sir”

SERVING DESSERT
Waiter/waitress : “Excuse me madam/sir, this is your dessert today, you have...
(example : Crepes Suzete)”
Guest : “Thank you”
Waiter/waitress : “Excuse me ladies and gentleman, have enjoy with your food, if you
need anything else.. please let me know”

OFFERING COFFEE OR TEA


(Offering coffee or tea is done when finished serving dessert because the function of coffee
and tea here is to accompany guests while enjoying dessert dishes. First, set up the cup and
saucer and tea spoon on the right side, then pouring.)
Waiter/waitress : “Excuse me ladies and gentleman, would you like to have a cup of
coffee or tea to company your dessert?
Guest : “Yes, tea please”
Waiter/waitress : “Allright, I will prepare the tea for both of you”

CLEAR UP
(Clear up all utensils for serving dessert except water goblet, coffee and tea)
Waiter/waitress : “Excuse me ladies and gantleman, have you finish with your dessert?
Guest : “Yes”
Waiter/waitress : “How was your food?”
Guest : “Its nice, thank you”
Waiter/waitress : “Thank you for your feedback I’m very happy to heard that. May I
clear up your plate?”
Guest : “Yes, Thank you”

PRESENTING THE BILL


(The bill is handed over to the male guest, if the guest is only female then they are asked
who will pay the bill)
Waiter/waitress : “Excuse me ladies and gentleman, would you like anything else?
Guest : “No, thank you”
Waiter/waitress : “My I bring your bill?”
Guest : “Yes please”
Waiter/waitress : “Allright, I will be back right away” (take the bill)
“Excuse me sir, this is your bill.. could you like to check first? If any
clarification please let me know”
Guest : “Thank you, my bill is correct.. how should I pay it?”
Waiter/waitress : “You can make payments using cash/room charge or online payment.
Well what the method payment will you do?”
Guest : “Room charge please”
Waiter/waitress : “Allright, please write your name, room and sign here”
Guest : “Thank you”
Waiter/waitress : “Thank you”

FAREWELL THE GUEST


Waiter/waitress : “Excuse me ladies and gentleman, your lunch is finish until here.
Hopely you satisfied with my service , enjoy your meal and also I
hope we meet again with a good atmosphere and come again to our
restaurant. Thank you”
Guest : “Thank you also for the experience, I am very happy for your service”
Waiter/waitress : “My I escort you?”
Guest : “Yes please”
Waiter/waitress : “Thank you and see you next time Mr/madam...”

After all service processes end, clean the table, adjust all equipment on the table such as
flower vase, table number, coffee or tea cup and saucer, and water goblet. Then proceed
by folding the table cloth and molton back then trim and bring it to the side board. And
finally, rearrange the chair as before.
