Chapter III

Technical Study

This part of the study discusses the description of the product, the process of

production and the activities of the business. Iin addition, it tuckles also the tools and

equipments being used in producing the product and shows the process of the business

using the flow chart.

Product Description

“Pan de Veggie” is a baked pan de sal

with malunggay (horseradish plant) bits mixed

in dough that will serve as addition nutrient to

the bread. The product also has a sweet potato

filling to add flavor. Pan de Veggie is an

affordable and easy to purchase.

Production Process

Pan de Veggie Ingredients and procedure

INGREDIENTS:

For liquid ingredients:

200ml warm water

1 ½tsp of yeast

2tsp of sugar

add ½ cup of melted butter

For dry ingredients:

2 cups of flour

¼ cup of sugar

2tsp of salt

3 medium eggs

Evaporated milk

PROCEDURE:

For liquid ingredients, heat of 200ml to around 40C or until warm to the touch. Add

1 ½tsp of yeast and 2tsp of sugar then add ½ cup of melted butter. Mix it together then set

aside for 3-5 minutes.

For dry ingredients, put 2 cups of flour in a bowl. Add ¼ cup of sugar, 2tsp of salt

and mix them well. Afterwards, make a hole in the middle of the flour then add the yeast

mixtures and moringa leaves. Put 3 medium eggs, and 2tsp of oil then mix it well until

form a dough. Next, transfer it into a flat surface and knead for around 10-15 minutes.

Add additional flour if the dough is sticky, after kneading 10-15minutes, press the dough

and if it rise back or ellastic, form it in a circle and put in a clean bowl and cover it with

food wrap then rest it into 2 hours or until it double in size. After 2hours, knead for

2minutes then let the dough rest again for atleast 10 minutes. After 10 minutes, cut the

dough in the same sizes, put the filling inside then shape the dough, then roll it in a bread

crumbs, put it in the baking pan, cover with food wrap, rest in 2 minutes. After 2 minutes,

Preheat the oven to 175F. bake between 20-25 minutes or until golden brown.

Baking Pan

 An aluminum or tempered glass dish,

rectangular or Square in form used in baking

cakes.

Mixing Bowl

 Used for mixing ingredients.

Baking Sheet

 Is a flat aluminum sheet used for baking cookies.

Dough Cutter

 A tool with a sharp edge used to cut dough.

Baking paper 

 also known as bakery paper or parchment


paper, as it is often called especially in the US.
It is a grease proof paper that
is used in baking and cooking as it provides a
heat-resistant, non-stick surface to bake on.

Rolling Pin

 A solid elongated wood with handles at both ends

that is used to flatten dough or pastry.

Measuring Spoon

 is a spoon used to measure an amount of an ingredient, either liquid or dry, when

cooking. Measuring spoons may be made of plastic, metal, and other materials. They

are available in many sizes, including the teaspoon and tablespoon.

Measuring Cup

 is a kitchen

cooking ingredients such as flour

and sugar, especially for volumes

from about 50 mL (2 fl oz) upwards. Measuring cups are also used to measure

washing powder, liquid detergents and bleach for clothes washing. The cup will

usually have a scale marked in cups and fractions of a cup, and often with fluid

measure and weight of a selection of dry foodstuffs.

Spatula

 is "a broad, flat, flexible blade used to

mix, spread and lift material"[1]

including foods, drugs, plaster and

paints. It derives from the Latin word for

a flat piece of wood or splint (a

diminutive form of the Latin spatha, meaning broadsword), and hence can also refer

to a tongue depressor.

Flour Sifter

 is a kind of strainer with a fine mesh screen housed in a container that is used to pass

dry ingredients through to loosen the particles, incorporate air, and lighten them. It is

also used to combine several ingredients that are passed through at the same time

such as spices, sugar or fine grains.

Rubber Scraper

 is a kitchen implement made of metal, plastics (such as

polyethylene, nylon, or polypropylene), wood, rubber

or silicone rubber. In practice, one type of scraper is

often interchanged with another or with a spatula(thus

scrapers are often called spatulas) for some of the

various uses.

Serretad Knife

 with their scalloped, toothlike edge, are ideal for

cutting through foods with a hard exterior and

softer interior, such as a loaf of crusty bread.

Oven

 An equipment used for baking.
