Hokey Pokey Biscuits

Equipment
Mixing bowl
Small microwave safe jug
Measuring spoons
Measuring cup (1/2)
Spatula/scraper
Lined tray
Wooden spoon

Ingredients
25g butter
2 tablespoons golden syrup
2 table spoons brown sugar
½ cup flour
1 teaspoon baking powder

Method
1. Preheat oven to 180 degrees celsius (fan-forced). Line a tray with baking paper and
set aside.
2. Place the butter, golden syrup and brown sugar into a microwave-safe jug and melt
stirring each 20 seconds, until melted. Stir until all of the sugar has dissolved. Set
aside to cool.
3. Mix the flour and baking powder into a bowl.
4. Stir melted butter mixture into bowl. Scrape sides of jug so all butter mixture goes
into bowl. Stir until a soft dough forms.
5. Form same sized balls with the dough and place onto the baking trays. Note: If the
mixture is too soft to roll into balls, add a little more flour and mix again.
6. Press the dough balls down lightly with a fork.
7. Bake for 10 minutes or until just golden.
8. Leave on the baking trays for 5 minutes before transferring to a wire rack to cool
completely.
Store in an airtight container at room temperature for up to 5 days (the cookies will soften over
time but still as delicious!)
