Tools Needed for bread:


Baking pan/sheet pan (or pan needed for chosen bread)
Bench scraper
Bowl Scraper
Mixing bowls and custard cups/microwabavle bowls
Whisk
Rubber spatula
Digital scale
Cling wrap
Plastic labo / Clear garbage bag
Pastry brush

Other tools for cleaning:

Sponge
Dishwashing liquid
Zonrox/Sanitizing chemicals
Garbage bag
Hand towels

Cinnamon Roll with Cream Cheese Frosting


Yield:

Method/Subject Yeast dough-Enriched dough

Ingredients:
500g Bread flour
6g Instant yeast
1/2 tsp baking powder
3/8 cup white sugar
1/4tsp salt
75g whole egg
75g evaporated milk
100g water
80g salted butter

Filling:
112g salted butter
112g brown sugar
1/2 tbsp cinnamon powder
1/2 cup raisins
1/2 cup chopped walnuts

Topping:
112g cream cheese
30gram salted butter
30gram powdered sugar

Procedure:

1. Option: Can use vertical mixer or manually knead.


2. If using a mixer, straight dough method for 12-15minutes once the dough is mixed together.
3. For manual kneading, Combine the flour, baking powder and yeast.
4. In another bowl, combine eggs, milk, water, sugar,and salt. Stir until well combined
5. Add in wet ingredients to dry.
6. Mix until well combined. Knead in butter
7. Knead until dough is fully developed and passes window pane test.
8. Transfer a lightly greased bowl. Cover with plastic.
9. Ferment the dough for 1 hour.
10. For filling, mix room temp butter, brown sugar, cinnamon powder. Mix with spatula.
11. Check the dough. Fold/Punch down. Roll out into rectangle
12. Spread the filling into the dough Then put the raisins and chopped walnuts. Then roll and pinch.
13. Shape and cut as per demo.
14. Transfer to a well greased pan(butter). Proof for 30minutes.
15. Bake at 325 F for 30-35 minutes
16. Transfer to a cooling rack. Then brush with cream cheese frosting
